Starting a dinner with sherry is fashionable once again! Sherry is no
longer for people of your grandmother's generation. The long forgotten
fortified wine, whose alcohol levels vary between 15% and 20% by
volume, is finally staging a comeback.
Tips for Serving
• Finos and Manzanillas should be served chilled, as should Amontillados
and Palo Cortados. Cream sherries are drunk at varying temperatures,
even sometimes on the rocks with a slice of lemon. Because it is
fortified and therefore stronger than many wines, sherry is usually
served in small, tulip-shaped glasses.
• Finos and Manzanillas are delicate and should be drunk as soon as
possible after purchase as they tend to lose their freshness.
• Try to finish a bottle of any of the drier sherries within a few days, and
keep them refrigerated and stoppered after opening.
• Pairing: Finos and Manzanillas make great aperitifs, and match
perfectly with many tapas and hors d’oeuvres such as olives, shrimp,
nuts, and hard cheeses. Light Manzanillas also pair well with raw
oysters.
