I organized and
defrosted my deep
freeze this weekend
and found a package
of New York strip
steaks down in the
far recesses, buried

under an opened bag
of breaded chicken
bites. The dozen or so
chicken pieces in the
bag were so frost covered
that if it weren’t for the picture on the
bag I wouldn’t have known what they were.
They went in the garbage.
But the steaks — even though they were
from the summer of 2020, with the price
of meat and groceries these days — were
deemed worthy of thawing and throwing
on the grill.
We seasoned them liberally with smoked
sea salt, and I prepped a garlicky chimichurri
sauce to serve alongside in case they
had suffered frost bite during their time in
the freezer.
As evening set in, my husband started
the grill but announced the gas gauge was
“heading toward yellow.” Time was of the
essence.
Turns out, we weren’t as rusty as we
thought. Three minutes per side, with 10
minutes to rest under foil, and the steaks
were perfectly medium-rare.
Didn’t even need the chimichurri sauce,
though it did add a nice splash of color to
our plates.
Hamburgers are on the menu this week,
before winter returns. I just need to remind
my husband to swap out the fuel tank.

in front of Chef Susanne
Bicknese, and it’s just the beginning.
This month for Luncheon with Instruction,
Bicknese has been inspired
by the simple yet astonishingly versatile
egg roll.
Eccentric Egg Rolls is the theme for
March’s culinary event.
Each month, Luncheon with Instruction
offers a culinary cooking
class the second Wednesday of the
month at noon and at 6:30 p.m. This
month’s event will take place on
Wednesday, March 9.
Reservations are required and the
cost is $37 for members of the art
center and $42 for nonmembers.
“We are going to do unusual egg
rolls. There will be totally no Asianinfluenced
rolls,” Bicknese said. “We
are going to showcase the versatility
of the egg roll wrapper.”
There’s no limit to how far you
can experiment with these fun food
items.
“They are great as appetizers. They
are great as breakfast. They are great
as an entree and as dessert,” Bicknese
said. “I love the crunchy exterior. It’s
a texture thing for me and there’s
nothing better than the crunch on a
really fresh egg roll.”
They are going to start it off with
the most important meal of the
day with a loaded breakfast egg roll
complete with scrambled eggs, hash
browns, sausage, cheese and a little
bacon thrown in.
Then, in honor of St. Patrick’s Day,
she’s going to be showcasing corned
beef.
“Everyone will be cooking corned
beef so I thought about what people
are going to be doing with all those
leftovers and I decided we would do chicken egg roll complete with corn,

Let’s count back from five.
That’s all the time it will take for
anyone to realize that a night of
dinner and a show featuring hypnotist
Gabriel Holmes sounds like a recipe for
a fun evening.
The Arrowwood Resort & Conference
Center in Okoboji will be hosting
Dinner With a Hypnotist on Saturday,
March 12. The evening will start at 6
p.m. with a social hour. Dinner is at
6:30 p.m. and is followed by the show
at 7:30 p.m.
The dinner menu is sure to kick the
night off with some happy taste buds.
“We will be featuring Minerva’s
award winning house Italian salad with
house dressing with fresh bread rolls,
a dinner buffet with Caribbean blend
vegetables with herbed butter, whipped
garlic mashed potatoes, a roast beef
jardiniere, and Cajun chicken linguine
with Minerva’s house secrets,” said
Laura Garms, assistant general manager
with Arrowwood. “A sweet treat dessert
will also be featured in a wineglass at
each place setting.”
Dinner will be followed up by a
hypnosis event by Holmes, who has
performed approximately 1,600 shows
in 48 states in the past 17 years.
“Hypnotist Gabriel usually ends
up with 14 or so volunteers from the
audience that are part of his show.
Under hypnosis, every participant will
respond in a unique manner making
no two shows alike. The show will be
an hour in length,” Garms said.
Even if you aren’t one of the lucky
who will be chosen to participate,
watching others under hypnosis is
quite fun and funny, which Garms is
looking forward to.
“People’s reaction to a hypnosis event
[is what I am most excited about]. The
last time I witnessed something like
this was at my After Prom event back
in high school,” Garms said. “I think it
would be fun and interesting to see it
now as an adult.”
Offering up dinner and a fun evening
of entertainment is something that Arrowwood
has done in the past and they
are excited to try something new.
“We’ve done other dinner events
before like our popular ’80s Murder
Mystery Dinner a few years ago, but
dinner with a hypnotist is new,” Garms
said. “We try to host an event one to
two times per year to entertain our
Okoboji locals when some of the main
attractions in the area are closed in the
off season and we were looking for
something different.”
Tickets for the show can be purchased
online and cost $45 for dinner and the
show or $15 for a show-only option,
which includes a free drink at the bar.
The whole night is designed for fun.
“The show is perfect for friends
or couples looking to experience
something different, or just a night
out! Leave the kids with the baby sitter
and come out for a few hours of
fun,” Garms said. “We want to give
locals a fun ‘date night’ experience that
they will be talking about for years to

Round Lake Vineyards & Winery is offering
two opportunities in the next few weeks to give
your taste buds a chance to experience something
new.
First up is their monthly Wine Pairing Dinner
set for 7 p.m. Friday, March 11, and then 3 p.m.
Saturday, March 19, will be a Barrel Tasting.
The Wine Pairing Dinners are all about two
things — the food and the wine.
“Our wine pairing events are about food. What
makes a pairing event fun is how people react to
acid, savory, bitter, salty and umami, the flavors
that make foods taste good. Wine makes these
foods more expressive by enhancing and balancing
food,” said owner Scott Ellenbecker. “A wine
lover is usually a foodie. Trying something new or
prepared in a new way based on the flavor profile
of a wine is the reason we love the food discovery
process. That’s really what a wine/food lover is
about; we want to experience new foods!”
While the Wine Pairing dinners focus on the
experience of wines and foods together, the barrel
tasting is all about the wine itself.
“At a Barrel Tasting we pull a dozen or so barrels
from the cellar and take wine directly from the
barrel into a guest’s glass. We’ll try young wines
and others aged and ready to bottle,” Ellenbecker
said. “Guests can have the same experience we
do as winemakers to put various wines together
to make something unique because of the differences
of a grape and barrel. A grape comes out of
the vineyard and once it becomes wine begins
to evolve as it ages. Tasting vintages next to each
other gives the guest an education into the artistry
of making wine.”
You don’t have to have a degree in red wine to
enjoy a barrel tasting — in fact it’s all about the
process of education.
“It’s not just about the wine but the education
of wine. What does a barrel do to a red wine?
How does age change a wine? What is tannin?
What is acid? What do those things mean to balance
and finish of a wine,” Ellenbecker said. “If
you like red wine, I don’t know why you wouldn’t
want to experience this event.”
This Barrel Tasting is indeed a special event. It’s
something that doesn’t happen often at wineries
according to Ellenbecker.
“This is special because this experience doesn’t
happen in the Midwest. It’s a very rare opportunity
to experience a barreled wine. There are
very few wineries in our region that age wine in
a barrel, and in areas where they do age in barrel,
customers aren’t allowed in the barrel vault,” Ellenbecker
said. “Wineries around the world age
wine in a barrel, but it’s usually a function that
only happens behind closed doors. We are giving
people a peak behind the ‘curtain of Oz’ to see
how it’s done.” F
