The Caves <<strong>st</strong>rong>of</<strong>st</strong>rong> Faribault is proud to re-introduce its<br />

St. Mary's Grass Fed Gouda, a Wisconsin Gouda handcrafted<br />

by Ma<strong>st</strong>er Cheesemaker Bruce Workman <<strong>st</strong>rong>of</<strong>st</strong>rong><br />

Edelweiss Creamery. Made in Wisconsin, this Gouda is<br />

<<strong>st</strong>rong>the</<strong>st</strong>rong>n aged in hi<strong>st</strong>oric sand<strong>st</strong>one caves by <<strong>st</strong>rong>the</<strong>st</strong>rong> affineurs*<br />

<<strong>st</strong>rong>of</<strong>st</strong>rong> Caves <<strong>st</strong>rong>of</<strong>st</strong>rong> Faribault. *The people who practice <<strong>st</strong>rong>the</<strong>st</strong>rong> art <<strong>st</strong>rong>of</<strong>st</strong>rong><br />

maturing and aging cheeses, or affinage.<br />

The cheese responds beautifully to cave-aging,<br />

developing a smooth buttery sharpness with a definite<br />

hint <<strong>st</strong>rong>of</<strong>st</strong>rong> caramel. Wheels <<strong>st</strong>rong>of</<strong>st</strong>rong> this 2009 vintage have a<br />

natural, ru<strong>st</strong>ic rind different from <<strong>st</strong>rong>the</<strong>st</strong>rong> wax rind <<strong>st</strong>rong>of</<strong>st</strong>rong> <<strong>st</strong>rong>the</<strong>st</strong>rong><br />

previous 2007 classic. This aromatic rind will continue<br />

to mature within <<strong>st</strong>rong>the</<strong>st</strong>rong> wrapping. The rind is edible<br />

and suited be<strong>st</strong> for those who prefer a <strong>st</strong>ronger flavor<br />

pr<<strong>st</strong>rong>of</<strong>st</strong>rong>ile.<br />

Released in early January, St. Mary's Gouda<br />

will be available through select di<strong>st</strong>ributors and<br />

retailers nationwide in 11 lb. RWT wheels and<br />

8 oz. EWT wedges.<br />

22nd. The election process will begin<br />

Blue and Gorgonzola cheeses is handmade and <<strong>st</strong>rong>the</<strong>st</strong>rong>n<br />

cave-aged in hi<strong>st</strong>oric sand<strong>st</strong>one caves where <<strong>st</strong>rong>the</<strong>st</strong>rong>se unique<br />

environmental conditions make it ideal for affinage.<br />
