am originally from the UK and fell in love
with Australia upon my visit.
What do you like about working for club
Five Dock RSL? Staff and members are
extremely friendly and welcoming. it is a
great working environment and never a dull
moment at the Club.
What is your role at club Five Dock RSL?
i have recently been appointed to the role
Events Co-ordinator.

Message
Dear Members
On the 30th October 2012, Harry McKinnon tendered
his resignation as Director of Club Five Dock RSl. Harry has been a part of the
organisation for over twenty years serving as President for six years (18th May 2006) and
over sixteen years as Director and Chairman of the auxiliaries.
When i first met Harry he was a well known punter who followed the Parramatta Eels and
dwelled at the Clubs lower ground bar. Twenty or so years later Harry can been seen in
Dockers Sports bar, still punting and supporting the Eels. in describing Harry it may be
helpful to speak about his leadership skills often seen playing devil’s advocate during our
monthly board meetings. This was part of Harry’s unmistakable discussion style where we
witnessed on occasions Harry arguing against his own argument! But at the end of the
meeting, the entire Board was always united in their decisions.
Harry McKinnon can reflect on a fantastic achievement at Club Five Dock RSl during
his tenure. Harry and i had a good and robust relationship as President and CEO. i am
confident this will continue with our new president Robert Ridge.
in conclusion, i would like to thank Harry McKinnon for his unrelenting support and continued
friendship.
To other news, Members who reside in the nearby vicinity of the club may have received
a notice regarding a Development Application Club Five Dock RSl have submitted to the
City of Canada Bay Council. This is for a planned refurbishment of level 1 (auditorium and
function rooms) and ground floor foyer which include some aspects of the gaming area.
The completion date is set for September/October 2013 providing all works adhere to
schedule.
Part of the scope is to re-configure the ground floor foyer to ease access to all points of the
Club. The ground floor gaming is to be refurbished for a larger outdoor area giving more
space. The first floor will be introducing a new bar and restaurant boasting an outdoor
terrace with City views and a floor capacity seating over 300 people. A brand new
kitchen and new air-conditioning mechanicals are on the works that will service one-half of
the club. The Board and Management have commissioned Russell Corporate to undertake
a feasibility study of the project to ensure its viability and fulfil its commitment to corporate
governance. Results of the study have shown encouraging signs that the project may be
embarked on. There will opportunity for members to view the project in greater detail at a
presentation in the Mirrors Room held 24th January 2013 at 7pm.
On page 3 you will see our Executive Chef Kamal showing you one of his secret recipes
in making the perfect ham. it’s been a crowd favourite amongst my family and am sure it
will be one amongst your own.
Congratulations to all the members who have won a key so far in the “Double Up” Toyota
promotion (page 12). One or two lucky members will win a car (or both) starting from
December 13.
i would like to thank all our members for your loyalty and continued support. Thank you to
all staff involved in the operation of our great club. i truly appreciate the hard work and
dedication throughout the entire year.

Dear Members
Welcome to the
summer edition of the
living local. As most
of our regular active
members would have noticed we have
had a significant change in the Board leadership
at the club. Mr Harry McKinnon, due to personal
reasons, resigned as President of Club Five Dock
RSl ltd and his position on the Board of Directors
in October. i would like to take this opportunity
and on your behalf, thank Harry for his twenty
years of dedication and commitment to the success
of our club. Mr McKinnon was well known and
respected by State and Federal MP’s, Canada
Bay Council and all of the local charities and was
able to ensure Club Five Dock RSl ltd was being
actively represented. The current board of directors
would like to extend a sincere and heartfelt thank
you to Harry and all the best for the future.
The board will take time over the Christmas break
to review our options for filling the vacancy left by
Mr McKinnon and co-opt a suitable replacement
with the community interest and business acumen
needed for such a role. The next board of directors’
elections are not until 2014 and co-opting will
ensure a robust and dynamic board. i would like to
thank the board for their endorsement and support
and i look forward to working with them on your
behalf.
As we near the end of 2012, i would like to report
another good trading year and whilst below our
record year of 2011 our club continues to trade
well. This is only due to your patronage and
support throughout the year. The staff, management
and board hopes to see you and your family in the
coming year.
i would like to take this opportunity to thank our
hardworking team headed up by Mr Ken Diaz for
their efforts and tireless dedication in ensuring that,
you our members have a memorable and joyous
experience at Club Five Dock RSl.

prepare my Christmas Message for yet
another year. i’ve hardly forgotten the
last one yet! Alas we have to face
reality, it is that time again. Quite a lot
has happened during the year.
Setbacks seem to be one of the
hazards of today and we must always
be constantly alert to deal with these annoyances.

Christmas Message
As we speak of Christmas, it reminds me of a documentary series
on Jerusalem recently on Tv station SBS. As a 20 year old soldier i can vividly
remember being on a few days leave and we motored from Tel Aviv to Jerusalem
for the day. Since never hearing much of the Holy City i was amazed at what i
saw. As we walked with steel heeled boots along narrow cobbled streets and
laneways our footsteps heralded our presence. it was a quite historic event for
me, to say the least, to have walked via Dolorosa – where Jesus carried his cross.
Then from the Mount of Olives looking down over the City and noting the sights.
Of course the usual peddlers were there selling rosary beads made of olive seeds.
Oh well! Such are memories.
Seventy years later on and here we are. During the year some of you would have
lost a family member and it is my hope you have endured. indeed it is always a sad
time, but with the help and comfort of family and beliefs you will cope.
Our news is not always good but most can only accept it. let us wake to each new
day and face our challenges with confidence. Allow us to greet our neighbour with
a smile and a friendly “hello”, no matter who they are or where they come from.
We are god’s beings.
i would like to extend my greetings for a Happy Christmas and a healthy and safe
new Year to all Sub-Branch and Club Members and may your god watch over
you.

soba noodle salad
with salmon and Avocado
I don’t know about you, but for me sometimes
the simplest and freshest dishes make the most
enjoyable meals. One of the new menu items
added to the Three Peppers Summer menu is ‘Soba
Noodle Salad with Salmon and Avocado’.
This dish delivers Asian-inspired flavours making
you most likely to fall in love with at first bite.
Some of the ingredients comprise crushed garlic,
fresh ginger, soy, vinegar, honey, sesame oil and
lime giving you a salty-sweet flavour combination
that is so highly addictive.
Combing your Salmon with the Soba Noodles,
baby spinach leaves, fresh coriander and avocado
presents this to surely be a crowd favourite and is
available early December 2012.

Christmas has always been an exciting time for the family and i as we all find
the time to gather together and enjoy the festivities during the holiday period.
With all the new Master Chef shows and great food and produce, our
members and guests have become “food savvy”. This is exciting to Chefs as
we get to become more adventurous in delivering great new quality meals
derived from fresh and vibrant produce.
in this issue of the living local i’m going to share with you one of my secret
recipes in making the perfect Christmas Ham. The Christmas ham is usually
served as side partner to the turkey, but it doesn’t have to be. Here is how to
bake an amazing Christmas ham that can be a centrepiece on your table.
ingredients • Traditional double smoked Ham on the Bone • Cranberry juice
• Pineapple • Orange marmalade • Honey • ginger • Dijon mustard • Star
Anise • Cardamom • Cinnamon • Onion • Olive oil
glaze • Pour a little Olive Oil into a hot pan with diced onion • Stir & let it
sweat • Add Star Anise, Cardamon, Cinnamon and ginger and cook for
a further minute • Stir in Pineapple & Mustard • Add Orange Marmalade,
Honey & Cranberry juice and bring to the 1st boil • Simmer for about 10
minutes • Remove Star Anise and pour glaze into a blender, blend until
smooth • Strain the sweet aromatic glaze through a fine strainer.
Scoring • Take a sharp knife and remove the skin by cutting about 1cm deep
around the hock followed by down the back • gently remove the skin (leave
the fat as it will retain moisture in the meat during cooking) • Score the fat all
around in a shape of diamond about a 1cm.
baking • Place the ham onto a baking tray and brush the glaze over
generously • Place in the oven at 160°c • After 40 minutes give it another
generous coating of glaze • Reduce the temperature and cook for a further
hour and half • Place on to a carving board and carve it as thin or thick as
you like…

Snake symbolizes such character traits as intelligence,

To celebrate this occasion we will be bringing in the
Australian Yau Kung Mun performing Mui Fa Jong lion
from 8pm with a mini fireworks display at the front of the
Club. Three Peppers will be holding some great specials
from our Asian Chefs which will include BBQ Pork,
Wonton Soup, and Soy Duck. Yummmmm!

how long have you been a chef? i have
worked in restaurants in Australia and abroad for over
34 years.
what made you want to become a chef? My
family have always been in the restaurant industry in a
range of roles which i fell into and discovered a passion
for cooking.
what do you think of chinese new year? it’s
a great celebration occasion that brings good luck to the
year coming forward. its fantastic to see the lion show
in our local area.
what’s one dish you must try at three
peppers? garlic Prawns with rice is a great dish but
at Chinese new Year you must try the BBQ Pork.

Teaching Students life Skills!
Essere (To Be)
living Skills is a
registered charity
which provides
self-esteem and
resilience building
workshops to
young people.
Essere’s
innovative
method consists
of practical and
entertaining
activities
taking place in a safe and
supportive environment. These programs
are aimed at building confidence and
equipping young people with the life skills
they need in order to deal with the pressures
of modern society.
Essere have teamed up with Club Five Dock
RSl to run one of their programs named
“The growing Years” to deliver workshops
to primary schools in the Canada Bay local
government Area.
Club Five Dock RSl visited Year 5 students
from Drummoyne Public School (one of the
recipients who took part in the program)
to gain insight into the areas explored and
document Essere’s workshop for the local
community.
The program was run by Janette, Coralie
and Cathy, highly trained and experienced
professionals, to a class of 29 Year 5
students. Janette, the main trainer, introduced
Essere (To Be) living Skills to the students
and explained that the main objective of
the day would be learning about their inner
selves and acquiring the strategies to deal
with negative feelings in order to make
positive choices in life. Different areas are
explored in a fun and
positive environment
where the kids are
rewarded for their effort
and listening.
The topics discussed
are Respect, Feelings,
Choices, Teasing and Bullying. These
topics are tackled through a mixture of
role plays and activities giving Students a
special empowering message to shout loud.
Students are stimulated to praise themselves
often and to believe in their uniqueness and
talents.
One of the favourite parts of the workshop is
students dealing with anger and worry. The
students enjoy meditating and appreciate
it as a powerful tool to release these two
negative feelings.
This program also helps to identify which
personal traits a bully is attracted to and
prepare an appropriate reaction. in fact,
through role play the kids are shown how to
use the ‘Five Points of Power’. These consist
of using body language and self-confident
talk in order to discourage the bully.
The day ends with lots of excitement and
gratitude that are expressed in the students’
feedback. Skyler said: ‘i feel great,
fantastic, amazing; the workshop has been
outstanding, FUn!’ Jack: ‘now i am not
a bully target, thanks’; Paige: ‘Essere is a
fantastic idea and i am sure it benefits many
lives’; Mia: ‘it made me think about how to
be a better person’.
The message that the Drummoyne Public
School students convey is that they truly
benefited from the growing Years Program.
not only that they found it fun, but most
importantly, they acquired the tools to
become confident and happy adults
who make positive choices for their lives
and give a valuable contribution to their
community.
We, at Club Five Dock RSl, agree with
isabelle in saying ‘Essere, keep up with the
good work!’
Relay For life
community
Relay For life is an overnight, community
event where teams of 10-15 participate
in a relay-style walk or run to raise funds
for Cancer Council. The event brings the
whole community together for a night
of fun, entertainment, celebration and
remembrance. Each Relay For life event is
organised by a local volunteer organising
committee on behalf of Cancer Council.
The 2012 Relay For life was held 13th
– 14th October in King george Park,
Rozelle and brought together 26 teams
with 282 participants and raised over
$98,000 which is an amazing effort.
Club Five Dock RSl personally raised
$6,762 which is a fantastic result. The
Club would like to thank all our members
and guests who supported our teams and
donated money on shave night prior to the
event.
Just to re-cap the shave night. Managers
and Staff of Club Five Dock RSl held a
separate event where they donated their
time and hair (for some, it won’t grow
back) to raise money for the event. it was
a great turn out.

and hairdressers who donated their time
and/or shaved their heads!
