am originally from the UK and fell in love<br />
with Australia upon my visit.<br />
What do you like about working for club<br />
<strong>Five</strong> <strong>Dock</strong> RSL? Staff and members are<br />
extremely friendly and welcoming. it is a<br />
great working environment and never a dull<br />
moment at the <strong>Club</strong>.<br />

i have recently been appointed to the role<br />

Message<br />
Dear Members<br />
On the 30th October 2012, Harry McKinnon tendered<br />
his resignation as Director of <strong>Club</strong> <strong>Five</strong> <strong>Dock</strong> RSl. Harry has been a part of the<br />
organisation for over twenty years serving as President for six years (18th May 2006) and<br />
over sixteen years as Director and Chairman of the auxiliaries.<br />
When i first met Harry he was a well known punter who followed the Parramatta Eels and<br />
dwelled at the <strong>Club</strong>s lower ground bar. Twenty or so years later Harry can been seen in<br />
<strong>Dock</strong>ers Sports bar, still punting and supporting the Eels. in describing Harry it may be<br />
helpful to speak about his leadership skills often seen playing devil’s advocate during our<br />
monthly board meetings. This was part of Harry’s unmistakable discussion style where we<br />
witnessed on occasions Harry arguing against his own argument! But at the end of the<br />
meeting, the entire Board was always united in their decisions.<br />
Harry McKinnon can reflect on a fantastic achievement at <strong>Club</strong> <strong>Five</strong> <strong>Dock</strong> RSl during<br />
his tenure. Harry and i had a good and robust relationship as President and CEO. i am<br />
confident this will continue with our new president Robert Ridge.<br />
in conclusion, i would like to thank Harry McKinnon for his unrelenting support and continued<br />
friendship.<br />
To other news, Members who reside in the nearby vicinity of the club may have received<br />
a notice regarding a Development Application <strong>Club</strong> <strong>Five</strong> <strong>Dock</strong> RSl have submitted to the<br />
City of Canada Bay Council. This is for a planned refurbishment of level 1 (auditorium and<br />
function rooms) and ground floor foyer which include some aspects of the gaming area.<br />
The completion date is set for September/October 2013 providing all works adhere to<br />
schedule.<br />
Part of the scope is to re-configure the ground floor foyer to ease access to all points of the<br />
<strong>Club</strong>. The ground floor gaming is to be refurbished for a larger outdoor area giving more<br />
space. The first floor will be introducing a new bar and restaurant boasting an outdoor<br />
terrace with City views and a floor capacity seating over 300 people. A brand new<br />
kitchen and new air-conditioning mechanicals are on the works that will service one-half of<br />
the club. The Board and Management have commissioned Russell Corporate to undertake<br />
a feasibility study of the project to ensure its viability and fulfil its commitment to corporate<br />
governance. Results of the study have shown encouraging signs that the project may be<br />
embarked on. There will opportunity for members to view the project in greater detail at a<br />
presentation in the Mirrors Room held 24th January 2013 at 7pm.<br />
On page 3 you will see our Executive Chef Kamal showing you one of his secret recipes<br />
in making the perfect ham. it’s been a crowd favourite amongst my family and am sure it<br />
will be one amongst your own.<br />
Congratulations to all the members who have won a key so far in the “Double Up” Toyota<br />
promotion (page 12). One or two lucky members will win a car (or both) starting from<br />
December 13.<br />
i would like to thank all our members for your loyalty and continued support. Thank you to<br />
all staff involved in the operation of our great club. i truly appreciate the hard work and<br />
dedication throughout the entire year.<br />

Dear Members<br />
Welcome to the<br />
summer edition of the<br />
living local. As most<br />
of our regular active<br />
members would have noticed we have<br />
had a significant change in the Board leadership<br />
at the club. Mr Harry McKinnon, due to personal<br />
reasons, resigned as President of <strong>Club</strong> <strong>Five</strong> <strong>Dock</strong><br />
RSl ltd and his position on the Board of Directors<br />
in October. i would like to take this opportunity<br />
and on your behalf, thank Harry for his twenty<br />
years of dedication and commitment to the success<br />
of our club. Mr McKinnon was well known and<br />
respected by State and Federal MP’s, Canada<br />
Bay Council and all of the local charities and was<br />
able to ensure <strong>Club</strong> <strong>Five</strong> <strong>Dock</strong> RSl ltd was being<br />
actively represented. The current board of directors<br />
would like to extend a sincere and heartfelt thank<br />
you to Harry and all the best for the future.<br />
The board will take time over the Christmas break<br />
to review our options for filling the vacancy left by<br />
Mr McKinnon and co-opt a suitable replacement<br />
with the community interest and business acumen<br />
needed for such a role. The next board of directors’<br />
elections are not until 2014 and co-opting will<br />
ensure a robust and dynamic board. i would like to<br />
thank the board for their endorsement and support<br />
and i look forward to working with them on your<br />
behalf.<br />
As we near the end of 2012, i would like to report<br />
another good trading year and whilst below our<br />
record year of 2011 our club continues to trade<br />
well. This is only due to your patronage and<br />
support throughout the year. The staff, management<br />
and board hopes to see you and your family in the<br />
coming year.<br />
i would like to take this opportunity to thank our<br />
hardworking team headed up by Mr Ken Diaz for<br />
their efforts and tireless dedication in ensuring that,<br />

Hello to all! Yes i’ve been warned to<br />
prepare my Christmas Message for yet<br />
another year. i’ve hardly forgotten the<br />
last one yet! Alas we have to face<br />
reality, it is that time again. Quite a lot<br />
has happened during the year.<br />
Setbacks seem to be one of the<br />
hazards of today and we must always<br />
be constantly alert to deal with these annoyances.<br />

Christmas Message<br />
As we speak of Christmas, it reminds me of a documentary series<br />
on Jerusalem recently on Tv station SBS. As a 20 year old soldier i can vividly<br />
remember being on a few days leave and we motored from Tel Aviv to Jerusalem<br />
for the day. Since never hearing much of the Holy City i was amazed at what i<br />
saw. As we walked with steel heeled boots along narrow cobbled streets and<br />
laneways our footsteps heralded our presence. it was a quite historic event for<br />
me, to say the least, to have walked via Dolorosa – where Jesus carried his cross.<br />
Then from the Mount of Olives looking down over the City and noting the sights.<br />
Of course the usual peddlers were there selling rosary beads made of olive seeds.<br />
Oh well! Such are memories.<br />
Seventy years later on and here we are. During the year some of you would have<br />
lost a family member and it is my hope you have endured. indeed it is always a sad<br />
time, but with the help and comfort of family and beliefs you will cope.<br />
Our news is not always good but most can only accept it. let us wake to each new<br />
day and face our challenges with confidence. Allow us to greet our neighbour with<br />
a smile and a friendly “hello”, no matter who they are or where they come from.<br />
We are god’s beings.<br />
i would like to extend my greetings for a Happy Christmas and a healthy and safe<br />
new Year to all Sub-Branch and <strong>Club</strong> Members and may your god watch over<br />

with salmon and Avocado<br />
I don’t know about you, but for me sometimes<br />
the simplest and freshest dishes make the most<br />
enjoyable meals. One of the new menu items<br />
added to the Three Peppers Summer menu is ‘Soba<br />
Noodle Salad with Salmon and Avocado’.<br />
This dish delivers Asian-inspired flavours making<br />
you most likely to fall in love with at first bite.<br />
Some of the ingredients comprise crushed garlic,<br />
fresh ginger, soy, vinegar, honey, sesame oil and<br />
lime giving you a salty-sweet flavour combination<br />
that is so highly addictive.<br />
Combing your Salmon with the Soba Noodles,<br />
baby spinach leaves, fresh coriander and avocado<br />
presents this to surely be a crowd favourite and is<br />
available early December 2012.<br />

Christmas has always been an exciting time for the family and i as we all find<br />
the time to gather together and enjoy the festivities during the holiday period.<br />
With all the new Master Chef shows and great food and produce, our<br />
members and guests have become “food savvy”. This is exciting to Chefs as<br />
we get to become more adventurous in delivering great new quality meals<br />
derived from fresh and vibrant produce.<br />
in this issue of the living local i’m going to share with you one of my secret<br />
recipes in making the perfect Christmas Ham. The Christmas ham is usually<br />
served as side partner to the turkey, but it doesn’t have to be. Here is how to<br />
bake an amazing Christmas ham that can be a centrepiece on your table.<br />
ingredients • Traditional double smoked Ham on the Bone • Cranberry juice<br />
• Pineapple • Orange marmalade • Honey • ginger • Dijon mustard • Star<br />
Anise • Cardamom • Cinnamon • Onion • Olive oil<br />
glaze • Pour a little Olive Oil into a hot pan with diced onion • Stir & let it<br />
sweat • Add Star Anise, Cardamon, Cinnamon and ginger and cook for<br />
a further minute • Stir in Pineapple & Mustard • Add Orange Marmalade,<br />
Honey & Cranberry juice and bring to the 1st boil • Simmer for about 10<br />
minutes • Remove Star Anise and pour glaze into a blender, blend until<br />
smooth • Strain the sweet aromatic glaze through a fine strainer.<br />
Scoring • Take a sharp knife and remove the skin by cutting about 1cm deep<br />
around the hock followed by down the back • gently remove the skin (leave<br />
the fat as it will retain moisture in the meat during cooking) • Score the fat all<br />
around in a shape of diamond about a 1cm.<br />
baking • Place the ham onto a baking tray and brush the glaze over<br />
generously • Place in the oven at 160°c • After 40 minutes give it another<br />
generous coating of glaze • Reduce the temperature and cook for a further<br />
hour and half • Place on to a carving board and carve it as thin or thick as<br />
you like…<br />

<strong>Club</strong>. Three Peppers will be holding some great specials<br />

living Skills is a<br />
registered charity<br />
which provides<br />
self-esteem and<br />
resilience building<br />
workshops to<br />
young people.<br />
Essere’s<br />
innovative<br />
method consists<br />
of practical and<br />
entertaining<br />
activities<br />
taking place in a safe and<br />
supportive environment. These programs<br />
are aimed at building confidence and<br />
equipping young people with the life skills<br />
they need in order to deal with the pressures<br />
of modern society.<br />
Essere have teamed up with <strong>Club</strong> <strong>Five</strong> <strong>Dock</strong><br />
RSl to run one of their programs named<br />
“The growing Years” to deliver workshops<br />
to primary schools in the Canada Bay local<br />
government Area.<br />
<strong>Club</strong> <strong>Five</strong> <strong>Dock</strong> RSl visited Year 5 students<br />
from Drummoyne Public School (one of the<br />
recipients who took part in the program)<br />
to gain insight into the areas explored and<br />
document Essere’s workshop for the local<br />
community.<br />
The program was run by Janette, Coralie<br />
and Cathy, highly trained and experienced<br />
professionals, to a class of 29 Year 5<br />
students. Janette, the main trainer, introduced<br />
Essere (To Be) living Skills to the students<br />
and explained that the main objective of<br />
the day would be learning about their inner<br />
selves and acquiring the strategies to deal<br />
with negative feelings in order to make<br />
positive choices in life. Different areas are<br />
explored in a fun and<br />
positive environment<br />
where the kids are<br />
rewarded for their effort<br />
and listening.<br />
The topics discussed<br />
are Respect, Feelings,<br />
Choices, Teasing and Bullying. These<br />
topics are tackled through a mixture of<br />
role plays and activities giving Students a<br />
special empowering message to shout loud.<br />
Students are stimulated to praise themselves<br />
often and to believe in their uniqueness and<br />
talents.<br />
One of the favourite parts of the workshop is<br />
students dealing with anger and worry. The<br />
students enjoy meditating and appreciate<br />
it as a powerful tool to release these two<br />
negative feelings.<br />
This program also helps to identify which<br />
personal traits a bully is attracted to and<br />
prepare an appropriate reaction. in fact,<br />
through role play the kids are shown how to<br />
use the ‘<strong>Five</strong> Points of Power’. These consist<br />
of using body language and self-confident<br />
talk in order to discourage the bully.<br />
The day ends with lots of excitement and<br />
gratitude that are expressed in the students’<br />
feedback. Skyler said: ‘i feel great,<br />
fantastic, amazing; the workshop has been<br />
outstanding, FUn!’ Jack: ‘now i am not<br />
a bully target, thanks’; Paige: ‘Essere is a<br />
fantastic idea and i am sure it benefits many<br />
lives’; Mia: ‘it made me think about how to<br />
be a better person’.<br />
The message that the Drummoyne Public<br />
School students convey is that they truly<br />
benefited from the growing Years Program.<br />
not only that they found it fun, but most<br />
importantly, they acquired the tools to<br />
become confident and happy adults<br />
who make positive choices for their lives<br />
and give a valuable contribution to their<br />
community.<br />
We, at <strong>Club</strong> <strong>Five</strong> <strong>Dock</strong> RSl, agree with<br />
isabelle in saying ‘Essere, keep up with the<br />
good work!’<br />
Relay For life<br />
community<br />
Relay For life is an overnight, community<br />
event where teams of 10-15 participate<br />
in a relay-style walk or run to raise funds<br />
for Cancer Council. The event brings the<br />
whole community together for a night<br />
of fun, entertainment, celebration and<br />
remembrance. Each Relay For life event is<br />
organised by a local volunteer organising<br />
committee on behalf of Cancer Council.<br />
The 2012 Relay For life was held 13th<br />
– 14th October in King george Park,<br />
Rozelle and brought together 26 teams<br />
with 282 participants and raised over<br />
$98,000 which is an amazing effort.<br />
<strong>Club</strong> <strong>Five</strong> <strong>Dock</strong> RSl personally raised<br />
$6,762 which is a fantastic result. The<br />
<strong>Club</strong> would like to thank all our members<br />
and guests who supported our teams and<br />
donated money on shave night prior to the<br />
event.<br />
Just to re-cap the shave night. Managers<br />
and Staff of <strong>Club</strong> <strong>Five</strong> <strong>Dock</strong> RSl held a<br />
separate event where they donated their<br />
time and hair (for some, it won’t grow<br />
back) to raise money for the event. it was<br />
a great turn out.<br />
A special thank you to Managers, Staff<br />
and hairdressers who donated their time<br />
and/or shaved their heads!<br />
