RECIPE OF THE
MONTH
“Tennis Cake”
Ingredients
• 3/4 lb flour
• 1/2 lb sugar
• 1/2 lb sultanas
• 2 oz chopped
almonds
• 4 eggs
• 1/2 lb butter
• 1/2 lb currants
• 2 oz candied peel
• 1/2 teaspoon baking
powder
Method
Cream butter and sugar, add
by degrees the eggs and
sifted flour and baking
powder (S.R. flour may be
substituted) adding first an
unbeaten egg, then flour and
so on.
Prepare fruit carefully and
add with almonds; crystalised
cherries or ginger may also be
added. Turn into a square
cake tin well lined. Bake in a
moderate oven for 2 1/2
hours.
Ice with white icing, outline
with chocolate or coloured
icing, border the cake with
crystalised cherries.

The club commenced its activities on two courts adjacent to the Bedford Hall in central Bunbury and
soon moved to nearby Queens Gardens. It relocated to its present site at Hay Park in January 1976
where it now boasts 27 grass courts and six plexipave courts under lights.
The club hosted the South West Open Tournament from 1915 to 2001 and its courts have seen such
champions as Margaret Court, Olga Morozova and Alex Metravelli. It has also produced several
champions of its own including Tennis West Board Member Siobhan Drake-Brockman and Jaymon
Crabb.

‘dreamDAY’
The Dreamfit Foundation will host its first annual ‘dreamDAY’ on Saturday 3rd of December at
McCallum Park on the Swan River foreshore.
Celebrating ‘International Day of People with Disability’, the day will showcase some of Dreamfit’s
engineering projects and feature a range of fun-filled activities for people of all ages and abilities to
enjoy.
This year’s projects include a wheelchair-accessible hovercraft, a modified ski-boat, a land-sailing
vehicle, an access ramp for a trimaran and many others that the public can experience.
So come down and join in on the fun at this FREE event!
