Current methods applied <strong>in</strong> the preparati<strong>on</strong> <str<strong>on</strong>g>of</str<strong>on</strong>g><br />
fermented complementary <strong>food</strong>s pose a number <str<strong>on</strong>g>of</str<strong>on</strong>g><br />
nutriti<strong>on</strong>al problems. These <strong>in</strong>clude: (i) low prote<strong>in</strong><br />
c<strong>on</strong>tent and limited quality <str<strong>on</strong>g>of</str<strong>on</strong>g> the raw material (e.g.
