Jeff and I knew we would be out of the<br />

area over my birthday this year, and<br />

several weeks ago he asked what I’d like<br />

to do that day.<br />

We came across a six-hour barbecue<br />

cooking school being<br />

offered that day, so I<br />

signed us up.<br />

If you are already an<br />

expert meat smoker,<br />

this wouldn’t be for<br />

you. But for us, it was<br />

perfect. We learned<br />

the advantages of<br />

different styles of<br />

smokers, ideal cooking<br />

temperatures, and<br />

wrapping and holding<br />

techniques.<br />

Along with 10<br />

other students, we learned the benefits of<br />

brining, why the instructor wasn’t a fan of<br />

marinades, the difference between rubs and<br />

seasonings, and a trick to easily remove the<br />

membrane from a rack of pork ribs.<br />

Part of this class was hands-on, other<br />

parts were observational. An assistant<br />

handled four smokers and two grills. Each<br />

group of students was assigned some prep<br />

work, and all of us were told the dirty dishes<br />

were our responsibility.<br />

During our afternoon, we sampled chicken<br />

three ways, pork tenderloin four ways,<br />

beef brisket, burnt ends, baby back ribs,<br />

rib tips, pork shoulder, green chili mac and<br />

cheese, stuffed cabbage, spaghetti squash,<br />

butternut squash, stuffed peppers, peach<br />

cobbler and grilled pineapple.<br />

All of it was quite tasty, but that’s a lot<br />

of food, and a lot of dishes to be washed.<br />

Although everyone clearly heard the instructions,<br />

not everyone contributed to the<br />

chores. One group — the table always a<br />

step behind in the instructions, complained<br />

about the spices the chef added to his barbecue<br />

sauce and asked the same questions<br />

repeatedly — were first through the food<br />

line, returned to fill to-go containers, then<br />

sat down to eat and promptly left.<br />

Our group washed, rinsed and sanitized<br />

the dishes, cleaned up all the work areas<br />

and gathered the garbage. Even so, it was a<br />

fun experience that gave us lots of ideas to<br />

try.<br />

That’s been the case for more<br />

than a year at Round Lake Vineyards<br />

& Winery thanks to musical<br />

talent of Dave Anderson.<br />

When it all started the venue’s<br />

new room, the Wine Bar, had just<br />

opened heading into a winter<br />

season so the original idea was<br />

to have something fun scheduled<br />

enticing folks to get out and about.<br />

It certainly did the trick.<br />

“We gave it a shot and more and<br />

more people just kept showing up,”<br />

Anderson said. “We’ve got a lot of<br />

regulars that come out and dance<br />

and every week we pretty much<br />

fill it up, but we always manage to<br />

find room for a few more.”<br />

The fun gets going at 6 p.m. with<br />

reservations recommended. There<br />

is no cover charge though tips are<br />

encouraged.<br />

The standing gig gives Anderson<br />

the opportunity to showcase his<br />

musical talent, having toured the<br />

country for more eight years as a<br />

professional musician.<br />

Visitors will hear plenty of familiar<br />

classics from the ’50s and ’60s,<br />

with plenty of chances to sing and<br />

dance right along.<br />

“There will be some Kenny Rogers,<br />

The Eagles, Buddy Holly, basically<br />

top of the line ’50s and ’60s<br />

that everybody can relate to and<br />

sing the words,” Anderson said.<br />

“We take requests into consideration<br />

and if you write it down on a<br />

10 dollar bill it goes to the head of<br />

the line!”<br />

The audience sure enjoys themselves<br />

and as evidenced by the<br />

long-standing run of weekly shows,<br />

and the excitement shows no signs<br />

of slowing down.<br />

“For me it’s just a good time.<br />

Everyone’s in a good mood, laughing,<br />

singing and having a good<br />

time and I like that I can bring that<br />

experience to an audience,” Anderson<br />

said.<br />

Family Nature Night focuses on how to<br />

make maple syrup<br />

While we will not get<br />

to do the complete<br />

process of maple syrup<br />

making as it is very time<br />

consuming, we will go<br />

through the motions of<br />

it. Participants will be<br />

doing some hands-on<br />

demonstrations of the<br />

process and finish up<br />

with a taste test!<br />

Life is going to be sweet at the Dickinson County<br />

Nature Center.<br />

Next up in their Family Nature Night Series is an<br />

evening dedicated to learning all about maple syrup and<br />

how people go about getting this delicious sweet treat.<br />

The event is set to take place at 5 p.m. Friday, March<br />

22, at the north side of Horseshoe Bend Wildlife Area<br />

near the canoe access. People should dress appropriately<br />

for the weather with shoes that can get muddy as<br />

the entire class will take place outdoors. Registration is<br />

required and is full at this time, but people can get on a<br />

waitlist or register for future events.<br />

This event is going to be an educational experience for<br />

all members of the family and will include a history lesson.<br />

“I am going to discuss the Native Americans, pioneers,<br />

and recent history of how maple syrup began and<br />

changed over time. During this time, I will let attendees<br />

pass around the metal bucket, spiles, and syrup tins,”<br />

said Danika Cox, the environmental education coordinator.<br />

In addition to the history of maple syrup, participants<br />

will get to learn about the process of how we get and<br />

make maple syrup.<br />

“We will discuss the trees, when to tap, tools needed,<br />

how to tap and how to turn sap into syrup,” Cox said.<br />

“During this time, I will let kids measure a tree, drill into<br />

a stump with a brace and bit, tap a spile in, show how to<br />

set up a collection container, demonstrate an evaporator,<br />

and let participants pass around a filter.”<br />

While that won’t result in any maple syrup immediately,<br />

participants will get a chance to taste some of the<br />

fruits of someone else’s previous efforts. There will be a<br />

tasting.<br />

“Each participant will get to try maple sap, maple<br />

sugar, and pure maple syrup,” Cox said.<br />

While the program will involve a lot of lessons, people<br />

should know that they won’t be making maple syrup at<br />

this event.<br />

“Maple syrup season is usually in March and April, but<br />

this process is very dependent on the weather. We need<br />

the right temperatures and conditions to collect sap and<br />

those things happen around this time of year,” Cox said.<br />

“While we will not get to do the complete process of<br />

maple syrup making as it is very time consuming, we will<br />

go through the motions of it. Participants will be doing<br />

some hands-on demonstrations of the process and finish<br />

up with a taste test!” F<br />

For the musical Brown family, the joy that<br />

is Easter can’t be contained in one day.<br />

The joy abounds.<br />

The Brown Family will be spreading the joy<br />

of the holiday over two weekends with their<br />

Easter Celebration Concerts set for March<br />

22-23 and March 28-30. Tickets range from<br />

$9.99-$36.<br />

Hosting a series of concerts focused on<br />

showcasing the music of this special season is<br />

something the Brown family is excited about.<br />

“There are so many great Easter season<br />

songs and hymns focusing on the cross, Jesus’s<br />

entry into Jerusalem on Palm Sunday,<br />

and his death and resurrection,” Michaela<br />

Brown said. “[We want] to bring the hope<br />

and joy of the Easter season to the people in<br />

our region, and to provide another way to<br />

celebrate the Easter season.”<br />

They will be performing a number of<br />

hymns like “He Lives,” “Crown Him with<br />

Many Crowns,” “The Old Rugged Cross,”<br />

“When I Survey The Wondrous Cross,” and<br />

new Easter songs like “Jerusalem,” “Via Dolorosa,”<br />

and some original songs The Browns<br />

have written.<br />

For special performances, attendees can<br />

choose to also enjoy a special meal prepared<br />

as a part of their Easter Celebration Concert<br />

experience. Each of the Browns shows features<br />

a menu that is tailored for that concert.<br />

“We have an Easter-themed buffet planned<br />

of sugar glazed ham, poppy seed chicken,<br />

pineapple casserole, green beans, roasted<br />

baby potatoes, green salad, hot buttered rolls,<br />

and a cheesecake dessert,” Michaela said.<br />

For anyone who is looking to attend this<br />

show know that you will experience something<br />

special.<br />

“As always, we will have our family harmony,<br />

instrumental songs featuring hymns<br />

and songs of the season,” Michaela said. “We<br />

are also excited to be sharing the message of<br />

the songs loved by so many.” F<br />
