La plus traditionnelle est le vary sosoa, un petit déjeuner malgache à base de riz. F ait généralement à partir du riz rouge, le vary sosoa ou vary soa ou encore Sabeda, est le plat par excellence pour donner l’énergie nécessaire pour bien débuter la journée. Toutefois, dans certains foyers Malagasy, il est également servi au dîner pour compenser l’énergie dépensée. Sa texture ressemble approximativement à celle du risotto avec, cependant, un peu plus de jus. Le Vary Sosoa est plus tendre avec un goût légèrement sucré. Le riz rouge de Madagascar est une variété indigène cultivée surtout dans les plaines d’Alaotra, de Betsimitatatra et de Marovoay. Onctueux, tendre et d’une saveur de noisette, ce riz possède plus d’éléments nutritifs que le riz blanc : il contient beaucoup de vitamines notamment la vitamine B6, de minéraux et d’antioxydants, son goût est authentique. Facile à cuisiner puisqu’aucun autre ingrédient à part le riz et l’eau ne sont nécessaires. Voici comment procéder: préparez 1 mesure de riz et 4 mesures d’eau. Lavez le riz avant de le mettre dans une casserole. Ajoutez l’eau. La cuisson dure environ une trentaine de minutes à feu doux. Une fois que le riz est bien mou, retirez du feu. Le Vary sosoa s’accompagne généralement de Kitoza, viande tranchée en lanière séchée et/ou fumée, de poisson frit, de boulettes de viande ou encore d’omelette. En fait, une multitude de choix s’offre à vous pour faire plaisir à vos papilles. Toutefois, il faut noter que l’accompagnement doit être sec à cause de la consistance onctueuse du Vary sosoa. It is very easy to prepare the basis of this dish as the only ingredients are rice and water. Here is the recipe: Prepare 1 measure of rice for 4 measures of water. Wash the rice before tipping it into the pan. Add the water, bring to the boil and cook for about 30 minutes on a low flame. Once the rice has become soft, take the pan off the heat. Vary sosoa is generally served with kitoza, dried and/ or smoked meat cut into thin slices, with meatballs or slices of omelette.
