Bavarese<br />
alla vaniglia e arancia<br />
con cuore al cioccolato<br />
Bavarese vaniglia arancia: 700 g. latte; 300 g succo<br />
d’arancia; 450 g zucchero;15 tuorli; 2 bacche vaniglia<br />
Th<strong>ai</strong>ti; 15 fogli colla <strong>di</strong> pesce.<br />
Far bollire il latte e le bacche aperte, aggiungere il succo<br />
e i tuorli emulsionati con lo zucchero, portare il <strong>tutto</strong> a 85°, togliere dal<br />
fuoco, aggiungere la colla <strong>di</strong> pesce, mescolare e far raffreddare a 27°.<br />
Aggiungere 2500 g <strong>di</strong> panna semimontata.<br />
Inserimento al cioccolato: 600 g pate a bombe; 800 g cioccolato extra<br />
bitter; 1500 g panna montata.<br />
Mescolare la pate a bombe con il cioccolato e, quin<strong>di</strong>, amalgamare la<br />
panna.<br />
Sushi Dolci ‘San Sebastian’<br />
Sciroppo per sushi dolci: bollire insieme 500 g <strong>di</strong> acqua, 250 g <strong>di</strong><br />
zucchero, 20 zeste <strong>di</strong> limone e arancio, 1 bacca <strong>di</strong> vaniglia.<br />
<strong>Un</strong>ire a freddo 50 g <strong>di</strong> aceto balsamico <strong>di</strong> Modena. Far raffreddare in<br />
abbattitore.<br />
Riso per sushi: lavare bene il riso in acqua fredda. Cucinare insieme<br />
1000 g <strong>di</strong> riso e 1000 g <strong>di</strong> acqua. La cottura va fatta per i primi 10<br />
minuti con il fuoco al massimo. <strong>Un</strong>a volta raggiunto il bollore, cuocere<br />
per altri 10 minuti a fuoco più basso e altri 10 minuti a fuoco leggero<br />
(per un totale <strong>di</strong> 30 minuti), alzare la fiamma solo negli ultimi secon<strong>di</strong>.<br />
Lasciare riposare nella pentola per alcuni minuti senza coperchio.<br />
Versare in un recipiente molto capiente e far raffreddare facendo aria<br />
con un ventaglio. <strong>Un</strong>ire lo sciroppo con il sale e l’aceto già <strong>di</strong>luiti. Per<br />
1 kg <strong>di</strong> riso, unire 150 g <strong>di</strong> sciroppo circa.<br />
Ripieno al cioccolato per sushi ‘San Sebastian’: unire insieme<br />
600 g <strong>di</strong> copertura gianduia, 700 g copertura Favorite arancio, 50 g<br />
burro <strong>di</strong> cacao.<br />
Bollire, miscelare e unire 40 g <strong>di</strong> glucosio, 70 g <strong>di</strong> panna 35%, 100 g<br />
pasta <strong>di</strong> nocciole, 35 g Cointreau. Far cremare la ganache sul marmo.<br />
Formare con la poche dei cilindri utilizzando la bocchetta n.10. Far<br />
indurire per alcune ore a 15°C. Inserire i cilindri all’interno del riso<br />
per sushi.<br />
Ingre<strong>di</strong>enti aggiuntivi:<br />
50 g <strong>di</strong> alghe yakinori<br />
Procedura: stendere il<br />
riso per 4/5 sul foglio <strong>di</strong><br />
alga yakinori appoggiato<br />
allo stuoio <strong>di</strong> bambù.<br />
Mettere al centro la<br />
ganache preparata in<br />
precedenza e chiudere il<br />
rollino. Lasciar riposare<br />
un po’ e tagliare alla<br />
misura desiderata.<br />
Vanilla and Orange Bavarian<br />
cream with chocolate centre<br />
Orange vanilla Bavarian cream: 700 gr. milk; 300 gr.<br />
orange juice; 450 gr. sugar; 15 egg yolks; 2 Tahiti vanilla<br />
beans; 15 gelatine sheets.<br />
Boil the milk and split beans, add the orange juice and<br />
egg yolks blended with the sugar, heat to 85°, remove<br />
from the heat, add the gelatine, mix and cool at 27°. Add<br />
2500 gr. of semi-whipped cream.<br />
Chocolate centre: 600 gr. pate a bombe; 800 gr. extra<br />
bitter chocolate; 1500 gr. whipped cream. Mix the pate a<br />
bombe with the chocolate and fold in the cream.<br />
‘San Sebastian’ dessert Sushi<br />
Syrup for the dessert sushi: boil 500 ml water together<br />
with 250 g sugar, 20 slivers of lemon and orange zest and<br />
one vanilla pod.<br />
When cooled, add 50 ml g balsamic vinegar from Modena.<br />
Cool in the blast chiller.<br />
Sushi rice: rinse the rice thoroughly with cold water.<br />
Cook 1 Kg rice in 1 litre water. Cook on the highest heat<br />
for the first 10 minutes, once at the boil cook on a lower<br />
heat for 10 minutes, then on the lowest heat for the last<br />
10 minutes (30 minutes in total), turning up the heat<br />
ag<strong>ai</strong>n for just the last few seconds. Leave the rice to rest<br />
in an uncovered pot for a few minutes. Tip into a very<br />
large bowl and fan with <strong>ai</strong>r to cool. Add the syrup with<br />
the previously <strong>di</strong>ssolved salt and vinegar. Use about 150<br />
g syrup per Kg of rice.<br />
Chocolate filling for ‘San Sebastian’ sushi<br />
Mix 600 g Gianduia hazelnut and chocolate couverture<br />
with 700 g Favorite orange icing and 50 g cocoa butter.<br />
Bring to the boil and add 40 g glucose, 70 g 35% fat<br />
cream, 100 g hazelnut paste and 35 ml Cointreau. Lay<br />
the ganache on a marble slab to thicken. Use the piping<br />
bag with a number 10 nozzle to form cylinders. Harden<br />
for a few hours at 15°C.<br />
These cylinders will later be<br />
rolled in the sushi rice.<br />
Ad<strong>di</strong>tional ingre<strong>di</strong>ents:<br />
50 g yakinori seaweed.<br />
Procedure: lay 4/5 of the<br />
rice onto a sheet of yakinori<br />
seaweed l<strong>ai</strong>d out on a bamboo<br />
rolling mat. Place the<br />
ganache made previously in<br />
the centre of the sheet and<br />
close the roll. Set aside to<br />
rest for a while then cut to<br />
the desired size.
