Winter19UCE

It's (always) time to be merry!
It's always with particular anticipation that we plan our London Winter Festival
each year. On the one hand, it opens the festive season and the gate to all things
merry, on the other hand it serves as the perfect wrap-up to another intense year
of hard work, bringing you the best events and wine reviews.
Above all it is a key moment to celebrate, surrounded by all our exhibitors and
guests.
This year we are particularly proud of hosting one of the most diverse line-ups we
have ever had, as well as having an extremely special schedule of masterclasses
and pop-up presentations. All the sessions are unique and offer unmissable
opportunities to learn directly from some of the industry's experts (if not legends!).
And don't miss the chance to ask for advice directly from producers and retailers,
and to stock up for the Christmas Season taking advantage of some very special
offers.
We hope you enjoy the event and that this is but the first of a series of great
moments, over the coming weeks, sharing the best food & wine with family and
friends.
A special thank you to
All the best
Paxton & Whitfield
paxtonandwhitfield.co.uk | @paxtonscheese
Paxton & Whitfield was first recorded as a partnership in 1797, but its origins began in 1742
when Stephen Cullum set up a cheese stall in Aldwych market. The Company's reputation
grew steadily, culminating in 1850 with the honour of being appointed cheesemonger to HM
Queen Victoria. It was the first of many Royal Warrants that the Company has held.
After World War II and a series of different owners, business improved as Paxtons rekindled
their contacts with the traditional cheesemakers of rural Britain and started bringing in the
best that Europe could offer. Customers who value quality know they will always be able to
find it at Paxtons. As Winston Churchill once observed "a gentleman only buys his cheese at
Paxton & Whitfield". In Paxton's third century of trading we hope you will allow us to help you
enjoy the fascinating and diverse world of cheese too.
The wine producing region of Occitanie is enormous. It is in fact the largest in France in
terms of size (263,000 ha) and a production accounting for over a third of the overall French
production and 5% of global wine production.
The Occitanie region combines the wine regions of the Languedoc and Roussillon with part of
the vineyards of the South West and a small section of the vineyards of the south-west Rhône
valley. The combined vinous wealth of these three vineyards equates to an incredibly diverse
range of wines and styles. It is renowned as the most innovative wine region in France, and
increasingly as a producer of world class top quality wines.
A total of 56 grape varieties have been approved for making wine in Occitanie combining
both well-known international varieties and more obscure, local varieties.
Ice Wine Is the best thing the world doesn't know about because Canada has kept their very
low yields to themselves. Until now.
REBEL Pi Ice Wine was launched In Britain in 2018 - the first British company to ever own and
exclusively Import this luxury product from the Okanagan Valley In British Columbia. With
notes of pink grapefruit and honey, REBEL Pi has a unique freshness that makes It as equally
good to pair with sashimi of scallop as the traditional sweet dessert or blue cheese.
The use of Roussanne ensures that the intense flavours are tasted rather than becoming too
cloying on the palate.
Considering that one Ice Wine grape produces just one drop of liquid compared to a table
wine grape which produces 10 drops, it is a rare treat to taste a global delicacy handcrafted
from the cold vast expanse that is Canada and bring something special to your next dinner
party or special occasion.
• 1. REBEL Pi, Ice Wine, 2016, Okanagan Valley, Canada
100% Roussanne. 11% ABV. Lots of peach, apricot, apple and honey notes on the nose which lead into sweet
vanilla on the palate. Roussanne’s naturally crisp acidity comes shining through, balancing the sweetness of
the fruit and delivering a fresh finish.
Don Maximiano Errazuriz founded Errazuriz in 1870. Today, the tradition of quality lives on
with his descendant Eduardo Chadwick who shares his maxim: “From the best land, the best
wine”. The Errazuriz Estate planted its first vineyards at Panquehue in the Aconcagua Valley
– 100km north of the capital. Recognising that this valley, with its cool, rainy winters, hot, dry
summers and moist Pacific Ocean breezes, was ideal for growing grapes, Don Maximiano sent
for the finest clones from France and with tenacity and perseverance transformed this barren
land into a world class vineyard.
• 1. Errazuriz, Estate Series Pinot Grigio, 2018, Aconcagua Valley, Chile
•
3. CVNE, CVNE Barrel Fermented Blanco, 2018, D.O.Ca. RIOJA, Spain
100% Albariño. 12% ABV. Mango, pineapple and lychees on the nose together with wild flowers and notes of
• 1. Devaux, Augusta Brut Champagne, NV, Champagne, France
Chardonnay, Pinot Noir, Pinot Meurnier. 12% ABV. From the same house as our perennial favourite Oeil de
Perdrix, Augusta is complex with flavours of brioche, yellow plum and apricot. It really is a lot of Champagne
for the money! [£20.99]
• 2. Terredora, Falanghina, 2018, Campania, Italy
100% Falanghina. 13.5% ABV. One of Italy's great unsung white wines. 3 months' lees ageing before bottling
imbues the wine with added depth and texture, but no oak is used, so the wine retains a light and fruit-driven
character. A brilliant all-rounder, with plenty of citrussy fruit and faint notes of apple and quince, with the
merest hint of nutty complexity. The balance of crispness and texture means this accompanies a huge range
of foods, from roasted vegetables to fish and poultry. [£11.99]
• 3. Domaine de Villargeau, Côteaux du Giennois, 2017, Loire, France
100% Sauvignon Blanc. 13.5% ABV. The small appellation of Côteaux de Giennois has only 91 hectares
planted with Sauvignon vines, and as it lives in the shadow of its neighbour, the renowned Pouilly-Fumé, its
wines often slip under the radar and are hence excellent value. The classic gooseberry fruit on the nose is
intense yet restrained, and leads into a palate bursting with flavours of lime and nettle, delivered with a clean
and crisp feel. Enjoy with all fish, seafood and white meat dishes. [£10.99]
• 4. Viñalba, Selección Torrontés - Lujan de Cuyo, 2018, Lujan du Cuyo, Argentina
100% Torrontés. 13% ABV. The aromatic Torrontes grape is a distant relation of Muscat, and has become
Argentina's signature white variety, as it produces bright and perfumed white wines in the sunny yet cool
high-altitude vineyards of Argentina. Bursting with ripeness, the nose is a cascade of tropical fruit and
blossom aromas. Lively flavours of white peach, melon, pear and pineapple provide a refreshing and involving
palate sensation. Best served with mild Thai curries or dressed prawn salads. [£9.99]
• 5. Christophe Cordier, Mâcon-Fuissé Vieilles Vignes, 2016, Burgundy, France
100% Chardonnay. 13.5% ABV. Taken from vineyards in Mâcon-Vergisson, La Roche or Saint-Sera (from
declassified Pouilly-Fuissé fruit), this wine is a great-value alternative to some of the more expensive Cordier
wines, made from the 'Christophe Cordier' negociant arm. A medley of ripe apple and zesty lemon fruit
characters creates great depth and intensity, with some body coming from careful use of oak. Slight mineral in
the form of slate is detectable on the palate. Excellent as an apéritif or with any kind of salad or white meat,
this wine is best enjoyed over the next couple of years. [£14.99]
• 6. Edna Valley, Pinot Noir, 2017, California, USA
100% Pinot Noir. 14% ABV. Edna Valley is one of the few valleys in California to enjoy an east-west orientation.
This allows Pacific mists to drift inland and cover the whole length of the valley, cooling the vineyards, thereby
creating a longer ripening season ideal for temperamental Pinot Noir. Aromatically complex, offering subtle
notes of rose petal, cola and earth against a backdrop of bright cherry fruit. Fine yet ample tannins provide a
mouth-filling texture and plenty of length. Try with Peking duck. [£13.99]
Tempranillo, Mazuelo. 13.5% ABV. The Definition range captures the quintessential qualities of the world's
flavours. From some of the best vines in Rioja, this Reserva's jam-packed with plenty of those. [£11.99]
• 8. Jaboulet, Syrah, 2017, Rhône, France
100% Syrah. 13% ABV. 100% Syrah from vineyards in the Rhône Valley and the Languedoc. Sourcing the
grapes from across a range of terroirs allows Jaboulet to create a well-balanced wine with consistent quality. It
is matured without oak to maintain a supple and fruit-driven style. Medium-bodied with a fresh, juicy feel, this
wine offers the classic Syrah characters of blackcurrant and liquorice, with subtle aromas of wild shrubs and
pepper. Perfect accompaniment for herb-rubbed lamb chops, preferably char grilled. [£8.99]
• 9. Chronic Cellars, Purple Paradise, 2017, Paso Robles, California, USA
100% Syrah. 13% ABV. Josh Beckett was born in Paso Robles and worked in wineries all through High School.
After completing school he worked under American, French and Australian winemakers before returning
to Paso Robles and founding Chronic Cellars with his brother Jake. Purple Paradise has a rich dark colour
intense smoky, vanilla, cherry, chocolate and spice flavours. The tannins are soft and the acidity balanced in
this delicious wine. Enjoy with richly flavoured meat dishes from burgers and steaks to beef and game stews.
[£12.99]
• 10. Marisco, The Ned Noble Sauvignon Blanc, 2015, Marlborough, New Zealand
100% Sauvignon Blanc. 11.5% ABV. Botrytised grapes have been specially selected from amongst the vines
of the Waihopai River vineyard to make this wine. The fermentation process takes a lengthy 6 months and
extracts huge flavours from the shrivelled berries. Intensely sweet, yet balanced with a mixture of crisp
citrus and fresh melon flavours, and as such, never cloys. Lingers long on the palate. An amazing match for
gorgonzola or rich pâtés. [£11.99]
Should cider be considered any differently than wine?
Cider Is Wine is a not-for-profit producers alliance promoting ciders & perries made from
100% juice – not from concentrate.
When you buy a bottle of wine you expect it to come from 100% grape juice, because that
is EU law. Yet UK law allows a drink to be called cider if it’s made from as little as 35% apple
juice, all of which can come from concentrate.
Taste a different and lower alcohol experience – enter the world of ciders as you have never
experienced them before.Ciders and perries produced from 100% apple & pear juice, from
passionate producers. Lots of varieties and styles to taste and experience.
• 9. Cantine de Falco, 'Salore' Salice Salentino, 2016, Salice Salentino, Puglia, Italy
100% Negroamaro. 14% ABV. Carefully fermented at low temperatures in steel tanks, to avoid too much
extraction, this perky juice then spends 6 months in oldish barrels which really helps smooth this out and gives
the super sleek feel and racy drive that stands this apart from almost all other Salice Salentinos we have tried.
It is darker and deeper than the 'regular' Negroamaro - but is just as well balanced and has the cantina's
signature brightness and red fruited lift. A decadent but not too showy red - think deep flavours and grilled
food - bring on the summer! [£13.50]
Penfolds is Australia’s oldest iconic brand with a history and heritage that profoundly reflects
Australia’s journey from colonial settlement to the modern era. Established in 1844, just
fine wine, soon becoming an icon lauded the world over. Since then a series of standout
wines, both white and red, have been released under the Penfolds masthead, ensuring a
reputation for making wines of provenance and cellaring potential.
• 3. Penfolds, Max's Chardonnay, 2018, Adelaide Hills, Australia
100% Chardonnay. 13% ABV. Max’s Chardonnay continues the evolution of the Penfolds white wine program,
drawing inspiration from the legacy and spirit of the many wine trials of Max Schubert, a Penfolds winemaking
legend. Flavours of citrus, white nectarine and lemon curd preside over complexing characters of almond
meal and deft oak. [£19.00]
• 4. Penfolds, Max's Shiraz, 2017, South Australia
100% Shiraz. 14.5% ABV. Max’s constant pursuit of excellence paved the way for those who followed in his
Cabernet Sauvignon, Shiraz. 14.5% ABV. Bin 389 was often referred to as ‘Baby Grange’, in part because
components of the wine are matured in the same barrels that held the previous vintage of Grange. First made
in 1960 by the legendary Max Schubert, this was the wine that helped forge Penfolds reputation with red
wine drinkers by combining the structure of Cabernet Sauvignon with the richness of Shiraz. Exemplifying the
judicious balance of fruit and oak, Bin 389 highlights the generous mid-palate Penfolds in known for. [£61]
Coonawarra and Magill Estate, Australia
100% Shiraz. 14.5% ABV. St Henri is a time-honoured and alternative expression of Shiraz, and an intriguing
counterpoint to Grange. It is unusual among high quality Australian red wines as it does not rely on any new
oak. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters as it ages. It is matured
in old, 1,460 litre vats that allow the wine to develop, imparting minimal, if any oak character. [£95]
Bride Valley
bridevalleyvineyard.com | Twit: @bridevalleywine | insta: @bridevalleyvineyard
Steven Spurrier and his wife Arabella are behind Bride Valley, located in West Dorset. Steven,
while running Les Caves de la Madeleine and L’Académie du Vin in Paris in the 1980s, had
soil (chalky) samples from Arabella’s 80 hectare estate tested and the results came back:
“very similar to Champagne”. This is not surprising, because the village of Kimmeridge is
just 38 kilometres as the crow flies from Bride Valley. After two decades and three visits from
Boisset’s sparkling wine expert, Georges Legrand, vines were planted on the best sites in the
bowl of the amphitheatre-like estate. Three hectares were planted in 2009, rising to a total of
10 hectares in 2013 when planting was completed.
Specific clones were selected on the advice of Pierre-Marie Guillaume, the owner of France’s
top nursery in Charcenne (east of Dijon). After intense analysis, seven Chardonnay clones
(55% of the plantings), four Pinot Noir clones (25%) and two Meunier clones (20%) were
selected. The vines are planted on south and south-west facing slopes. In addition, 1,000
elder trees were also planted to act as a natural windbreak to the breezes coming from the
Jurassic Coast, four miles to the south. Bride Valley has been sustainably farmed for centuries
and although the grapes are not certified organic, the vineyard continues to follow organic
principles.
