Side Trip:
We survived the One Chip Challenge,
but I don’t think it counts,
since it took five of us to polish
it off.
There is a brand of tortilla chips called
Paqui, with a variety
of flavors and varying
heat levels. The names
are enticing — Fiery
Chile Limon, Zesty
Salsa Verde, Jalapeño
Tropicale, Mucho Nacho
Cheese, Haunted
Ghost Pepper and the
pinnacle — Carolina
Reaper Sichuan Heat.
Sometime over the
holidays our daughter
grabbed a package of
each flavor offered at
MYRNA
WAGNER
our local convenience store, which included
the Carolina Reaper One Chip Challenge.
The chips got placed in the kitchen pantry
— out of sight, out of mind. But this weekend
with several of her college friends visiting
for the University of Okoboji Winter
Games, I decided it would be a great time
for a taste test and heat challenge.
Haunted Ghost Pepper is definitely hot,
but also has some flavor. Folks that relish
spicy foods might label it their favorite.
Most of her friends voted for the Zesty Salsa
Verde.
Then we opened the Carolina Reaper. The
chip was black. And it smelled bad. Yet we
persisted. Three of us each broke off and
sampled a tiny corner of the triangular chip,
me included. It was hot. And had no flavor.
And it burned.
The lonely chip was abandoned on the
counter for the next 30 minutes or so, when
two others of our guests decided it couldn’t
be that bad and each took half.
They regretted it immediately, polishing
off a half gallon of milk to cool their
mouths.
One Chip Challenge? Would not recommend.

Oak Hill Outdoor hosts
inaugural Iowa Ice Classic
Anglers from all over
the Midwest have
a new way to put
their ice fishing skills to
the ultimate test.
Oak Hill Outdoor has
scheduled the first-ever
Iowa Ice Classic Fishing
Tournament for 8 a.m.-2
p.m. Saturday, Feb. 6, on
Little Emerson Bay of
West Lake Okoboji.
Registration is $50 per
person and the tournament
is capped at 50 oneperson
“teams” to help
maintain a safe, socially
distanced event.
A chili feed for anglers
will be held at Oak Hill
Outdoor on Friday at 5
p.m. with a mandatory
rules meeting to follow.
Each team is gunning
for their 10 biggest bluegills
with live weigh-ins
held at Oak Hill Outdoor
at the conclusion of the
tournament.
“You’ll get a chance to
compete against some of
the Midwest’s best anglers.
I think we have anglers
from six states entered
right now,” said Ryan
Hale of Oak Hill Outdoor.
“Everyone from across the
Midwest loves to come
fish West Okoboji bluegills.”
In addition to prizes for
the 10 biggest bluegills,
anglers can opt to toss in
an extra $5 for the big fish
pot.
“And Roadside Minnows
is donating $500 on
top of that pot, so whoever
catches the biggest
bluegill is going to have a
nice payday!” Hale said.
Not that it’s going to be
that easy.
“With everyone fishing

field,” Hale said. “West
Okoboji bluegills can
be a challenge especially
under cold front conditions,
which can be very

big factor this weekend.
It’s supposed to get really

Luncheon with
INSTRUCTION
Chef Susanne serves up
seafood special for her
date night menu
Valentine’s Day is right around
the corner, which often means
date night at a favorite restaurant
or a sharing a special meal at
home.
With the continuing coronavirus
pandemic keeping some restrictions
in place, picking a restaurant could
be trickier than normal and if you’re
not culinary inclined, whipping
something up edible at home may
seem impossible.
Chef Susanne Bicknese is ready to
help either way with her next Luncheon
with Instruction — February
Date Night.
Classes will be held at noon and
6:30 p.m. Wednesday, Feb. 10, at the
Pearson Lakes Art Center in Okoboji.
The cost is $42 for art center members
and $47 for nonmembers.
And this class figures to be extra
special as the chef always tries to
come up with something especially
appetizing for her February date
night classes.
Seafood is the central theme with
Spanish paella serving as the main
dish with a ceviche appetizer, an assortment
of side dishes, as well as a
chocolate dessert.
Sign up for an evening time slot
and make it a special Valentine’s
Day event in itself, or perhaps pick
up some instructions, as the name
implies, and recreate Chef Susanne’s
dishes for your special someone at
home.
Either way the menu surely sounds
delicious and will be a seafood
lover’s delight.
“Paella is a traditional Spanish
dish that has great flavor and is
loaded with seafood and chicken,”
Bicknese said. “Every region does it
a little differently but we’ll be doing
a pretty traditional version with
shrimp, mussels, chicken, saffron,
rice — it’s a beautiful dish.”
Some of the side dishes are still in
the works, but rest assured they will
be just as mouthwatering as the rest
of the menu.
Everything other than dessert will
have a decidedly seafood slant.
“Originally we started out with just
a simple seafood theme then as we
thought about it more we decided
to do a finished dish that people can
make at home by themselves. That’s
how we landed on paella,” Bicknese

Next up on the Luncheon
with Instruction menu includes
rice and grain bowl meals for
the month of March.
Later on this spring in April will
feature a Mediterranean theme.
Chef Susanne Bicknese is
looking forward to the range culinary
influences she can pull from
for that class.
“It covers France, Italy, Spain,
Africa, Cyprus, Greece, all kinds
of influences. It’s going to be a
really awesome, diverse menu to
do,” Bicknese said.
The chef also teaches monthly
classes at Crossroads Pavilion
Event Center in Sheldon.
The next one there is scheduled
for Wednesday, Feb. 17,
and will feature a New Orleans

Your kid can be a superhero.
And recycling can be
their superpower. That’s what
the organizers of the Dickinson
County Nature Center’s February
Nature Tots program will be
talking about at the upcoming
event.
The Nature Tots programming
is aimed at ages 2-5 and
is held the second Tuesday and
Wednesday of each month at
10:30 a.m. and 1:30 p.m. The
dates for this month are Feb.

for this free program.
Each month has a different
theme for the toddlers and
their parents to learn about
and this month is all about
trash.
“The theme ‘Captain Green
and the Plastic Scene’ refers to
the book we will be reading by
Evelyn Bookless,” said Ashley
Hansen, the naturalist with
Dickinson County Conservation
Board. “The book is about
a superhero who saves sea
animals from plastic. At this

Nature Tots, toddlers and their
parents will learn about recycling
and the importance of
making sure our garbage ends
up in the right place.”
Each Nature Tots program
usually involves some activities
to make the learning experience
more fun.
“We will start off by reading
our book and singing a recycling
song. Toddlers will then
get to participate in a trash seek
and find where we will see how
much hidden trash they can
find,” Hansen said. “We will
finish up with a craft that allows
the nature tots to become
nature superheroes themselves,
just like Captain Green! They
will each get a cape to decorate
and also make a superhero cuff
out of recycled materials.”
Trash might not seem a scintillating
topic to some, but it
is something that is certainly
involved in everybody’s daily
lives in a very real way.
“This topic is important
because trash is something we
deal with every day and it’s
important that we expose kids
to healthy waste management
practices, even at a young age,”
Hansen said. “I’m excited to
show toddlers how trash and
animals are connected and
how by throwing away our garbage
in the appropriate place
we are helping the animals that
live near us. I am also excited
for them to make their capes
and their cuffs and use their
imagination to become superheroes.”

Vintage Ice Drags race on Saturday, Feb. 6
The Winter Games are over, but
the fun on the ice is far from
over.
This weekend will see the Okoboji
Vintage Snowmobile Races organization
hosting its annual Okoboji
Vintage Ice Drags on Saturday, Feb. 6.
The races will take place on the
ice of East Lake Okoboji near The
Ritz in Arnolds Park. Registration for
the event will run from 7-9 p.m. the
night before the race as well as again
at 9 a.m. on the day of the races. The
races will start around 11 a.m.
The racetrack is four lanes that
are 500 feet long with a 1,000-foot
shutdown space. Each lane is 25 feet
wide and that’s plenty of room for a
safe race.
Safety is important to the organizers.
“Safety is always paramount with
us for both the racers and the spectators,”
said Chris Duncan, one of
the organizers of the event. “Due to
COVID, we will be seriously advising
social distancing, which is easy with
the racers who are spaced out and
wearing helmets, but also with the
spectators. We are advising people to
social distance.”
In an effort to decrease gathering,
they won’t be hosting their traditional
party after the races and will
instead be doing the awards outside
on the ice in the open air.
There will be more than 30 classes
