The Brown Family will be offering up Easter Celebration Concerts from March 22-30 in Le Mars.
Side Trip:
Jeff and I knew we would be out of the
area over my birthday this year, and
several weeks ago he asked what I’d like
to do that day.
We came across a six-hour barbecue
cooking school being
offered that day, so I
signed us up.
If you are already an
expert meat smoker,
this wouldn’t be for
you. But for us, it was
perfect. We learned
the advantages of
different styles of
smokers, ideal cooking
temperatures, and
wrapping and holding
techniques.
Along with 10

other students, we learned the benefits of
brining, why the instructor wasn’t a fan of
marinades, the difference between rubs and
seasonings, and a trick to easily remove the
membrane from a rack of pork ribs.
Part of this class was hands-on, other
parts were observational. An assistant
handled four smokers and two grills. Each
group of students was assigned some prep
work, and all of us were told the dirty dishes
were our responsibility.
During our afternoon, we sampled chicken
three ways, pork tenderloin four ways,
beef brisket, burnt ends, baby back ribs,
rib tips, pork shoulder, green chili mac and
cheese, stuffed cabbage, spaghetti squash,
butternut squash, stuffed peppers, peach
cobbler and grilled pineapple.
All of it was quite tasty, but that’s a lot
of food, and a lot of dishes to be washed.
Although everyone clearly heard the instructions,
not everyone contributed to the
chores. One group — the table always a
step behind in the instructions, complained
about the spices the chef added to his barbecue
sauce and asked the same questions
repeatedly — were first through the food
line, returned to fill to-go containers, then
sat down to eat and promptly left.
Our group washed, rinsed and sanitized
the dishes, cleaned up all the work areas
and gathered the garbage. Even so, it was a
fun experience that gave us lots of ideas to
try.

music mix together for a
perfect start to the weekend.
That’s been the case for more
than a year at Round Lake Vineyards
& Winery thanks to musical
talent of Dave Anderson.
When it all started the venue’s
new room, the Wine Bar, had just
opened heading into a winter
season so the original idea was
to have something fun scheduled
enticing folks to get out and about.
It certainly did the trick.
“We gave it a shot and more and
more people just kept showing up,”
Anderson said. “We’ve got a lot of
regulars that come out and dance
and every week we pretty much
fill it up, but we always manage to
find room for a few more.”
The fun gets going at 6 p.m. with
reservations recommended. There
is no cover charge though tips are
encouraged.
The standing gig gives Anderson
the opportunity to showcase his
musical talent, having toured the
country for more eight years as a
professional musician.
Visitors will hear plenty of familiar
classics from the ’50s and ’60s,
with plenty of chances to sing and
dance right along.
“There will be some Kenny Rogers,
The Eagles, Buddy Holly, basically
top of the line ’50s and ’60s
that everybody can relate to and
sing the words,” Anderson said.
“We take requests into consideration
and if you write it down on a
10 dollar bill it goes to the head of
the line!”
The audience sure enjoys themselves
and as evidenced by the
long-standing run of weekly shows,
and the excitement shows no signs
of slowing down.
“For me it’s just a good time.
Everyone’s in a good mood, laughing,
singing and having a good
time and I like that I can bring that
experience to an audience,” Anderson
said.

Artist Faith Tyrell explores
them in detail with a new exhibit at
Arts on Grand in Spencer.
“Iris” is on display through April
25 and takes an up close and in
depth look at those fascinating
globes that give people the sense of
sight.

make maple syrup

it. Participants will be
doing some hands-on
demonstrations of the
process and finish up
with a taste test!

Life is going to be sweet at the Dickinson County
Nature Center.
Next up in their Family Nature Night Series is an
evening dedicated to learning all about maple syrup and
how people go about getting this delicious sweet treat.
The event is set to take place at 5 p.m. Friday, March
22, at the north side of Horseshoe Bend Wildlife Area
near the canoe access. People should dress appropriately
for the weather with shoes that can get muddy as
the entire class will take place outdoors. Registration is
required and is full at this time, but people can get on a
waitlist or register for future events.
This event is going to be an educational experience for
all members of the family and will include a history lesson.
“I am going to discuss the Native Americans, pioneers,
and recent history of how maple syrup began and
changed over time. During this time, I will let attendees
pass around the metal bucket, spiles, and syrup tins,”
said Danika Cox, the environmental education coordinator.
In addition to the history of maple syrup, participants
will get to learn about the process of how we get and
make maple syrup.
“We will discuss the trees, when to tap, tools needed,
how to tap and how to turn sap into syrup,” Cox said.
“During this time, I will let kids measure a tree, drill into
a stump with a brace and bit, tap a spile in, show how to
set up a collection container, demonstrate an evaporator,
and let participants pass around a filter.”
While that won’t result in any maple syrup immediately,
participants will get a chance to taste some of the
fruits of someone else’s previous efforts. There will be a
tasting.
“Each participant will get to try maple sap, maple
sugar, and pure maple syrup,” Cox said.
While the program will involve a lot of lessons, people
should know that they won’t be making maple syrup at
this event.
“Maple syrup season is usually in March and April, but
this process is very dependent on the weather. We need
the right temperatures and conditions to collect sap and
those things happen around this time of year,” Cox said.
“While we will not get to do the complete process of
maple syrup making as it is very time consuming, we will
go through the motions of it. Participants will be doing
some hands-on demonstrations of the process and finish
up with a taste test!” F

For the musical Brown family, the joy that
is Easter can’t be contained in one day.
The joy abounds.
The Brown Family will be spreading the joy
of the holiday over two weekends with their
Easter Celebration Concerts set for March
22-23 and March 28-30. Tickets range from
$9.99-$36.
Hosting a series of concerts focused on
showcasing the music of this special season is
something the Brown family is excited about.
“There are so many great Easter season
songs and hymns focusing on the cross, Jesus’s
entry into Jerusalem on Palm Sunday,
and his death and resurrection,” Michaela
Brown said. “[We want] to bring the hope
and joy of the Easter season to the people in
our region, and to provide another way to
celebrate the Easter season.”
They will be performing a number of
hymns like “He Lives,” “Crown Him with
Many Crowns,” “The Old Rugged Cross,”
“When I Survey The Wondrous Cross,” and
new Easter songs like “Jerusalem,” “Via Dolorosa,”
and some original songs The Browns
have written.
For special performances, attendees can
choose to also enjoy a special meal prepared
as a part of their Easter Celebration Concert
experience. Each of the Browns shows features
a menu that is tailored for that concert.
“We have an Easter-themed buffet planned
of sugar glazed ham, poppy seed chicken,
pineapple casserole, green beans, roasted
baby potatoes, green salad, hot buttered rolls,
and a cheesecake dessert,” Michaela said.
For anyone who is looking to attend this
show know that you will experience something
special.
“As always, we will have our family harmony,
instrumental songs featuring hymns
and songs of the season,” Michaela said. “We
are also excited to be sharing the message of
the songs loved by so many.” F
