La Biósfera es la capa externa que cubre la superficie del planeta
y cobija a todos los seres vivos. Es relativamente delgada y está
compuesta por océanos, lagos, ríos, tierra firme y la parte inferior
de la atmósfera. Está formada por numerosos ecosistemas que
contienen todos los organismos vivos del planeta.
En 1971 la UNESCO inició el programa "El Hombre y la Biósfera” con
el fin de conciliar la actitud del hombre y el uso sostenible de los
recursos. Como parte de él, distintas áreas geográficas, marinas o
terrestres, fueron declaradas Reservas de la Biósfera, con el fin de
representar los diferentes hábitats del planeta. En Chile existen nueve.
The biosphere is the external layer covering the planet's surface, providing
shelter for all living beings. It is really thin and composed by oceans, lakes,
rivers, land and the atmosphere's inferior side. Comprised by multiple
ecosystems inhabited by all living beings in the planet.
In 1971, UNESCO started the "Man and the Biosphere Programme"
aiming towards conciliating human attitude and the sustainable use
of resources. As part of it, various geographical marine or land areas,
declared as "Biosphere Reserves". The program looks forward to
represent the different natural habitats available in the planet. There are
nine in Chile.

Torres del Paine
El Parque Nacional Torres del Paine fue declarado Reserva
de la Biosfera en 1978 con el fin de preservar y estudiar los
sistemas mixtos de montaña y alta montaña. Está ubicado en
las montañas de los Andes y la estepa patagónica en el sur de
Chile. Cantos, riscos, glaciares, cascadas, ríos, lagos y lagunas
destacan en su paisaje, y las únicas Torres y Cuernos del Paine,
dan nombre al lugar.
Torres del Paine National Park was declared a Biosphere
Reserve in 1978 for the purpose of preserving and studying
mixed systems on the mountains. It is located by The Andes
and Southern Chile's Patagonian steppe. Coves, cliffs, glaciers,
falls, rivers, lakes and lagoons highlight the landscape, and the
towers and horns from Paine give the place its name.

Bosques Templados Lluviosos de los Andes
Los Bosques Templados Lluviosos de los Andes son la reserva
más reciente de Chile, declarada el año 2007. Protege la
ecorregión del bosque valdiviano y se ubica en la parte sur de
la cordillera de los Andes, en la Región de Los Ríos y de los
Lagos. Sus bosques se consideran uno de los remanentes
boscosos más grandes y ecológicamente intactos de la tierra.
The temperate rainforests in The Andes are the most recent
addition, declared in 2007. Protects the eco-region at the
Valdivian rainforest and set in Southern side of The Andes
Mountains, within a unique place, characteristic for the broad
presence of rivers and lakes. The forest is considered by
ecologists as one of the richest, largest and untouched on earth.

Araucarias
Declarada en 1983, la Reserva de la Biósfera Araucarias se
ubica en el centro sur de Chile e incluye el Parque Nacional
Conguillio y la Reserva Nacional Alto Bío Bío, que cuenta con una
población estimada de 20 familias (1980), dedicadas al pastoreo.
Las reservas de la biósfera no son áreas dedicas 100% a la
conservación, el hombre puede habitarlas de forma sustentable.
Declared on 1983, the Araucarias Biosphere Reserve is located
in South-Central Chile and includes Conguillio and Alto Bio
Bio National Reserve, populated by an estimate of 20 families
(1980), devoted to grazing. The biosphere reserves are not
areas fully dedicated to conservation, human beings may settle
down in a sustainable condition.

Cabo de Hornos
El archipiélago Cabo de Hornos destaca por ser de los
pocos grupos insulares que están libres del impacto humano.
Ubicada en el extremo sur del continente americano, la reserva
comprende áreas marinas, islas, costas boscosas y un área
extensa y remota de los bosques templados y subantárticos de
Magallanes, una de las ecorregiones más prístinas del mundo.
Cabo de Hornos archipelago stands out as one of the few
groups of islands free of human impact. Located by the
south end of the American continent, the Reserve comprises
marine areas, islands and an extensive, remote temperate
and subantarctic rainforests from Magallanes, one of the most
pristine eco-regions around the world.

Archipiélago de Juan Fernández
Situada a 650 km. de la costa de Chile, en el Océano Pacífico,
la reserva de Juan Fernández incluye todo el archipiélago y sus
islas Robinson Crusoe, Alejandro Selkirk, Santa Clara e islotes.
Su origen volcánico permite encontrar varios tipos de lava en el
relieve y su paisaje se caracteriza por su condición vertical. La
flora presenta un alto grado de endemismo.
Located 650 kilometers off the coast of Chile, in the Pacific
Ocean, the Juan Fernandez Reserve includes the entire
archipelago and its islands: Robinson Crusoe, Alejandro Selkirk,
Santa Clara and islets. The site's volcanic origin allows to find
various types of lava and vertical landscapes. A high level of
endemic flora is also found at Juan Fernandez.

de Chile y de una riqueza cultural única en el continente.

textile, basketry or culinary - remarks Chile's ancestral roots and the
unique cultural richness found in the continent.

Color, olor, forma, trabajo, tradición. Son cinco palabras que bien
describen lo que es la artesanía del pueblo chileno, raíz ancestral
de oficios transmitidos de generación en generación, plasmando
así una identidad cultural caracterizada por las materias primas del
lugar, los colores del paisaje, las técnicas y el grado de desarrollo
de cada pueblo.
Color, scent, shape, work and tradition. Five words that perfectly
describe Chilean craftsmanship and ancestral roots transferred
from generation to generation, capturing the characteristic cultural
identity through local raw materials, landscape colors, techniques
and skills from each community.

Una de las prácticas más comunes es la alfarería o cerámica,
que podemos encontrar en lugares tradicionales como Talagante,
Quinchamalí, Pilén o Pomaire, a 50 km. de Santiago. Este último
es un destino muy popular para viajar por el día, con filas de casas
de adobe adaptadas como tiendas y talleres, llenas de artesanías
de greda para explorar y comprar.
También destaca la cestería, que se fabrica con fibras vegetales
naturales entrelazadas mediante diferentes técnicas. Especial
atractivo tiene hoy la de las localidades de Rari, Chimbarongo,
Hualqui y Liucura. Mariposas, brujas, flores, ángeles, aros, collares,
y otros tantos objetos de gran colorido son confeccionados por
50 mujeres del pueblo de Rari, localidad ubicada a 22 kms. de
Linares, en la Región del Maule. En la actualidad, las autoras
usan ixtle (fibra vegetal) y crin de caballo para la trama de sus
representaciones, las tiñen con anilinas y las tejen con agujas y
peines. En 2009 recibieron el premio UNESCO de Reconocimiento
de Excelencia para la Artesanía.
En cuanto a la textilería, las técnicas ancestrales del hilado con
huso manual y el uso del telar indígena de los pueblos aymara
y mapuche, son costumbres que se mantienen hasta hoy en
Doñihue, donde se pueden encontrar mantas y chamantos
tradicionales del campo chileno.
Sin duda que las mejores cartas de presentación de la comunidad
de La Ligua son los exquisitos pasteles artesanales y sus bellos
tejidos. Ubicada a 154 km. de Santiago, es conocida a nivel
nacional por estos productos, cuya tradición dulcera se remonta
a fines del siglo XIX. Dicen que su “fórmula secreta” data de esa
época, antigua receta que se ha convertido en una verdadera
leyenda.
The practices most commonly used are pottery or ceramics,
found in traditional locations such as Talagente, Quinchamalí, Pilén
o Pomaire, just 50 kilometers from Santiago. Pomaire is a very
picturesque town and a frequent "day trip" for tourists. You will be
able to find adobe houses now functioning as stores and workshops,
filled with clay-made crafts to take back home.
Basketry is also relevant. Fabricated with vegetable fibres, put
threads together with different techniques. Today Rari, Chimbarongo,
Hualqui y Liucura are the main focus points. Butterflies, witches,
flowers, angels, earrings, collars, and many more colorful items are
handcrafted by 50 local women from Rari, a town just 22 kilometers
from Linares, Maule region. Nowadays, the artisans use vegetable
fibre (ixtle) and horsehair weave for their creations, dyed with
anilines, woven with needles and combs. In 2009, they received a
UNESCO award as an acknowledgement to their craft.
Their textile technique is based on ancestral manual-threading
methods using an indigenous loom made by the native Aymara
and Mapuche communities. This technique is still being used at
Doñihue, where tourists often purchase blankets and the traditional
"chamantos" popular in Chile's countryside.
Certainly, the most iconic emblems from La Ligua community are the
delicious artisanal pastries as well as their beautiful knitted fabrics.
Located 154 kilometers from Santiago, is highly regarded by locals
for their sweet products, actually, this tradition goes back as far as
the19th century and people often say that their "secret formula" -
original from that time period - has evolved into a legendary tale.

proceso de maduración de 21 días a 4-5 grados, lo
que hace realzar su sabor.
For starters, I would suggest a prawn confit with
fruit cocktail, a fresh combination perfect as you go
onto the next course: The wagyu tenderloin. This
meat cut undergoes a maturity process of 21 days

altura, y hasta donde llegan transportados por un helicóptero.

subir hasta la cima de una montaña en un helicóptero, para luego

Hugo van Bebber Romero (40) es piloto comercial de helicópteros

el heli-ski fue el año 1995, en las Termas de Chillán, donde esquía
desde que empezó. “Ese año llegó un helicóptero disponible para
heli-ski, así que con un grupo de amigos quisimos conocer lugares

Hugo van Bebber Romero (40) is a commercial helicopter pilot who
skis ever since he was 3 years old. The first time he took on the
heli-ski challenge was back in 1995 at Termas de Chillan and he
still skis up there to this day. "That year a helicopter came in and it
was available for heli-ski, so some friends and I decided to explore
the (back then) inaccessible spots. Heli-ski delivers an unbelievable

DEVELOPMENT IN CHILE
En Chile se practica heli-ski desde fines de la década de los 80,
impulsado por los centros de ski Valle Nevado, cuyo terreno va
desde los valles de El Cepo y Olivares hasta el de Parraguirre, en una
superficie de alrededor de 200 mil hectáreas; y más recientemente
Puma Lodge, un complejo que ofrece una superficie de 5.000 km 2 de
laderas, cumbres, glaciares y riscos, ubicado al interior de la ciudad de
Rancagua, entre la Reserva Los Cipreses y el Río Tinguiririca.
En Portillo, donde se cuenta con un helicóptero con capacidad para
cuatro esquiadores, un guía y el piloto, se define el lugar de acuerdo
a la calidad de la nieve y el menor riesgo de avalancha. Después de
dejarlos se visualiza el trayecto que hacen los deportistas para definir
el lugar donde vuelven a abordar el aparato. Hay paquetes turísticos
desde uno a siete días.
Con alrededor de 4.600 kilómetros de cordillera, es fácil suponer que
hay una extensa lista de lugares desde donde “lanzarse”. Pero no. Para
poder practicar heli-ski se debe cumplir con condiciones geográficas
específicas que combinen seguridad y calidad de la nieve. En general,
y según las empresas que ofrecen estas excursiones, esta disciplina
puede practicarse de junio a octubre en distintos puntos, que se
distribuyen entre San Felipe y la Patagonia.
Así lo explica van Bebber: “Las condiciones ideales de nieve, por la
altura de las montañas, condiciones climáticas y disponibilidad de
helicópteros para practicarlo, se presentan entre la V y la VI regiones.
En la región Metropolitana hay varias opciones accesibles para
practicar heli-ski, tanto saliendo desde Santiago o bien directamente
desde Valle Nevado, donde hay mucho movimiento de helicópteros,
sobre todo después de nevadas y con días despejados”, señala, y
agrega: “Pero, para los que quieren tener una experiencia completa
de heli-ski, por superficie esquiable, hotelería y vasta experiencia de
los guías y tripulación de vuelo, recomendaría el Puma Lodge, ubicado
en la cordillera de la VI región a 2 horas 30 minutos por tierra desde
Santiago”.
Heli-ski practice started in Chile by the end of the 80s, supported
by Valle Nevado Ski Center, with a covering area from the valleys of

there is a long list of places for just "diving in". But no, it's not that simple.
Weather, safety and snow quality conditions must comply before hand.
In general, and according to the companies offering these excursions,
this activity may be performed from June to October at different points,
present between San Felipe and The Patagonia.
As explained by van Bebber: "The ideal conditions in regards of the
snow, mountain height, weather conditions and helicopter availability
to practice heli-ski are particularly easier to find between the 5th and
6th regions in Chile. In the Metropolitan Region, we may encounter
many options as well, leaving from Santiago or departing directly from
Valle Nevado, where there's a busy helicopter traffic, specially after a
snowfall or clear days". he states and adds: “But, for those seeking
a full heli-ski adventure in terms of surface, lodging and experienced
crew on board, I would recommend Puma Lodge, located by The
Andes and only a 2 1/2 hour drive from Santiago".

JUST FOR ADVANCED SKIERS?
Además de su elevado precio, tal vez una de las razones de por qué
tan pocos chilenos han vivido esta experiencia es el mito de que es
una práctica solo para deportistas extremos. Lo cierto es que las
condiciones que definen a un esquiador apto son un nivel intermedio
de esquí –quizás no para principiantes- y un estado físico acorde al
esfuerzo que implica y la altura.
Hugo van Bebber reconoce que es “fundamental conocer el propio
nivel de ski para disfrutar de la montaña y no sentir que finalmente
se perdió la plata. Exige de un nivel idealmente avanzado, conocer
el ski fuera de pista y, obviamente, tener el equipo adecuado, que en
ciertos aspectos es diferente al ski tradicional. Además, es importante
no beber mucho alcohol la noche anterior, tomar un buen desayuno y
mantenerse bien hidratado”.
Es una actividad de día completo, en que se parte muy temprano
con una charla de seguridad de guías y pilotos, para luego abordar
el helicóptero y enfilar hacia el destino seleccionado. El viaje asegura
vistas espectaculares: montañas, glaciares y valles.
El helicóptero deja a sus pasajeros en la cima escogida, se dan
las últimas indicaciones de los guías y comienza el descenso.
Dependiendo del lugar, la bajada puede durar casi una hora. Y, al final
de ésta, el piloto espera al grupo para volver a subir y completar las
bajadas acordadas.
Tal como lo explica Sergio Pavón, gerente comercial de Ski Total,
“El ski conjuga muchos beneficios, tales como practicar un deporte
o actividad al aire libre, compartir con la familia y los amigos, estar
en contacto con un escenario natural y lleno de energía, salir de la
rutina y escapar de la ciudad. Todo lo anterior sucede al momento de
estar esquiando, como también antes, mientras preparamos nuestra
siguiente excusión, mientras compartimos un momento de descanso,
al almuerzo, o cuando regresamos a casa, disfrutando las historias
que dejó la última jornada”, relata. Entonces, ¿por qué no aventurarse?

endure this activity are whether or not him/her is under an intermediate

Hugo van Bebber acknowledges that “it is fundamental to be certain of
your own level of expertise to enjoy skiing on the mountain and avoiding
to feel frustrated or like you threw your money away afterwards. Ideally,
this sport is suited for advanced skiers and it requires you to be familiar
with skiing off tracks, which is different from the traditional form. It is
key to avoid drinking too much alcohol the night before, have a good
breakfast and keep yourself well hydrated".
This is a full day activity, begins very early in the morning with a safety
brief conducted by guides and pilots, to then board the helicopter
and take off to your selected destination. The trip will ensure you a
breathtaking experience in terms of sightseeing: mountains, glaciers
and valleys. The helicopter drops off passengers on top of the hill, they
receive follow-up instructions and begin with their descent. Depending
on the place, the descent may take about one hour. By the end of the
trail, the pilot awaits for the group to return back and forth according
to plan.

ayuda, por el lugar donde se practica. Siempre debemos respetar las
condiciones a las cuales nos enfrentamos, respetar la naturaleza y,

Una fiesta de raíz francesa y corazón local
Celebrating French roots and home-grown heart
Un proyecto gastronómico que ha venido a celebrar los
sabores de Chile. En esta brasserie, lo único importado
es la técnica de la cocina francesa, desde la selección de
los productos, la manera de conservarlos, prepararlos,
ofrecerlos y presentarlos.
Su chef, Mathias Floquet, creció en Francia en un ambiente
de cocina junto a su abuela y su madre y ya a los 13 años se
encontraba trabajando de copero en el restaurant vecino de
su casa. A los 16 años entra a una escuela de cocina y parte
su carrera en La Brasserie de l’Ouest, del insigne chef francés
Paul Bocuse.
Un año después, Mathias Floquet viaja al sur de Francia para
perfeccionar sus conocimientos sobre pescado, seguiría a
Cannes para trabajar en el reconocido festival y luego sería
el segundo a bordo en el Restaurant Yoann Conte.
Junto con su amigo, empresario y aventurero, Jean Charles
Boulogne viaja a Chile para abrir un restaurant y comienza
esta travesía que hoy ve abrir sus puertas.
A culinary project that arrives to celebrate Chilean flavors.
In this brasserie, the only thing coming from abroad is
the French cuisine's technique, from product selection,
preservation, offerings and display.
Chef Mathias Floquet, grew up in France within a household
of food fanatics, cooking with both his grandmother and
mother all the time. At age 13 he was already working as a
dishwasher at the restaurant next door to his house. At 16,
he enrolled in a Culinary Institute and began his career at
La Brasserie de l’Ouest, led by the distinguished French Chef
Paul Bocuse.
A year later, Mathias Floquet traveled to Southern France to
refine his ability in fish preparations. In his next stop, Cannes,
he worked for the acclaimed film festival and then promoted
to second in charge at the Yoann Conte Restaurant.
Along with his adventurous and entrepreneur friend, Jean
Charles Boulogne, he landed in Chile with the purpose of opening
a new restaurant. Today, this remarkable journey comes to life.

the restaurant is perched on a revolving platform that allows
you to take in the entire view with each revolution. With 35 years of
experience, our restaurant offers a cozy place to enjoy live music
and international fare including shellfish, fish and Chilean cuisine
such as Patagonian lamb and King Crab casserole. A few specialties
not be missed are the "gaucho style" trout, red salmon from
