Prefazione
La è uno degli aspetti più affascinanti e frenetici del Beverage.
Un mondo sempre in movimento, sempre alla ricerca di nuovi ingredienti da
abbinare al fine di raggiungere il perfetto mix tra dolce, amaro e acido, che renda il
drink miscelato unico come un'opera d'arte.
Il drink miscelato non nasce mai per caso ma è il risultato di uno studio attento,
scrupoloso e approfondito dei singoli ingredienti e dalla loro combinazione.
Il drink miscelato può raccontare una storia, un territorio, una cultura,
un'emozione, un'essenza …. a volte quella vera della Vita! Oggi la Mixology è in una
fase innovativa storica,
impensabile fino a pochi anni fa, è divenuta
la protagonista anche nell'abbinamento
con il cibo a tutto pasto. Questo momento,
ancora tutto da esplorare per la Mixology,
porterà in un prossimo futuro dei profondi
cambiamenti nel settore della Ristorazione
e della Sommellerie.
Francesca Trignani è Mixologist e Sommelier
con una pluriennale esperienza lavorativa
presso locali di eccellenza e di prestigio in
diversi paesi europei. Appassionata e profonda
conoscitrice della Mixology, in un momento
difficile come quello della pandemia ha
deciso di raccontarsi attraverso i suoi drink.
L'accurata scelta degli ingredienti, della loro
stagionalità e l'amore per la sua terra, l'Abruzzo,
sono i fili conduttori del suo racconto. L'originalità nella scelta degli ingredienti è
sorprendente.
La spontaneità ed il gioco degli abbinamenti sono la firma di ogni drink.
La sfida che l'autrice rivolge a se stessa è quella di rimanere coerente con le proprie
Idee e di non lasciarsi trasportare dalle mode e dalle tendenze di mercato. Il
risultato è un avvincente racconto tra gusti e profumi a volte morbidi a volte duri a
volte in contrapposizione tra loro, che riflettono però sempre lo stato d'animo
dell'autrice in quel momento. Concludo col dire….. i drinks miscelati dall'autrice
regalano emozioni ad ogni singolo sorso.

Foreword
Introduzione
Quello che segue, è la raccolta di ricette di cocktail pensati, realizzati e bevuti
durante la pandemia di Covid-19 ad Arsita (un piccolo paesino dell'entroterra
Teramano). Nel corso dei lunghi mesi di segregazione, dovuti ai frequenti lockdown,
ho avuto modo di riscoprire e coltivare la mia passione per la Mixology.
Gran parte della mia vita da adulta è stata dedicata allo studio e alla ricerca di
ingredienti, di tecniche di preparazione e cottura; e di tutti gli altri aspetti del
mondo agroalimentare in Italia e all'estero. Il libro, scritto in due lingue, vuole
omaggiare gli straordinari prodotti e i metodi della tradizione che si possono
trovare nella mia terra natia: L'Abruzzo.
I cocktail realizzati e descritti seguono la stagionalità di un intero anno, da tener
conto che il libro è stato scritto in centro-Italia. Sono quasi sempre ispirati da
cocktail classici, o comunque riconosciuti dall' International Bartenders Association
(IBA), ma rivisti o addirittura stravolti in chiave moderna.
Tra gli ingredienti compaiono spesso liquori, bitter e vermouth vintage. Per due
motivi: il primo è il ritrovamento di bottiglie d'epoca in una polverosa cantina, il
secondo è la curiosità di sperimentare alcolici che pur avendo avuto (e molti
continuano ad avere) molto successo, sono stati poco usati dai Mixologist.
Un altro fattore che questo libro tiene in considerazione nella creazione delle ricette
è, sicuramente, l'aspetto legato ai più svariati temi di grande attualità. Molti cocktail
si abbinano o traggono ispirazione a fatti di cronaca o a ricorrenze di eventi
particolarmente significativi del mio percorso.
Il simbolo scelto come logo di questo progetto è una variante di un gioiello tipico
dell'artigianato orafo Abruzzese: la Presentosa. Nella sua forma “tipica” è composta
da una cornice a forma di stella, il cui spazio circolare interno è riempito da una
bobina fatta di filigrana leggera. Al centro è impreziosita da due cuori, uniti da una
mezzaluna rovesciata, simboli di amore e felicità. La mia “Presentosa” ha al centro 2
bicchieri che brindano perché, per me, simboleggiano ancor meglio questi due
sentimenti.
La scelta di questo particolare logo, è dettata non solo dalla bellezza del gioiello in
sé, ma anche e soprattutto dal voler esprimere stima a chi questo gioiello lo indossa:
le donne d'Abruzzo. Esse, infatti, sono coloro che creano e portano avanti ricette e
tradizioni con amore e dedizione. Nel ricettario, la “Presentosa”, serve anche ad
indicare la comparsa o l'utilizzo di un prodotto tipico abruzzese.

Introduction
What follows is the collection of recipes for cocktails designed, made and drunk
throughout the pandemic of Covid-19 in Arsita (a small village in the hinterland of
Teramo, Italy). During long months of segregation, due to the frequency lockdowns,
I had the opportunity to rediscover and cultivate my passion for Mixology.
Much of my adult life was devoted to the study and research of ingredients,
preparation and cooking techniques and all the other aspects of the food world in
Italy and abroad. The book, written in two languages, pays homage to the
extraordinary products and traditional methods that can be found in my homeland:
Abruzzo.
The cocktails made and described follow the seasonality of an entire year, to take
into account that the book was written in central Italy. They are almost always
inspired by classic cocktails, or otherwise recognized by the International
Bartenders Association (IBA), but revised or even turned upside down in a modern
way.
Ingredients often include old liqueurs, bitter and vermouth. For two reasons: the
first is the discovery of vintage bottles in a dusty cellar, the second is the curiosity to
try spirits that have had (and many continue to have) much success, but that have
been very little used by Mixologists.
Another factor that this book takes into account in the creation of recipes is,
certainly, the aspect related to a wide range of highly interesting current affair
themes. Many cocktail pairs or found inspiration from news events or recurrences
of events particularly significant in my path.
The symbol chosen as logo of this project is a variant of a jewel typical of the
Abruzzese goldsmith's craft: the Presentosa. In its "typical" form, it is composed of a
star-shaped frame, whose internal circular space is filled by a coil made of light
filigree. At the centre is embellished by two hearts, joined by an inverted crescent,
symbols of love and happiness. My "Presentosa" has in the centre two glasses that
toast because, for me, symbolize even better these two feelings.
The choice of this particular logo is dictated not only by the beauty of the jewel itself
but also and above all by the desire to express esteem to who wears this jewel: the
women of Abruzzo. They are, in fact, those who create and carry recipes and
traditions with love and dedication. In the recipe book, the "Presentosa" is used to
indicate every time a typical product appears.

Ghiaccio - Ice
L'ingrediente più importante in un cocktail è sicuramente il ghiaccio. Durante il
processo di solidificazione dell'acqua le impurità creano micro-comparti di
aria che rendono il ghiaccio bianco alla vista e fragile all' uso. Un ghiaccio che
non è perfettamente trasparente potrebbe rompersi durante l'agitazione nello
shaker ottenendo un prodotto diluito e poco freddo. Per ovviare
all'inconveniente si può acquistare un ghiaccio di qualità oppure farlo
in casa utilizzando un ampio recipiente, sezionarlo con un rompighiaccio
eliminando la parte impura che sarà al centro del blocco di ghiaccio.
The most important ingredient in a cocktail is definitely ice. During the
process of solidification of water impurities create micro air compartments
that make the ice white and brittle to use. A block of ice that isn't perfectly,
transparent could break during agitation in the shaker making your cocktail
watery and not so cold. To obviate the inconvenience, you can buy high-quality
ice or do it at home using a large container, dissect it with an ice-pick
eliminating the impure (white) part which is going to be in the middle of the
large block.

Il ghiaccio tritato viene usato soprattutto per servire i cocktail pestati, con
note tropicali costruiti direttamente nel bicchiere come Piña Colada e
Mojito. Per preparare il ghiaccio tritato esistono vassoi in silicone oppure si
può tritare il ghiaccio a cubetti a mano o con l'uso di una macchina.
Crushed ice is used mainly in pounded cocktails
with tropical note usually builtin the glass like
Piña Colada and Mojito. To make crushed ice
you can use silicon-tray or you can smash
the ice-cubes manually or using a machine.

Il tocco finale - The finishing touches
La decorazione è il tocco finale che rende il cocktail bello ed accattivante ma, in
alcuni casi, è un vero e proprio ingrediente per equilibrarne acidità, dolcezza e
sapidità.
Some cocktails are garnished for decoration's sake, but in others is a vital part of
the flavour.
Gli agrumi si prestano ad
essere serviti a spicchi.
Gli spicchi possono essere
spremuti nel cocktail e poi
tuffarli al suo interno o
serviti sul bordo del bicchiere.
Citrus fruit work well as wedges.
The wedges can be squeezed into
the drink then dropped in or
served on the rim of the glass.
Qualsiasi frutto rotondo, come
kiwi, lime, fichi, mela, pompelmo
e arancia, può essere tagliato a
sezione trasversale per creare una
fetta rotonda. È possibile posizionare
la fetta sul bordo del bicchiere,
farla galleggiare sulla superficie
del cocktail. Per un tocco sofisticato
disidratate le fette di frutta.
Any round fruit, such as kiwi, limes,
fig, apple, grapefruit and orange, can
be cut into cross-section to create a wheel.
You can either place the slice on the rim
of the glass, float it on the surface of the
drink or, simply, dip it.
For a sophisticated touch, dehydrated
slices sulla of fruit.

Boerica Martini
Forse non tutti sanno che l'Italia è il primo
produttore al mondo di kiwi. Questo cocktail
nasce per celebrare la varietà verde italiana
d'eccellenza: la Boerica. Il risultato è un gin
martini con carattere. La cosa che preferisco di
questo cocktail, oltre all'acume e la vivacità, è il
colore: verde brillante, inoltre, è velocissimo da
preparare.
Maybe not everybody knows that Italy is the first
producer of kiwi in the word. This cocktail is a
celebration of the Italian green kiwi of excellence:
Boerica. The result is a gin martini with
character. The thing I like the most in this
cocktail, beside the sharpness, is the colour:
bright green, also, is very quick to prepare.

35 ml London dry Gin
½ Limone (succo)
5 ml Sciroppo di zucchero di canna
PER GUARNIRE:
Fetta di Kiwi

Pesta il kiwi Boerica, sbucciato e fatto a pezzi, con
il resto degli ingredienti sul fondo dello shaker.
Aggiungi il ghiaccio. Agita. Filtra, con doppio filtro,
in un bicchiere martini ghiacciato. Guarnisci con la
fetta di kiwi.

the rest of the ingredients at the bottom of the
shaker. Add ice. Shake well. Double-strain in a
chilled martini glass. Garnish with a kiwi
wheel.

Leemongrumi
Il modo migliore di assumere i legumi è,
sicuramente, in un cocktail. L'ingrediente che
rende tutto morbido e liscio al palato è
l'aquafaba. La preziosa acqua di cottura o
conservazione in vasetto dei ceci, fagioli e di altri
legumi, che spesso si butta via. Ricca di proteine
rende il prodotto finale molto setoso. Quindi,
ogni volta che fate una zuppa di legumi,
conservate l'aquafaba per poi preparare squisiti
cocktail.
The best way to enjoy legumes is, certainly, in a
cocktail. An ingredient who makes everything
smooth at the palate is aquafaba. The precious
liquid of chickpeas and other legumes preserved
jars who very often it's thrown away. Rich in
proteins the aquafaba gives silkiness at the final
product. Each time you prepare a legumes soup
keep the liquid and then make amazing cocktail.

comunità, il Fagiolo
Tondino del Tavo è
racchiuso in un
baccello allungato
che può contenere
fino a otto semi. Ha
dimensioni mediopiccole
che variano
dai 6 mm agli 8 mm
ed una consistenza
dura. È chiamato
“tondino” per la sua
forma tondeggiante,
il tegumento è
sottilissimo e lucido
e ha un colore che va
dal bianco latte all'
avorio. Da poco
presidio Slow food, il
Tondino del Tavo,
unico nel suo genere,

PER GUARNIRE:
Fetta sottile di limone
In uno shaker unisci tutti gli ingredienti. Agita in
dry-shaking *. Aggiungi il ghiaccio e continua a
agitare energicamente. Filtra in un bicchiere da
cocktail e guarnisci con la fetta di limone.

Considered a "social"
product, the richness
of an entire
community, Tondino
del Tavo bean is
enclosed in an
elongated pod that
can contain up to
eight seeds. It has
medium-small
dimensions ranging
from 6 mm to 8 mm
and a hard
consistency. It is
called
"tondino"(rotund)
for its roundish
shape, the tegument
is very thin and shiny
and has a colour
ranging from milky
white to ivory.
Recently became

Amaronno
Per gli amanti della mandorla amara è una vera e
propria goduria. Dal contenuto alcolico molto
moderato è adatto anche a chi non ama
esagerare. Delizioso, delicato e bilanciato è
straordinario nella sua semplicità.
This is for all bitter almond fans. Very low in
alcohol it's enjoyable for the ones who doesn't
like exaggerate. Delicious, delicate and well
balanced it's extraordinary in its simplicity.

Negroni GRAN SASSO
Primo cocktail del libro che rivela il lato vintage
dello stesso. Il cocktail nasce da un' esigenza: una
gran voglia di Negroni e solo un ingrediente per
farne uno classico. Ho sostituito il Campari Bitter
con l'Amaro Gran Sasso ed il vermouth con uno
sharry oloroso dosato con un po' Rabarbaro
Zucca. Il risultato è un gradevolissimo negronistile
cocktail complesso e raffinato.
First cocktail who shows a vintage side of this
book. The cocktail was invented for a reason:
Negroni craving and just one ingredient to make
it. Instead of Bitter Campari I used Bitter Gran
Sasso (very local amaro similar to Averna or
Amaro del Capo), instead of sweet vermouth I
used oloroso sherry dosed whit rhubarb liquor.
The result is a very pleasant negroni-style
cocktail complex and fine.

Come tutti i cocktail a base champagne è elegante
e sofisticato. L'ingrediente principe, che
sostituisce lo champagne nella ricetta originale, è
il “Montonico metodo classico dell'Azienda
agricola Ciccone” , un' uva veramente di nicchia
vinificata magistralmente in spumante metodo
classico. Il rumore delle bollicine che salgono nel
bicchiere è di per sé inebriante.
As every cocktail based on champagne is elegant
and fancy. The main ingredient, who replace the
champagne in the original recipe, is the one and
only “Montonico metodo classico made by
Ciccone winery”, champenoise method wine very
well made with a super niche grape. The noise of
the bubbles coming up is per se heady.

de mûre è sostituita da un ingrediente speciale: la
Ratafià, tanto cara alla popolazione abruzzese, usato
anche sotto forma di caviale (facile da realizzare e
d'effetto). Ideale se volete impressionare i vostri
ospiti o se volete godere della ratafià anche prima di
un buon pasto.
I want to remember the 2020 just for the good
news. This cocktail is dedicated to one of them, to
a new born girl named Cloe. The cocktail is a
Bramble where the crème de mûre is replaced
with a very special ingredient: the Ratafià (sour
cherry liquor usually enjoyed after big Italian
meals) so beloved of Abruzzo's people which is
used also as caviar. This cocktail is easy to make

Tra i miei cocktail preferiti c'è sicuramente il Bloody
Mary. Non solo per curare i postumi, è ideale a
qualsiasi ora del giorno ma soprattutto soddisfa
pienamente la voglia di salato. L'idea di usare il
Cavolo cappuccio rosso in questa variante mi è
venuta mangiando un'insalata. L'unica storia
“grandiosa” che comincia mangiando insalata.
Among my favourite cocktail certainly there is
the Bloody Mary. Not just to cure the hangover is
ideal at every time of the day and entirely
satisfied the craving for savour. The idea of using
cabbage in a Bloody Mary came up eating a salad.

GIN FIZZ with a twist
Con l'arrivo della primavera i prati si riempiono di
fiori e di erbe spontanee. L'idea di questo cocktail è
arrivata quando il primo maggio, come da
tradizione, mangiavo le Virtù (una zuppa tipica
del teramano ricca legumi di erbe spontanee
primaverili). Uno degli ingredienti più interessanti,
a mio avviso, è sicuramente la Hypochaeris Radicata
(Costole D'Asino o Sprain) per il suo carattere
accomodante e dal retrogusto amaro.
With the coming of spring the meadows fill up
with flowers and spontaneous herbs. While
eating, according to tradition, the Virtù (soup
rich on legumes and spring wild herbs), on the
1st on May I came up with the idea of the
cocktail. Among more the 100 ingredient, in my
opinion, the more interesting is the Hypochaeris
Radicata (Cat's Ear) because of is easygoing
character and its bitter end.

Questo cocktail nasce da un gioco…l'obiettivo era di
creare un cocktail che si abbinasse o che fosse
rappresentativa della persona che mi ha sfidata a
farlo. Avevo il compito di descrivere una donna
dolce, acuta, atletica e che si sa godere la vita, quindi
mi è subito venuto in mente una piña colada però
usando un prodotto di alta qualità Italiano (latte di
mandorle) per sostituire il latte di cocco in modo da
alleggerire e aromatizzare nello stesso tempo.
This one has been created for a game… the
challenge was to create a cocktail who pairs well
or describe the person whom made the
challenge. I had the task of describing a sweet,
acute, athletic woman who knows how to enjoy
life, so I immediately came to the mind a piña
colada though using a high quality Italian
product (almond milk) to replace coconut milk so
as to lighten and flavour at the same time.

Sage Whisky Smash
Le frutta sciroppata può diventare un ottimo
ingrediente per i cocktail. Eccellente come
dolcificante, grazie alla spiccata nota acidula, dona
freschezza e vivacità al prodotto finale. Ideale se si
vuol creare qualcosa di divertente con ingredienti
che quasi sempre abbiamo in dispensa, sulla stessa
linea anche la scelta di utilizzare la salvia invece che
la menta, oltre a sposarsi bene con la pesca, è una
erba che si può coltivare tutto l'anno.
Tinned fruit makes a great ingredient for
cocktails. Excellent as sweetener, thanks to the
good acidity gives freshness and liveliness at the
final product. Ideal if you fancy something funny
made with ingredients that usually you have in
the larder. Following the same approach I have
chosen sage instead of mint because pairs well
with peaches and it's easily to find all year round.

Durante i giorni più duri del lock-down era molto difficile reperire tutto
ciò che non fosse bene di prima necessità, questo mi ha fatto venire
subito in mente la più grande sciagura che sia mai successa all'alcol nella
storia: il proibizionismo. Ho pensato che il divieto di raggiungere il bar
per bere una rinfrescante birra scatena emozioni e sensazioni molto
simili a quelle che, presumibilmente, hanno provato i cittadini americani
durante gli anni 20 del '900. Il lato positivo, se ce n'è uno, è il fatto che
sono stati inventati diversi cocktail “clandestini” dal carattere austero
ma invitanti. Il mio preferito tra questi è sicuramente il Chicago fizz.
Nella mia versione ho usato un ingrediente veramente unico speciale e
ricercato: il vino cotto, prodotto l'azienda vitivinicola “Tenuta De Melis”
di Penne, da qui il nome: PENNe FiZz.
During the hardest days of the lock-down it was very difficult to find
everything that is not essential supplies, this immediately reminded me
of the greatest disaster ever happened to alcohol in history: prohibition.
I thought that the prohibition to reach the bar to drink a refreshing beer
triggers emotions and feelings very similar to those that, presumably,
American citizens have experienced during the 1920s. The positive side,
if there is one, is the fact that several "clandestine" cocktails have been
invented with stern but inviting character. My favourite of these is
definitely the Chicago fizz. In my version I used a very special and
refined unique ingredient: “Vino Cotto” produced by the winery
“Tenuta De Melis” in Penne (PE), hence the name: PENNe FIZz.

Forse il più complesso per esecuzione e sapori del libro, è
stato pensato e realizzato in onore dei festeggiamenti di
laurea di un mio amico fraterno, che per l'appunto ha
ottenuto il punteggio di 110 su 110. Tra i suoi ingredienti
non poteva non esserci l'alloro, che già dall' Antica Roma
era emblema di saggezza, intelligenza e onore e con cui
oggi si incoronano i neodottori. Il cocktail è ispirato al
New York Sour ma con aromi molto più complessi e note
orientali. Sicuramente lungo da preparare, ma ne vale la
pena, proprio come laurearsi!
Maybe the most complex of the whole book, it was
created to celebrate the graduation of my dear friend and
neighbour, who in fact was graduated with score 110 out
of 110. Among is ingredient, of course, there is the laurel
which represent, since ancient Roman's age, intelligence
honour and wisdom. Today new Dr are crowned with bay
leaves' crown. The cocktail is a New York sour but with
oriental notes. Long and complex to make but it's worth
it, just like getting graduated!

APERIRED Spritz
Durante la mia esperienza lavorativa nei ristoranti all'estero, ho notato che
quando avevo come cliente un sommelier o un lavoratore del settore, di
nazionalità, o di scuola francese, dalla lista dei vini avrebbe sicuramente scelto un
Beaujolais. Un vino da uva Gamay poco tannico, con un importante nota di
fragola fermentata, che, tradizionalmente si consuma novello o, comunque,
giovane. Molto diverso da tutti gli altri rossi francesi. La scelta di questi
sommelier all'inizio mi ha sorpresa, ma poi, riflettendo e parlandone con i miei
clienti, ho dedotto che i vini importanti e affinati per anni non sempre sono
l'ideale se si vuole passare una serata “leggera”. Qualcosa di molto simile accade
in Italia per il lambrusco, un vino poco alcolico dalla gradevolissima acidità,
frizzante e con travolgenti note di frutti rossi. Cercando di esaltare tutte le sue
caratteristiche me ne sono servita per realizzare uno spritz che, a differenza di
tutti gli altri, è del colore della passione.
During my work experience in restaurants in UK, I noticed, that when I had as a
customer a sommelier or a worker in the sector of French nationality, or school,
from the wine list would definitely choose a Beaujolais. A wine from Gamay
grape not very tannic, with an important note of fermented strawberry,
traditionally is consumed as vin nouveau (new) or, anyway, young. Very different
from all the other French reds. The choice of these sommeliers at first surprised
me but then, thinking and talking with my customers, I deduced that the
important wines and aged for years are not always ideal if you want to spend a
"light-hearted" evening. Something very similar happens in Italy for Lambrusco,
a wine with a low alcohol content with a very pleasing acidity, sparkling and with
pronounced notes of red fruits. Trying to exalt all its characteristics I used it to
prepare a spritz that, unlike all the others, is the colour of passion.

Il cocktail che segue ha un ingrediente molto
speciale: la lupinella. A farmela conoscere fu mio
nonno, da piccolissima, il suo sapore è
indimenticabile. In primavera cresce abbondante,
per degustarla basta raccogliere i rametti più
giovani, togliere le a foglie e la sottile cuticola e
masticarla. Il sapore è dolce, floreale e grazie alla
sua mineralità e freschezza risulta molto dissetante.
Le sue caratteristiche lo rendono un ottimo sostituto
dell'orzata nel Mai Tai.
The next one has got a very special ingredient: the
sainfoin. Was introduced to me when I was very
young by grandfather and I would never forget how it
taste like. In spring grows abundantly, to taste it just
pick up the young twigs, remove the leaves and the
thin cuticle and chew it. The taste is sweet, floral and
thanks to its minerality and acidity is very refreshing.
Thanks to its characteristics it can be an excellent
substitute for orgeat syrup in Mai Tai.

usare il dark rum, come da ricetta, per questo mixed
drink ho usato il super punch d'Abruzzo che il
cioccolatiere & fornaio Concezio Centini usa per
affinare, conservare e inzuppare il biscotto secco,
ricco e delizioso, tipicissimo delle mie zone: i Tatù o
Tatoni. Estremamente facile da preparare, il
risultato è un cocktail poco alcolico con un valore
aggiunto: la decorazione/biscotto.
Drark 'n' storm version gluttonous-Abruzzese.
Instead of using dark rum, as recipe, for this mixed
drink I used the super-punch of Abruzzo used by the
chocolatier & baker Concezio Centini to refine, store
and soak the biscuit, rich and delicious, typical of my
areas: the Tatù or Tatoni. Extremely easy to prepare,
the result is a low-alcohol cocktail with added value:
the decoration/biscuit.

punk-rock. Un sacco di brandy, lo Stock 84,
combinato con una tra le mie preferite fra le erbe
aromatiche, il basilico, e impreziosito con confettura
di ciliegie fatta in casa. Il brandy si presta molto
bene per questo tipo di cocktail, inoltre ha costo
accessibile e aroma sorprendente.
A smash-type of cocktail pink in colour but with
strong punk-rock soul. Lots of Italian Brandy, Stock
84, combined with one of my favourite among the
herb, the basil, and embellished with homemade
cherry's jam. Brandy makes a great ingredient for this
kind of cocktails, also has affordable cost and
amazing aroma.

84, for breakfast,
before starting a
hard-working day.
My thoughts at that
time were mainly
directed to the punk
scene of Northern
Europe and Great
Britain in the 70s
and 80s that had as
protagonists boys
who dressed
eccentrically with
colourful mohawk
and spiked jackets
that were not even
1/10 "punk" as the
gentlemen drinking
brandy at 6:30 in the
morning. For this
reason I think that
"Anarchy in the U.K."
is the song to listen
while tasting this
cocktail, it helps to
better grasp its
animalistic character.
Bologna mule
Bologna è stata d'ispirazione per questa creazione
per due ragioni. La prima è che l'ingrediente
principale è il Bianco Sarti, un aperitivo dolce,
vintage e sconosciuto ai più, che nasce proprio a
Bologna. La seconda è perché questa creazione e
dedicata ad una persona molto speciale, candidata al
premio Nobel per la pace 2021, che abita a Bologna
e che di lavoro fa il Supereroe.
The city of Bologna was the inspiration for this
creation for two reasons, the first is because the main
ingredient is Bianco Sarti, a vintage sweet aperitif,
unknown to the most, that was born in Bologna. The
second is because this creation is dedicated to a very
special person, nominated for the 2021 Nobel Peace
Prize, who lives in Bologna and works as a Superhero.

Beetroot Margaret
Ancora una volta un Bloody Mary-stile cocktail. Questa volta con gin,
barbabietola ed il più dolce tra i cetrioli: il tortarello. Per questo
coloratissimo cocktail ho scelto il più iconico di tutti i gin: Hendrick's.
"Il gin di Hendrick's è infuso con le curiose, ma meravigliose, essenze
di rosa e cetriolo, deliziosamente supportate da non meno di 11
botanici provenienti dai quattro angoli del mondo. Questo estroso
intruglio produce un gin meravigliosamente rinfrescante con un
delizioso aroma floreale". Per tutti queste peculiarità ma soprattutto
per le sue note di cetriolo ho trovato in esso l'ingrediente perfetto per
il mio Bloody Margaret.
Once again, a Bloody Mary stile cocktail. This time with gin, beetroot
and a sweet kind of cucumber. For this colourful cocktail I've choose
the most iconic of all the gins: Hendrick's. “Hendrick's gin is infused
with the curious, yet marvellous, essences of rose and cucumber,
delectably supported by no less than 11 botanicals from the four
corners of the world. This whimsical concoction produces a
wonderfully refreshing gin with a delightfully floral aroma”. For all
those peculiarity but especially for its cucumber notes I found in it
the perfect ingredient for my Bloody Margaret.

di George Floyd nel maggio 2020 in USA. Ci sono persone in tutto il
mondo che, ancora oggi, sono discriminate e uccise con disprezzo solo
per il colore della loro pelle. Riflettendo su tutto questo ho creato un
Negroni blu buono come quello rosso.
This Negroni was born a day after the killing of George Floyd in May
2020 in USA. People around the world are, still, now-days are
discriminated and killed with contempt just because the colour of
their skin. While I was thinking at that I created a blue Negroni as
good as the red one.

Gli agrumi sono sicuramente la tipologia di frutto più usata
e più amata dai Mixologist. Basta pensare che tutti i cocktail
e i mixed drink classici contengono agrumi, usando tutte le
parti del frutto o sotto forma di condimento come i bitter.
Questo cocktail e stato realizzato all'inizio della primavera,
quando alcuni agrumi sono alla fine del loro periodo di
maturazione, ma, sicuramente il periodo migliore per
godesi il succo rifrescante e dissetante di arance e
pompelmi viste le prime giornate di sole.
Citrus fruits are certainly the type of fruit most used and
loved by Mixologists. Just think that all the classic cocktails
and mixed contain citrus fruits, using all parts of the fruit
or in the form of seasoning like bitters. This cocktail was
made at the beginning of spring, when some citrus fruits
are at the end of their ripening period, but certainly the
best time to enjoy the refreshing juice of citrus fruits in the
first days of warmth.

Particolarmente divertente da preparare e da bere, forse il mio
preferito di tutto il libro proprio perché riesce a trasmettere allegria.
Il nome scelto funge da allerta alla gradevole piccantezza, ma anche
omaggio alla hit di Jonny Cash, che raccomando di ascoltare mentre si
prepara questo simpatico drink. L'ingrediente responsabile della
speziata vivacità è il peperoncino piccante “Lazzaretto” il quale uso, a
volte, assume significati mistici e di devozione. Il Lazzaretto
Abruzzese è una varietà storica di peperoncino proveniente
dall'Italia, ma originaria della Guyana francese, si tratta di una varietà
di Cayenne, da sempre impiegata nella cucina tradizionale nostrana.
Particularly fun to prepare and drink, perhaps my favourite of
the book precisely because it's able to convey joy. The name
chosen serves as a warning to the pleasant spiciness, but also
homage to the tune of Jonny Cash, which I recommend listening
while preparing this sympathetic drink. The ingredient
responsible of spicy liveliness is the hot pepper "Lazzaretto"
which use, sometimes, takes on mystical meanings. Lazzaretto
Abruzzese is a historical variety of chili peppers from Italy, but
native to French Guyana, it is a variety of Cayenne, always used in
the traditional cuisine.

Tutti coloro che si sono svegliati con il mal di testa e mal di
stomaco sicuramente concorderà che i Long Island Iced Tea
sono tanto pericolosi quanto deliziosi. Nella mia versione del
più temibile tra i long drink ci sono alcuni ingredienti dal “bel
paese”. Il più interessante è l'unico ingrediente analcolico: la
cola. MoleCola è un progetto 100% italiano nato nel 2013 per
deliziare i propri fan e promuovere la responsabilità sociale.
Ispirato da un famoso libro di ricette piemontesi del 1954 e
prodotto in collaborazione con una storica Aromatherié con
sede in Toscana, il risultato è una bevanda eccezionalmente
deliziosa, rinfrescante.
Everyone who's woken up with an achy head and upset stomach
can agree that Long Island Iced Teas are as dangerous as they are
delicious. In my version of the maybe most hazardous long
cocktail there are several peculiar ingredients from my sunkissed
peninsula. The most interesting one is just the only nonalcoholic
ingredient: the cola. MoleCola is a 100% Italian project
born in 2013 to delight its fans and promote social responsibility.
Inspired by a famous 1954 book of Piedmontese recipes and in
collaboration with an historical Aromatherié based in Tuscany,
the result is a drink that is exceptionally delicious, refreshing.

La DOC Cerasuolo d'Abruzzo arriva nel 2010, ottenendo finalmente una
sua specificità rispetto alla DOC Montepulciano d'Abruzzo che
precedentemente la comprendeva. Il Cerasuolo è da sempre il vino della
tradizione contadina abruzzese e si presentava sempre più scuro
rispetto a tutti i rosati della Penisola. Ha la grinta di un rosso e la fresca
beva di un rosato. Un vino non incasellabile, la cui matrice di frutto è
data dal tipicamente abruzzese Montepulciano d'Abruzzo. Questo
cocktail vuole emulare la tipica bevanda provenzale che comprende
vino rosato ed erbe aromatiche. Il risultato è una freschissimo, fruttato e
romanticissimo aperitivo. Il valore aggiunto, in ogni sorso, è
direttamente proporzionale alla qualità del Cerasuolo scelto. Nel mio
caso, si vola altissimo con un vino che ha più riconoscimenti che quintali
per ettaro: Il Cerasuolo d' Abruzzo DOC TERZINI.
The DOC Cerasuolo d'Abruzzo arrives in 2010, finally obtaining its
specificity compared to the DOC Montepulciano d'Abruzzo that
previously included it. Cerasuolo has always been the wine of the
Abruzzo peasant tradition and is always darker than all the roses of
the Peninsula. He has the grit of a red and the freshness of a rose.
Whose fruit matrix is given by the typically abruzzese Montepulciano
d'Abruzzo. This cocktail emulates the typical Provencal drink that
includes rose wine and aromatic herbs. The result is a fresh, fruity
and romantic aperitif. The added value, in each sip, is directly
proportionate to the quality of the selected Cerasuolo d'Abruzzo. In
my case, we fly very high with a wine that has more awards than
quintals per hectare: Il Cerasuolo d' Abruzzo DOC TERZINI.

Audacia e tecnica sono fondamentali per la realizzazione del
prossimo drink. Questo contiene un ingrediente poco usato nel
mixolgy, difficile da utilizzare, ma sicuramente di grade effetto:
l'olio extravergine d'oliva. Il cocktail è un Tom Collins con olio
e.v.o. di Tortiglione, che sostituisce il sapore amaro ed il
profumo fruttato del limone, e fichi freschi per soddisfare la
dolcezza extra che questo drink richiede.
Audacity and technique are fundamental to realize the next one.
It contains an ingredient little used in mixolgy, difficult to use
but, definitely of a grade effect: Extra virgin olive oil. The cocktail
is a Tom Collins with Tortiglione e.v.o. oil, that replace the bitter
taste and the fruity scent of lemon, and fresh figs to suit the extra
sweetness that this drink requires.

introduced to me by one of my co-worker on my birthday when I
was abroad. I immediately felt for it. Also, I always been a Tifosa
of Scuderia Ferrari, this name for me was synonym of great thing
and high speed. I made a granita from it as homage to my
favourite Ferrari racing driver: Kimi Räikkönen, the Ice Man.

Il drink è ispirato al film che porta il suo nome: un giocatore
d'azzardo, che ha perso fino all'ultimo soldo, riesce, con un'abile
commedia, a farsi credere milionario. A lui s'interessano la
stampa e la proprietaria di un terreno petrolifero che rifiuta di
vendere ad un'importante società. L'uomo si batte al suo fianco e
crea una impresa azionaria. Infatti, il cocktail sembra, in tutti i
suoi aspetti, un Gimlet. Al posto del lime ho usato succo di
anguria chiarificato. Un po' lungo da preparare ma, sicuramente,
molto divertente da bere e, sorso dopo sorso, cercare di scoprire
quale ingrediente sostituisce il succo di lime.
The drink is inspired by the movie that bears his name: a
gambler, who has lost every penny, manages, with a clever
comedy, to make people believe he's a millionaire. It's
interested in him the press and the owner of an oil land that
refuses to sell to a major company. The man fights by her side
and creates a stock company. In fact, the cocktail looks, in all
its aspects, a Gimlet but instead of lime juice I used clarified
watermelon juice. A bit long to prepare but, for sure, very fun
to drink and, sip after sip, try to find out which ingredient
looks like lime juice.

magia della vendemmia. Il settembre 2020 fu
particolarmente caldo e, nel pomeriggio, spesso,
l'aria si caricava di umidità, un clima molto simile a
quello degli altopiani messicani all'inizio della
stagione delle piogge. Tutto questo e stato da
ispirazione per il prossimo cocktail.
September is my favourite month of the year, because
in September they ripen, abundant, the sweetest and

Il Cosmopolitan è un cocktail di fama mondiale, stiloso,
buono, bello da vedere: il cocktail perfetto. O almeno questo
è quello che nell'immaginario collettivo è diventato: un
simbolo di eleganza. Nella mia versione ha sicuramente dei
lineamenti più marcati e dei sapori intensi: forte e gentile
come la terra in cui è stato creato.
The Cosmopolitan is a world's famous cocktail, stylish,
good, beautiful to see: the perfect cocktail. Or at least this is
what has become in the collective imagination: a symbol of
elegance. In my version it certainly has more marked
features and intense flavours: strong and gentle as the
environment in which it was created.

La prima testimonianza della zucca come ingrediente, in Italia
settentrionale, risale alla fine del 1500. I tortelli mantovani
consistono in involucri di sfoglia all'uovo, farciti con un impasto di
zucca cotta al forno o bollita, amaretti, mostarda, formaggio grana e
noce moscata. Deve essere usato un tipo di zucca saporita e
compatta, di qualità superiore. Il tortello non ha confini tra dolce e
salato, questo accade spesso anche nei cocktail. Il mio Tortello in
forma liquida è impreziosito dal cioccolato di Modica IGP, l'unico
cioccolato al mondo lavorato “a freddo” (lavorazione molto simile a
quella usata dagli Aztechi) che risulta granuloso e friabile.
The first evidence of pumpkin as an ingredient, in northern Italy,
dates back to the end of 1500. The Mantuan tortelli consist of egg
pasta parcel, stuffed with a mixture of baked or boiled pumpkin,
amaretti biscuit, quince chutney, parmesan cheese and nutmeg. A
high-quality, flavourful and compact type of pumpkin should be
used. The tortello has no boundaries between sweet and salty,
this often happens also in cocktails. My Tortello in liquid form is
enhanced by chocolate Modica IGP, the only chocolate in the
world worked "cold" (processing very similar to Aztec's) which is
grainy and crumbly.

Acqua Tofana
Il 25 novembre è la giornata mondiale contro la violenza sulle
donne, per questa occasione ho creato un cocktail come tributo a
Giulia Tofana, alchimista e cortigiana vissuta tra il 1500 ed il
1600. Vendeva i suoi profumi ed unguenti in tutto il sud Italia.
Inventò una speciale pozione, chiamata appunto Acqua Tofana,
che venne usata come veleno da più di 600 donne dell'epoca per
sbarazzarsi dei mariti violenti. Mi piace pensare che, grazie al suo
ingegno, sia riuscita, seppure in parte, a placare la società
maschilista più becera e violenta in un epoca in cui le donne non
avevano modo di liberarsi dai propri carnefici.
The 25th of November is the World Day for the elimination of
violence against Women, for this occasion I created a cocktail in
tribute to Giulia Tofana, an alchemist and courtesan who lived
between 1500 and 1600. She was selling perfumes and ointments
all over southern Italy, she invented a special potion, called Acqua
Tofana, which was used as poison by more than 600 women of the
time to get rid of violent husbands. I like to think that, thanks to
her ingenuity, she managed, albeit in part, to appease the most
violent male-domination society in a time when women had no
way to free themselves from their executioners.

NEGRONI AERUS
Legame perfetto tra due passioni: cocktail e funghi. Questo
cocktail è sicuramente il più ricco e costoso del libro. Tra i
suoi ingredienti c'è una vera chicca: il Barolo Chinato, il più
famoso vino italiano nel mondo arricchito da china,
rabarbaro e cardamomo. La sua decorazione cresce,
abbondante, nei boschi della mia regione, il Porcino Aerus, il
migliore tra i Boletus, dal profumo soave ma mai eccessivo.
In una sola parola: opulento.
Perfect link between two passions: cocktails and
mushrooms. This cocktail is definitely the richest and most
expensive of the book. Among its ingredients there is a real
gem: Barolo Chinato, the most famous Italian wine in the
world enriched with cinchona, rhubarb and cardamom. Its
decoration grows, abundant, in the woods of my region, the
Porcini aerus mushroom, the best among the Boletus, with
a heavenly but never excessive scent. In one word: opulent.

Il prossimo cocktail è dedicato a tutti gli abitanti, ma in
particolare ad uno, della città spagnola Granada. La città
prende il nome da Melograno, in spagnolo “granada”, che
cresce abbondante da quelle parti. La sua potente
freschezza, il colore rosso intenso e la sua spiccata dolcezza
fanno della melagrana un ingrediente ideale nella mixology,
inoltre matura nel periodo invernale, quando è difficile
trovare frutti rossi freschi.
The next cocktail is dedicated to all the inhabitants, but in
particular to one, of the Spanish city of Granada. The city is
named after Pomegranate, in Spanish "granada", which
grows abundantly in the area. Its powerful freshness,
intense red colour and its marked sweetness make
pomegranate an ideal ingredient in mixology, also ripens in
winter, when it is difficult to find fresh red fruits.

CACHI BELLINI
Il giorno di Natale 2020, ho deciso di festeggiare brindando con uno
dei cocktail più apprezzati e più bevuti in Italia e nel mondo: Il bellini.
Il Bellini è stato inventato nel 1948 da Giuseppe Cipriani, capo barista
dell'Harry's Bar di Venezia che, intitolò il cocktail al pittore veneziano
per via del suo colore rosato. Questo ricordò a Cipriani il colore della
toga di un santo in un dipinto di Giovanni Bellini. Il drink divenne una
specialità stagionale dell'Harry's Bar di Venezia e, in seguito divenne
molto popolare anche nella sede dell'Harry's Bar di New York. Il suo
grado alcolico moderato lo rendono ideale per aperitivi mattutini.
Nella mia versione ho usato il cachi al posto della pesca bianca, frutto
che diventa maturo proprio nel periodo natalizio.
On Christmas Day 2020, I decided to celebrate with one of the most
appreciated and most drunk cocktails in Italy and in the world: the
Bellini. Bellini was invented in 1948 by Giuseppe Cipriani, chief
bartender at Harry's Bar in Venice, who named the cocktail after the
Venetian painter because of its pink colour. This reminded Cipriani of
the colour of a saint's toga in a painting by Giovanni Bellini. The drink
became a seasonal specialty at Harry's Bar in Venice and later became
very popular at the Harry's Bar in New York. Its moderate alcohol
content makes it ideal for morning aperitifs. In my version I used kaki
instead of white peach, fruit that becomes ripe at Christmas time.

Prosciutto&fichi Margarita
Prosciutto crudo e fichi è uno di quegli abbinamenti tradizionali
appartenenti alla storia della cucina semplice dei contadini, che
dopo una giornata di lavoro, servivano in tavola questo frutto che
sposa benissimo sapori dolci e salati. La mia versione “margarita”
di questo abbinamento intramontabile si consuma, a differenza
dell'originale, in inverno. Il fico è il liquore che sostituisce il
Contreau ed il prosciutto vetrificato sostituisce il sale per un
cocktail bastantemente alcolico che porta un po' d'estate nelle
lunghe notti invernali.
Cured ham and figs is one of those traditional combinations that
belong to the history of simple cuisine of farmers, who after a day
of work, served on the table this fruit that combines sweet and
savory flavors. My "margarita" version of this timeless combination
is consumed, unlike the original, in winter. The fig is the liqueur
that supports the Contreau and the vitrified ham supports the salt
for a sufficiently alcoholic cocktail that brings a little 'summer in
the long winter nights.

Hangover è la parola inglese per indicare il dopo sbornia. Questo
curioso nome deriva dall' usanza, per i grandi consumatori di gin
inglesi, nel XVIII secolo, di dormire appesi ad un filo proprio come
fossero panni stessi. Il pavimento era troppo freddo per sdraiarcisi
sopra, inoltre, il mattino seguente, l'oste poteva svegliare
rapidamente tutte le persone in “hangover” semplicemente
tagliando la corda. Tutti gli ingredienti sono cura per i postumi:
Liquirizia per la pressione bassa, limone per il mal di testa,
zenzero per la nausea, propoli per mal di gola, decotto di carciofo
per fegato stressato, caramella gommosa per il basso morale e,
naturalmente, gin per fare pace.
Hangover is the English word for bad feeling after drinking too
much. This curious name derives from the custom, for the great
consumers of gin, in the eighteenth century in England, to sleep
hanging by a thread just as if they were the same clothes. The floor
was too cold to lie on, also, the next morning, the host could quickly
wake all people in "hangover" simply by cutting the rope. All
ingredients are cure for bad hangover: liquorice for low blood
pressure, lemon for headache, ginger for nauseous, propolis for
sore throat, artichoke tea for stressed liver, gummy candy for poor
morale an, of course, gin to make peace.

Agua di Vibo Valentia
Il bergamotto è il più aspro tra gli agrumi, ma anche quello con oli
essenziali più profumati. Questo particolarissimo agrume cresce
solo in Calabria ed è largamente utilizzato in cosmesi e
profumeria. Nel cocktail cerco di esaltare la sua grande capacità di
dissetare e, allo stesso tempo, pulire la bocca, preparandola così, a
pasteggiare. Ispirato al famoso aperitivo spagnolo, il cocktail, è
dedicato ad un grande calabrese: il procuratore Nicola Gratteri che
da anni cerca di ripulire la sua terra dalla Ndrangheta con
incredibile tenacia e dedizione.
The bergamot is more sour among the citrus, but also the one
with more perfumed essential oils. This very particular citrus
grows only in Calabria (south Italy region) and is widely used in
cosmetics, perfumery and, of course, in earl grey tea. In the
cocktail I try to enhance his great ability to quench and, at the
same time, clean the mouth, preparing it so, to eat. Inspired by
the famous Spanish aperitif, the cocktail is dedicated to a great
Calabrese: the prosecutor Nicola Gratteri who for years has been
trying to clean his homeland from the Ndrangheta with incredible
tenacity and dedication.

floral cocktail, there is the Gentian, which is the symbol of
Abruzzo and its inhabitants. Made from the root of the flower, this
liqueur, is the most popular “amaro” at the end of the meal in the
region. Its strong bitterness, however, also makes it an excellent

mancare ingredienti e guarnizioni come birra e trifoglio per
festeggiare il giorno più verde dell'anno.

Trifoglio
Filtra, con doppio filtro, tutti gli ingredienti nello
shaker. Agita in dry-shaking. Aggiungi un
cubetto di ghiaccio. Agita fino a quando il
cubetto si sarà sciolto. Versa in un tumbler alto
guarnito con il trifoglio ( bagna con acqua le
pareti del bicchiere, posiziona il trifoglio, metti il
bicchiere in freezer). Fai riposare in freezer per
5 minuti. Con l'aiuto di una cannuccia crea
un'apertura al centro del Ramos fizz. Versa la
birra nel foro creato.

Double strain all the ingredients in the shaker.
Shake in dry-shaking. Add an ice cube. Shake
until the cube is dissolved. Pour into a high-ball
glass garnished with shamrocks (wet with water
the walls of the glass, place the shamrocks, put
the glass in the freezer until is frozen). Let it rest
in the freezer for 5 minutes. With the help of a
straw create an opening in the centre of the
Ramos fizz. Pour the beer into the hole created.

Dopo più di un anno lontani dai pub, bar e concerti iniziano a
mancare anche i bagni maleodoranti e i banconi appiccicosi. Ho
creato questo cocktail rivisitando il drink più bevuto nei rock pub
di tutto il mondo, whisky&coke. L'idea era quella di elevare un
cocktail economico e spesso realizzato con ingredienti di dubbia
qualità. Al posto del bourbon, un single malt scotch whisky 10
anni, ricco e non troppo torbato. Al posto della coca-cola, la
spuma Paoletti, una bibita gassata realizzata con chinotto,
rabarbaro, vaniglia e spezie. Il nome è naturalmente ispirato alla
canzone resa famosa dai Guns N' Roses: Black Leather.
After more than a year away from pubs, bars and concerts, even the
smelly bathrooms and sticky counters are missing. I created this
cocktail revisiting the most drunk drink in rock pubs all over the
world, whisky&coke. The idea was to elevate a cheap cocktail and
often made with ingredients of dubious quality. Instead of bourbon,
a 10-year-old single malt scotch whisky, rich and not too peaty.
Instead of Coca-Cola, Spuma Paoletti , a soda made with chinotto,
rhubarb, vanilla and spices. The name is naturally inspired by the
song made famous by Guns N' Roses: Black Leather.
