Some practical suggestions regarding the cooking of pasta: • stick to the cooking time suggested on the packaging; • fill with plenty of water a deep pot – 5 litres of water every 500 grams of pasta, and bring it to the boil; • when the first bubbles appear, add a handful of sea-salt, and wait till the water is completely boiling; • add the pasta in the pan, taking into account that the water will cool slightly; • as soon as the water begins boiling again, make the cooking time suggested by the manufacturer start; • one or two minutes before the suggested time is over, test to see how it is cooked (breaking a piece of pasta you should see a thin white line in the middle, it will complete its cooking in the half a minute left) if necessary add salt bearing in mind that some sauces are already salty; • if cooking time is over pour a couple of glasses of cold water in the pan; • strain the pasta, which is then ready for the sauce. The exceptions to this manner of cooking are represented only by those recipes where pasta needs to be cooked in its sauce - usually in a frying pan - for up to three minutes at most. In these cases: • reduce the cooking time by 1 or 2 minutes from that suggested by the manufacturer; • keep some of the cooking water near the frying pan to add in small doses so that the pasta does not get too dry during this last cooking process. These few suggestions, are a solid base which will help you not to betray the mystery of pasta and will enable you to experiment with variations in ingredients, combinations of sauces and the infinite shapes pasta can have.
