I’m a pretty big fan of my air fryer.
A friend introduced me to the appliance
a few years back, and I was skeptical.
Doughnuts and French fries have never
really been my thing, but she assured me
chicken breast and
salmon fillets were
awesome in the air
fryer.
She was right. We
now own two air fryers
as the first one we
bought was rather
small. Some of our favorites
are homemade
sweet potato fries,
corn tortilla chips and
chicken wings, when
they get really crispy.
The only downfall I

find is the lingering smell, so I generally use
the air fryer in the garage. Sunday afternoon
before the football game I had three different
items I needed the air fryer for, including
homemade tortilla chips, which are best
if tossed every 90 seconds for even cooking.
To keep on top of all my kitchen tasks while
simultaneously making the chips, I asked
my husband to run an extension cord and
place the fryers right outside the front door.
While they looked a bit redneck, resting
on a rubber storage tote in front of our
house, it worked fabulously while I made
the chips. Not so much when I put a batch
of wings in. Apparently, time outdoors
combined with the frigid temperatures
didn’t sit well with the electronics and both
appliances simply shut down.
I feel like that too sometimes when it’s
terribly cold out, but shutting down isn’t
an option when you choose to live in the
Midwest.
Hopefully, this cold won’t last long. Until
then, I’m planning a few meals in the
Crock-Pot.

Valentine’s Dinner
at Calico Skies
After the past year anything that
seems somewhat normal is
particularly special.
That’s what’s in store for those who
sign up for The Perfect Pair, a food
and wine pairing dinner for Valentine’s
Day at Calico Skies Vineyard
and Winery in Inwood.
“We’re doing our normal sevencourse
dinner with wine and food
pairings and the same musician we
usually have — one of our most
popular with Elisabeth Hunstad,”
said vineyard owner Will Kimberley.
The event is scheduled for 6-9 p.m.
Sunday, Feb. 14, and will cost $80
per person.
There will be just one departure
from the normal Valentine’s Dinner
— where in past years they’ve seated
everyone in the tasting room, this
time around dinner will be served in
the winery’s event space.
“We can be more spaced out but
still feel really intimate in there,”
Kimberley said. “People can sign up
as couples, or with another couple
as a group, they’ll just need to let us

know as they sign up so we can sit
them together.”
Hunstad will provide musical entertainment
throughout the evening
as diners make their way through
seven delicious courses prepared by
Chef Matt Sapari of The Riviera in
Sioux Falls.
Each course will be matched perfectly
with one of the 14 wines or
four Champagnes made by Calico
Skies.
“Having these seven courses really
fills up the time perfectly. The whole
thing is a really fun experience,”
Kimberley said. “Chef Sapari we’ve
been working with for years and has
always done a really good job. We
ask him to put together a unique
menu that fits the occasion and that
you can’t get just anywhere. Then we
sit down with that menu and figure
out which wines work best with it.
We kind of mix it up between whites
and dry reds and Champagne. It’s a
nice diverse set of tastes that we have
put together.”
One wine that is certain to be on
the menu is the Deebo.
Named after the family chihuahua,
who also makes an appearance on
the label, the Deebo is a blend of
three wines and is their most popular
dry red.
“These will be the 2016 crop that
was in barrels for three years, so it’s
fun that these were grapes picked
over four years ago, were in barrels
for three years, bottled just over a
year ago and we’re drinking now. It’s
fun how that works out,” Kimberley
said. “We started making the Deebo
in 2012 and since then it’s been such
a popular wine for us. It’s a really
good one.”
And that’s just one of seven courses,
all perfectly paired.

be hosting a dinner that will
include a meal, door prizes and
entertainment for $30 per person.
The band that is playing has
one special song that co-owner

excited

“This talented group features

Earth, MN, area.”
Little Swan Lake Winery has a
herd of buffalo that roams nearby,
so it seems only natural that
buffalo would feature on the
Valentine’s Day dinner menu.
They will be offering bison
sirloin steak with Boston brown
potatoes, a salad and dessert.
And, of course, there will be
wine.
According to their website, Little
Swan Lake Winery offers 35
different wines that they make
all on-site at the winery.

There are a couple more films on
the schedule for this run of classics.
Soon Huberty says they’ll gather
their committee to pick out another
dozen for the year to come.
“The theater lets us bring in our
own movies so one of the biggest
factors in choosing them is whether
or not we can get them on Blu-ray,”
Huberty said. “Then at the end of the
series we give all the movies to the
local library.”

The weather outside is frightful,
but there is still plenty of fun to
be had.
That’s the view of the organizers of
the upcoming The Big Snow Showdown
that will be held on the west
lawn of the Spencer Hospital from
9-11 a.m. Saturday, Feb. 20.
The Big Snow Showdown will feature
a snowman building contest as
well as a winter wellness event. The
free event is being hosted by the Seasons
Center for Behavioral Health.
“This is the first time we’ve held
this event and we’re so excited to
bring something new to the Spencer
community as a way of gathering
together (safely), breaking down the
stigma of mental health and providing
important resources to youth and
families to support them during the
winter months,” said Katie Ping, the
marketing and event coordinator
with Seasons Center for Behavioral
Health.
Even though the event is only two
hours long, there will be plenty for
the whole family to enjoy.
“When families arrive on Saturday
for the event, they can check in at
our resource table and sign up for
the snowman building contest or
choose to observe and take part in
some of the other winter wellness
activities,” Ping said. “We’ll have a
kids’ obstacle course and a treasure
hunt and a special appearance by a
‘penguin’ a.k.a our HR director, Barb
Work, dressed up in a penguin suit!”
Families participating in the
snowman building contest
should plan on outfitting
their snowman.
“We encourage
families to bring
their own accessories
and items to
make their entry
unique! We do ask
that attendees do
wear masks and
distance to keep
everyone safe,” Ping said. “We have
developed this event to be as handsfree
as possible, with little to no
shared items and opportunities for
hand sanitizing.”
The snowman building contest
will have five categories and winners
will be awarded for each category.
The categories will include Spencer
Spirit, Most Creative, Most Traditional,
Biggest and More Detailed.
Being able to offer this fun, family
event during the heart of winter,
during the continuing coronavirus
pandemic is an exciting opportunity
for Seasons Center, according to Ping.
