he New Year looks as though it will be<br />

a challenge for everyone. N<strong>at</strong>ionwide<br />

clubs and members have faced difficult<br />

economic times. How wonderful would it be to<br />

opt out of particip<strong>at</strong>ing in the recession? We may<br />

not be able to opt out, but we will certainly make<br />

a strong effort to particip<strong>at</strong>e on a minimal level!<br />

Please be assured th<strong>at</strong> your club is committed<br />

to giving all our members real value. We realize<br />

success will come through being relevant in the<br />

lives of our members. Your club should be an<br />

extension of your home, a welcoming place where<br />

you can enjoy wh<strong>at</strong> you like to do and forget about<br />

day-to-day worries.<br />

Chef Andy Henderson and the culinary staff<br />

are preparing many new and exciting dishes<br />

th<strong>at</strong> emphasize locally raised beef, poultry, and<br />

vegetables. The majority of our seafood will<br />

be shipped in fresh. We will continue to work<br />

towards joining an exclusive group of restaurants<br />

in the st<strong>at</strong>e by earning the “Kentucky Proud”<br />

certific<strong>at</strong>e.<br />

Talking points about the championship golf course<br />

are unnecessary. The course <strong>at</strong> Olde Stone has<br />

received n<strong>at</strong>ional recognition and now stands on<br />

its own merit. We have, however, implemented<br />

a few organiz<strong>at</strong>ional changes to better anticip<strong>at</strong>e<br />

your golfing needs and better serve you on and off<br />

the course.<br />

At the end of the day we have but one mission;<br />

th<strong>at</strong> is to provide our members and guests with a<br />

comfortable and enjoyable experience. The entire<br />

staff <strong>at</strong> Olde Stone pledges to make sure this is the<br />

Special Recognition & Announcements<br />

Boris Bencic particip<strong>at</strong>ed in “Tour de Orlando” and finished 99 out<br />

of 425 bicyclist. He rode 110 miles on a bicycle for six and a half<br />

hours <strong>at</strong> an average of 21 miles per hour. Boris thanked The Club <strong>at</strong><br />

Olde Stone for the fitness facility th<strong>at</strong> helped him achieve this level<br />

“My Enemy, My Friend,” is a<br />

book recently written by Dan<br />

Cherry about his reunion with the<br />

Vietnamese fighter pilot, Nguyen<br />

Hong My, th<strong>at</strong> Mr. Cherry shot<br />

down during the Vietnam War. All<br />

proceeds of the book will go towards<br />

the Avi<strong>at</strong>ion Heritage Park in<br />

Bowling Green, KY. A fundraiser for<br />

the park will be held <strong>at</strong> Olde Stone<br />

on April 16 th and Mr. My will be in<br />

<strong>at</strong>tendance.<br />

Zenon Drobocky was recently awarded a black belt in Tae Kwon<br />

Do. He has been working towards this goal for nearly two years.<br />

Changes in the New Year -<br />

Becoming Proud of Kentucky<br />

Olde Stone rang in another New Year and brought about many<br />

changes throughout The Club. The culinary staff feels th<strong>at</strong> we should<br />

be of no exception. I would like to share with everyone some of<br />

the goals and new initi<strong>at</strong>ives taking place in the kitchen. First and<br />

foremost is the idea of becoming a certified member of Kentucky<br />

Proud as established by the Kentucky Department of Agriculture.<br />

To accomplish this, the program requires you purchase a majority<br />

of foods and goods from a certified Kentucky Proud Purveyor.<br />

In Bowling Green, as well as the surrounding counties, there are<br />

a number of sellers of fine Kentucky grown and manufactured<br />

products. We are fortun<strong>at</strong>e to have the ability to go down to the<br />

farmers market <strong>at</strong> the Medical Center and purchase from nearly 25<br />

individuals who carry the Kentucky Proud logo. Fruits, vegetables,<br />

cheeses, jams, me<strong>at</strong>, poultry, fresh fish, and Game (Bison) are<br />

available to us locally. The st<strong>at</strong>e of Kentucky has so much to offer it’s<br />

almost a crime not to give back to our local economy and its families.<br />

I have full confidence th<strong>at</strong> we can accomplish and succeed in this<br />

venture.<br />

The concept of going green has become a jumpstart to preserving the<br />

ecology and health of our planet. The wheels are turning throughout<br />

the service industry in Kentucky to get more properties involved in<br />

the concept of minimizing our “Carbon Footprint”. Olde Stone has<br />

taken the first initial step of recycling as much plastic, cardboard,<br />

paper and glass as possible. The Club has shown th<strong>at</strong> WE DO CARE<br />

Events Made for Members<br />

Over the past few months the Food & Beverage department has<br />

executed changes in order to better suit our members’ needs and<br />

requests. We are focusing on ways to bring members out to The Club<br />

more often by implementing festivities th<strong>at</strong> are of interest to all age<br />

groups.<br />

Friday Night Fever, geared towards young couples and singles,<br />

fe<strong>at</strong>ures game nights, cookouts, live music, and more. This is a gre<strong>at</strong><br />

opportunity to introduce potential members to the “good life.”<br />

Movies and bingo before or after Thursday night buffets will allow<br />

the entire family to spend time together while getting to know other<br />

members. Dinner, Bridge and book clubs have also become a popular<br />

past-time among members and their guests.<br />

Another goal we’ve set is to acquaint members with our wine list<br />

and invite them to become involved in future wine selections. Wine<br />

by utilizing the new Greenware cup made out of corn resin in place<br />

of the Styrofoam to the take-out container th<strong>at</strong> is made from recycled<br />

cardboard and paper. In addition, we have also begun buying locally,<br />

turning out the lights when not in use, carpooling, and utilizing<br />

delivery companies with certified transport vehicles th<strong>at</strong> meet all local<br />

fuel and emissions standards. These are only a few of the standard<br />

oper<strong>at</strong>ing procedures for a property to become certified “Green.”<br />

Though it may take some time, we are committed to continue<br />

working towards meeting our goal.<br />

I hope everyone is as enthusiastic and encouraged as the culinary<br />

staff to be moving forward and accepting th<strong>at</strong> in 2009 it can only get<br />

better. Feel free to stop by and ask Gary, Erik, Bridgette, Damien,<br />

Introducing Olde Stone’s Chef, Andy Henderson<br />

Andy was born and raised in Bowling Green. He <strong>at</strong>tended<br />

Sullivan University in Louisville, KY, where he completed a BA<br />

of Science in Culinary Arts in October 2003. Andy joined The<br />

Club <strong>at</strong> Olde Stone in December 2005 and has enjoyed being a<br />

part of something this special.<br />

dinners and tastings present opportunities to become engaged in the<br />

business. I will continue to do my best to build a knowledgeable,<br />

efficient, and friendly staff happy to serve members and guests of The<br />

Club <strong>at</strong> Olde Stone.<br />

<strong>at</strong> <strong>OLDE</strong><br />

Whether you’re saying “I do” for the first or fourth time, or if you’re 22 or 62, let Olde Stone help you plan unique festivities around<br />

the big day! In the past most brides have thought of Olde Stone as a loc<strong>at</strong>ion for the wedding ceremony, reception, or both. While<br />

we have the facilities and perfect loc<strong>at</strong>ion for those events, Olde Stone can offer much more.<br />

Think in multiples. You may have heard the saying th<strong>at</strong> things come in threes. Why not approach the wedding process in the same<br />

way? Most brides (including families, friends, and soon-to-be husbands) concentr<strong>at</strong>e solely on the wedding ceremony and reception. While<br />

both of those g<strong>at</strong>herings are vital to the entire process, by only focusing on the “main events” couples miss out on all of the fun th<strong>at</strong> leads up to<br />

your friends together after making the decision to get married! Depending on the time of year, use one of our many meeting rooms to have a<br />

cocktail party or plan an outdoor cookout with corn hole on the back lawn of the <strong>Golf</strong> House. Choose the style of g<strong>at</strong>hering th<strong>at</strong> you’re most<br />

comfortable with and the staff <strong>at</strong> Olde Stone will help lead you in the right direction.<br />

Bridal Showers. Whether it’s an event just for the ladies or you decide to incorpor<strong>at</strong>e the guys, continue the journey by planning a bridal<br />

shower <strong>at</strong> Olde Stone. A girls’ day <strong>at</strong> one of the <strong>Golf</strong> Cottages filled with food, gifts, and pampering or an open house for couples with a formal<br />

wine tasting are gre<strong>at</strong> ideas th<strong>at</strong> allow you to incorpor<strong>at</strong>e all parties involved and cre<strong>at</strong>e a memorable experience. Your soon-to-be husband will<br />

love you even more if you plan a golf scramble for the men and a day by the pool for the ladies. Add a dinner in the evening for everyone and<br />

Rehearsal Dinner, Wedding Ceremony & Wedding Reception. Olde Stone has the facilities and talented staff you need<br />

to host all of the events taking place within the 24 hour period surrounding the wedding ceremony. Make plans for the entire bridal party to<br />

stay on-site in the <strong>Golf</strong> Cottages the evening before. Wh<strong>at</strong> would be better than waking up on your wedding day to a beautiful golf course,<br />

Purpose. The purpose of a fitting<br />

is to find the correct club<br />

to fit the player’s swing. Many<br />

times when we put a foreign<br />

club in our hands th<strong>at</strong> doesn’t<br />

feel quite right, we’ll change<br />

our swing to fit the club. This is<br />

where the majority of players get<br />

into trouble. For instance, owning<br />

a stiff-flex driver when you<br />

should be hitting a regular-flex<br />

driver will more often than not<br />

make the ball slice. But if you<br />

step up to the ball and swing as<br />

hard as you can, th<strong>at</strong> ball might<br />

go straight a couple of times out<br />

of ten. All of a sudden, you’ve<br />

changed your swing and tempo<br />

to fit a club th<strong>at</strong> you have no<br />

business having in your bag. The<br />

over-swinging then carries over<br />

into your iron and wedge game,<br />

which in turn makes for a very<br />

inconsistent player.<br />

Process. During a club fitting<br />

you are asked to hit many varia-<br />

tions of the same club. The idea<br />

is to find the best combin<strong>at</strong>ion<br />

of shaft, loft, lie angle, swing<br />

weight, and grip. By w<strong>at</strong>ching<br />

the ball flight th<strong>at</strong> each club<br />

can quickly narrow down your<br />

options and lead you to the best<br />

n an effort to reduce the abundance of divots on the driving range<br />

tee due to slow divot recovery during the hot Kentucky summers,<br />

we have installed a 300’x 7.5’ strip of artificial turf along the back<br />

of the driving range tee. This will help reduce the wear and tear th<strong>at</strong><br />

the tee experiences throughout the golf season. As rounds of golf<br />

continue to increase <strong>at</strong> Olde Stone, we want to insure you and your<br />

guests always have good turf to prepare for your round of golf.<br />

The artificial turf will be used several times throughout the season<br />

such as early spring and l<strong>at</strong>e fall when the turf is still dormant from<br />

low soil temper<strong>at</strong>ures. It will also be used when the tee is s<strong>at</strong>ur<strong>at</strong>ed<br />

from rains, for outings, and non-member rel<strong>at</strong>ed functions.

On January 27 th and 28 th we received nearly 5 inches of rain in about 36 hours followed by a half inch of snow.<br />

As a result holes 2 through 7 were severely flooded and sustained some damage. The flood left behind a<br />

half inch of silt everywhere, washed out several bunkers and took the end of #7 fairway down the creek.<br />

All repairs were made before the start of the spring golf season.<br />

Moder<strong>at</strong>e or Vigorous:<br />

Which Level of Exercise Should You Choose?<br />

T<br />

here seems to be some confusion<br />

among some gym goers on whether<br />

to do moder<strong>at</strong>e exercise or more<br />

vigorous exercise. There are many benefits<br />

to both varieties of exercise. 30 minutes a<br />

day of moder<strong>at</strong>ely strenuous exercise – think<br />

of a brisk walk - can lower blood pressure,<br />

improve cholesterol, prevent or manage<br />

type 2 diabetes, manage weight, prevent<br />

osteoporosis, prevent cancer, increase energy,<br />

and improve mental well being. If the exercise<br />

is more vigorous – say, interval training on the<br />

treadmill – you receive all of the above, plus<br />

gre<strong>at</strong>er cardioprotective benefits and more<br />

efficient calorie burning.<br />

To achieve heart health and the other benefits<br />

listed above, you do not have to subscribe to<br />

the “no pain, no gain” theory. The American<br />

Heart Associ<strong>at</strong>ion and the CDC recommend<br />

a minimum of 30 minutes a day of moder<strong>at</strong>eintensity<br />

physical exercise 5 or more days<br />

per week. You can get th<strong>at</strong> all <strong>at</strong> once or take<br />

3 brisk 10 minute walks throughout the<br />

day. <strong>Golf</strong> fits the bill for moder<strong>at</strong>e exercise,<br />

provided players walk the course and play 2-3<br />

times per week. A 2005 analysis of d<strong>at</strong>a from<br />

the Framingham Heart Study reports th<strong>at</strong><br />

people who exercise regularly increase their<br />

life expectancy by 3.7 years as compared with<br />

sedentary people. To achieve this, individuals<br />

need to achieve intensity equivalent to<br />

walking <strong>at</strong> a pace of 17 minutes per mile.<br />

If you are looking to intensify the above<br />

benefits and work a bit harder, you will want<br />

to do more vigorous exercise. In rel<strong>at</strong>ion<br />

to the #1 cause of mortality in America,<br />

coronary heart disease, exercise of a more<br />

vigorous type resulted in a lower incidence.<br />

A study done in 2006, st<strong>at</strong>es th<strong>at</strong> for each<br />

1-MET (metabolic equivalent of task) increase<br />

in aerobic capacity, there is a corresponding<br />

8%-17% reduction in cardiovascular disease<br />

and all causes of mortality.<br />

Doing moder<strong>at</strong>e exercise will also help you<br />

lose weight, if you are just beginning an<br />

exercise program or are significantly over<br />

weight. Vigorous exercise is where it’s <strong>at</strong><br />

if you are looking to achieve maximum f<strong>at</strong><br />

burning benefits. Research presented in the<br />

Journal of Medicine and Science in Sports<br />

and Exercise shows th<strong>at</strong> when you workout in<br />

high intensity intervals, the total amount of<br />

Points to Remember when performing Squ<strong>at</strong>s<br />

Squ<strong>at</strong>s can be done with or without any equipment. They are one of the most effective<br />

lower body exercises you can do, as you are utilizing virtually every muscle in the lower<br />

body. If you are using weights, one of the safest way to perform squ<strong>at</strong>s is using the<br />

Smith Machine (shown <strong>at</strong> right).<br />

• Perform squ<strong>at</strong>s in a controlled manner.<br />

• Exhale as you return to a standing position.<br />

• Avoid leaning too far forward as the involvement of back muscles increases causing<br />

back injury. Maintaining a near-erect posture reduces the compressive effect on the<br />

discs.<br />

• American College of Sports Medicine recommends th<strong>at</strong> a weight lifting belt should<br />

be used for very heavy lifts as a rise in intra-abdominal pressure has been shown to<br />

cause injuries in squ<strong>at</strong>s.<br />

with low intensity, long dur<strong>at</strong>ion exercise.<br />

Intense interval exercise speeds up your<br />

metabolism for up to 3 hours after exercise.<br />

Whether it be moder<strong>at</strong>e or vigorous exercise<br />

you choose; remember, you are working out<br />

for YOU, and to improve YOUR fitness<br />

level. Moder<strong>at</strong>e for you may be vigorous for<br />

someone else; and vice versa. But remember,<br />

your body adapts quickly to stimulus; so once<br />

you have been working out for a while, you<br />

need to increase the intensity to continue to<br />

see your desired results. For some easy ways to<br />

On Sunday, February 8 th , The Club <strong>at</strong> Olde Stone<br />

particip<strong>at</strong>ed in the Chocol<strong>at</strong>e Festival to benefit<br />

Hospice of South Central Kentucky. Chef Andy<br />

Henderson put together delicious chocol<strong>at</strong>e tre<strong>at</strong>s<br />

for all of the sweet-toothed participants along with<br />

forty-one other restaurants and c<strong>at</strong>erers. Proceeds<br />

from the event helped those whose expenses are not<br />

covered by insurance or who don’t have insurance,<br />

as well as the Hospice Children’s Grief Camp.<br />

“I had a family member th<strong>at</strong> was terminally ill<br />

living 1,200 miles away from me and my family.<br />

Hospice took care of him in his last days. It was a<br />

relief to know th<strong>at</strong> he would have the comfort and<br />

care we were unable to provide. As a whole the<br />

Hospice Community deserves any assistance I can<br />

offer and was privileged to have been afforded the<br />

opportunity to do so.” – Chef Andy Henderson<br />

K<strong>at</strong>y Tinus volunteered over the winter <strong>at</strong><br />

Girls Inc. She presented the QuickStart<br />

program through a series of lessons with<br />

different age groups ranging from 5-16<br />

year olds.<br />

“QuickStart is an exciting new play<br />

form<strong>at</strong> for learning tennis designed to<br />

bring kids into the game by adapting the<br />

equipment, size of the court and scoring<br />

system to the age and ability of the child.<br />

This enables the child to have a fun,<br />

successful experience each time on the<br />

court. And it is gre<strong>at</strong> fun for all ages and<br />

abilities! Very few of the girls from Girls<br />

Inc. had any experience with the sport<br />

of tennis. It was very gr<strong>at</strong>ifying because<br />

whenever we would arrive the girls would<br />

race up to us, hug us, and ask if it was<br />

Chocol<strong>at</strong>e filling for Smores<br />

• 12 oz. Bittersweet chocol<strong>at</strong>e morsels<br />

• 8 egg yolks<br />

• 1 ½ cps. Confectioners Sugar (sifted)<br />

• 2 Tbs. Cognac<br />

• 2 Tbs. Kahlua<br />

• 2 Tbs. Crème de Cacao<br />

• 1 tsp. Vanilla Extract<br />

• Pinch Salt<br />

• 1 cp. Unsalted Butter<br />

• 2 Tbs. Cocoa Powder (sifted)<br />

• 1 ½ cps. Heavy Cream<br />

Method of Prepar<strong>at</strong>ion<br />

In mixing bowl cream egg yolks and sugar<br />

on medium speed until pale yellow.<br />

Melt chocol<strong>at</strong>e in microwave for 30<br />

seconds or until melted completely.<br />

Add Liquors and Extract and mix well.<br />

While mixing place butter and cocoa in<br />

microwave for 30 seconds or until melted,<br />

remove from microwave and whisk. Allow to<br />

cool for 1 minute.<br />

Incorpor<strong>at</strong>e butter and cocoa mixture to<br />

egg and liquor mixture slowly, stop mixer.<br />

Add all the chocol<strong>at</strong>e and mix on medium<br />

speed for 30 seconds then increase speed<br />

every 15 seconds for 1 minute.<br />

Turn mixer back to low speed and slowly<br />

add Heavy cream, increase speed to medium<br />

then to high for 30 seconds.<br />

Remove mixing bowl and pour contents<br />

into a plastic wrapped metal pan and top<br />

with layer of plastic.<br />

Refriger<strong>at</strong>e for 6 hours to overnight.<br />

Assembly<br />

• 1 Graham Cracker<br />

• 1 oz. Chocol<strong>at</strong>e filling<br />

• 3 Mini Marshmallows<br />

• Drizzle of Hershey’s syrup<br />

• Blow Torch to char Marshmallows

As winter subsides and hints of warm<br />

we<strong>at</strong>her begin peeking around the<br />

corner; you may notice a new spring<br />

in your step. The warm we<strong>at</strong>her is often times<br />

viewed as an open invit<strong>at</strong>ion to spending time<br />

outdoors. For those of you th<strong>at</strong> enjoy working<br />

in your yard and around the house; there are<br />

some outside maintenance projects th<strong>at</strong> will<br />

allow you to do just th<strong>at</strong>. This may not be your<br />

idea of fun, but consider it educ<strong>at</strong>ion as it may<br />

help you in making budget decisions. You will<br />

most likely see the development staff tackling<br />

these same projects around the Olde Stone<br />

community.<br />

Don’t forget the lawn. Spring is the right time<br />

to check your yard for any erosion or settling<br />

and fix it early before plants and grass begin<br />

the growing process. You should expect some<br />

after the we<strong>at</strong>her we encountered the last couple<br />

of months. Early spring is also a gre<strong>at</strong> time<br />

for reseeding the lawn. As the first mowing<br />

approaches, your lawn will be ready to burst<br />

forth in green.<br />

Popularity Increases with each Season<br />

The cottages <strong>at</strong> Olde Stone truly are a diamond in the rough. No<br />

pun intended! As we continue to host visitors, prospects and<br />

outside events the <strong>at</strong>tention and recognition of our cottages is<br />

growing. We hear numerous comments of how accommod<strong>at</strong>ions such<br />

as Olde Stone’s are much needed in Bowling Green. They are upscale,<br />

homey, and offer such a diverse variety of room configur<strong>at</strong>ions for any<br />

size party.<br />

After one walk around the house you’ll probably<br />

notice the shrubbery and plants looking a<br />

little out of shape after the winter. Now is a<br />

gre<strong>at</strong> time to prune your landscaping back to<br />

a healthy, full shape and size. Follow this up<br />

with a fresh layer of mulch and your beautiful<br />

plantings will be ready for th<strong>at</strong> nice warm sun.<br />

This will help promote th<strong>at</strong> crisp, clean feel of<br />

spring throughout your yard.<br />

If your landscaping isn’t the picture you<br />

envisioned or you simply have a project in<br />

mind, spring is a gre<strong>at</strong> time for planting. You<br />

can plant shrubs and other woody plants to<br />

fill out your landscaping just the way you<br />

envisioned it. Flowers are also a good option.<br />

Whether it is perennials or annuals, flowers add<br />

instant color around your yard.<br />

An early spring tre<strong>at</strong>ment for both your<br />

lawn and landscaping should include a<br />

pre-emergent. Pre-emergent herbicides are<br />

chemicals th<strong>at</strong> prevent the germin<strong>at</strong>ing weeds<br />

from establishing. This will guarantee th<strong>at</strong> your<br />

flowers, plants, shrubs and grasses get started off<br />

right and outpace those stubborn weeds.<br />

Keep in mind th<strong>at</strong> all of this is simply a start.<br />

Your lawn and landscaping is an ongoing<br />

process. Do all of this in the spring and nothing<br />

else, it is all for naught. These areas are the<br />

“get out wh<strong>at</strong> you put in” type. A little effort<br />

with each season change will definitely lead to<br />

transform<strong>at</strong>ions th<strong>at</strong> will make you proud. n<br />

A highlight for any type of guest is th<strong>at</strong> they earn the privilege of using<br />

the Club facilities whether it is for a game of golf or to lounge <strong>at</strong> the<br />

pool. Everything th<strong>at</strong> a group could ask for is right here on site for a<br />

temporary taste of the good life. For families, the cottages are a gre<strong>at</strong><br />

place to host rel<strong>at</strong>ives in town for reunions and other large occasions. By providing a variety of sleeping arrangements as well as kitchen and living room<br />

space, the cottages allow families a place where they can truly visit and be together. Also, the cottages have begun to play a large role in accommod<strong>at</strong>ing<br />

guests who have chosen Olde Stone for their c<strong>at</strong>ered events. Having the option of overnight lodging on site is ideal for many clients. Our third main group<br />

of guests expected to grow is corpor<strong>at</strong>e rentals with new and growing industry in our area.<br />
