This special,pretty cake requires a fewsteps but trust me... it's worthit! =) [RF]80 ml graham cracker crumbs30 ml white sugar30 ml margarine, melted1 (8 ounce) package cream cheese softened60 ml white sugar8 ml lemon juice2.5 ml grated lemon zest2.5 ml vanilla extract1 egg>> GET COOKING!1. Preheat oven to 325 degrees F (165 degrees C). Grease a 6 cup muffin pan.2. In a medium bowl, mix together the graham cracker crumbs, sugar and margarinewith a fork until combined.3. Measure a rounded 15 ml spoon of the mixture into the bottom of each muffincup, pressing firmly.4. Bake for 5 minutes, then remove to cool. Keep the oven on.5. Beat together the cream cheese, sugar, lemon juice, lemon zest and vanilla untilfluffy. Mix in the egg.6. Pour the cream cheese mixture into the muffin cups, filling each until ¾ full.Bake for 25 minutes. Cool completely in pan before removing. Refrigerate untilready to serve.7. Serve with any desire fruit/sauce.
