Dolce alla vaniglia<br />
e mandarino<br />
Ingre<strong>di</strong>enti per 20 monoporzioni:<br />
Composizione: Mousse al mandarino; crema leggera alla vaniglia;<br />
gelatina al mandarino.<br />
Mousse al mandarino: g 500 succo <strong>di</strong> mandarino; g 500 panna; g<br />
200 meringa italiana; g 12 gelatina.<br />
Crema leggera alla vaniglia: g 150 base semifreddo; g 400<br />
mascarpone; g 600 panna; g 8 gelatina; n 3 bacelli <strong>di</strong> vaniglia;<br />
Gelatina al mandarino: g 500 succo <strong>di</strong> mandarino; g 200 zucchero;<br />
g 100 zucchero; g 8 pectina; g 80 glucosio; g 10 succo <strong>di</strong> limone.<br />
Preparazione: per la crema leggera alla vaniglia, montare la base<br />
semifreddo e la vaniglia ed incorporare il mascarpone con la panna,<br />
aggiungere la gelatina precedentemente idratata.<br />
Per la mousse al mandarino, montare la panna e aggiungere<br />
la meringa miscelata con il succo <strong>di</strong> mandarino aggiungendo la<br />
gelatina.<br />
Per la gelatina, portare a bollore il succo con una parte <strong>di</strong> zucchero<br />
ad 80°C, aggiungere lo zucchero restante miscelato con la pectina,<br />
aggiungere poi il glucosio e ultimare la cottura facendo bollire per<br />
qualche minuto aggiungere infine il limone.<br />
Montaggio del dolce: fare uno strato <strong>di</strong> crema leggera alla<br />
vaniglia, freddare e stratificare con un leggero strato <strong>di</strong> gelatina<br />
al mandarino, aggiungere la mousse al mandarino e gelatinare<br />
decorare con ricci <strong>di</strong> cioccolato e spicchi <strong>di</strong> mandarino.<br />
Vanilla and mandarin orange dessert<br />
Ingre<strong>di</strong>ents for 20 in<strong>di</strong>vidual portions:<br />
Composition: Mandarin orange mousse, fluffy vanilla cream and mandarin<br />
orange jelly.<br />
Mandarin orange mousse: 500 ml mandarin orange juice; 500 g cream; 200 g<br />
Italian meringue; 12 gelatine. Fluffy vanilla cream: 150 g parf<strong>ai</strong>t base; 400 g<br />
mascarpone; 600 g cream; 8 gelatine; 3 vanilla pods. Mandarin orange jelly:<br />
500 ml mandarin orange juice; 200 g sugar; 100 g sugar; 8 g pectin; 80 g glucose;<br />
10 ml lemon juice.<br />
Preparation: to make the fluffy vanilla cream, whip the parf<strong>ai</strong>t base with the<br />
vanilla, fol<strong>di</strong>ng in the mascarpone and the cream, then add the gelatine, softened<br />
previously in water. For the mandarin orange mousse, whip the cream, add the<br />
meringue mixed together with mandarin orange juice then add the gelatine.<br />
For the jelly, heat the juice with some of the sugar to 80°C. Add the rem<strong>ai</strong>ning<br />
sugar, mixed with the pectin, then add the glucose. Finish off by bringing to the<br />
boil for a few minutes then add the lemon.<br />
Assembly: pour a layer of fluffy vanilla cream, chill and cover with a very thin<br />
layer of mandarin orange jelly. Add the mandarin mousse then top ag<strong>ai</strong>n with<br />
more jelly and garnish with chocolate curls and mandarin orange segments.<br />
