MARK YOURCALENDARS!DISCOVER! | FEBRUARY 6, 2021Taste | 5RYLAN HOWE | STAFF WRITERLuncheon withINSTRUCTIONChef Susanne serves upseafood special for herdate night menuValentine’s Day is right aroundthe corner, which often meansdate night at a favorite restaurantor a sharing a special meal athome.With the continuing coronaviruspandemic keeping some restrictionsin place, picking a restaurant couldbe trickier than normal and if you’renot culinary inclined, whippingsomething up edible at home mayseem impossible.Chef Susanne Bicknese is ready tohelp either way with her next Luncheonwith Instruction — FebruaryDate Night.Classes will be held at noon and6:30 p.m. Wednesday, Feb. 10, at thePearson Lakes Art Center in Okoboji.The cost is $42 for art center membersand $47 for nonmembers.And this class figures to be extraspecial as the chef always tries tocome up with something especiallyappetizing for her February datenight classes.Seafood is the central theme withSpanish paella serving as the maindish with a ceviche appetizer, an assortmentof side dishes, as well as achocolate dessert.Sign up for an evening time slotand make it a special Valentine’sDay event in itself, or perhaps pickup some instructions, as the nameimplies, and recreate Chef Susanne’sdishes for your special someone athome.Either way the menu surely soundsdelicious and will be a seafoodlover’s delight.“Paella is a traditional Spanishdish that has great flavor and isloaded with seafood and chicken,”Bicknese said. “Every region does ita little differently but we’ll be doinga pretty traditional version withshrimp, mussels, chicken, saffron,rice — it’s a beautiful dish.”Some of the side dishes are still inthe works, but rest assured they willbe just as mouthwatering as the restof the menu.Everything other than dessert willhave a decidedly seafood slant.“Originally we started out with justa simple seafood theme then as wethought about it more we decidedto do a finished dish that people canmake at home by themselves. That’show we landed on paella,” BickneseChef Susanne will bemaking several seafooddishes includingSpanish paella forher next set of Luncheonwith Instructionclasses at the PearsonLakes Art Centerin Okoboji.
