Culinary hooligans in a<br />

freshly redecorated space<br />

The well-known 3 Chefs Restaurant in Riga’s<br />

Old Town recently celebrated its fifth birthday<br />

by giving itself a makeover.<br />

“This has been an active and<br />

rewarding time for all of us,<br />

and the time had come for a<br />

well-deserved freshening-up,”<br />

laughs Ēriks Dreibants, one of<br />

the restaurant’s three resident<br />

chefs. “We retained our style<br />

but just changed the tone a bit,<br />

making it a bit more grown-up.<br />

Not too much, though!”<br />

Not too much indeed, as the<br />

chefs’ fresh thinking and friendly<br />

culinary hooliganism remains<br />

alive and well.<br />

“We opened the restaurant<br />

when the economic crisis had<br />

hit Europe. That might not seem<br />

like the best time to start a new<br />

business enterprise, but the<br />

rent was relatively cheap, and<br />

so were construction costs. Very<br />

fitting for chefs with grand ideas<br />

and shallow pockets!”<br />

All three chefs had worked<br />

at restaurants owned by<br />

others, serving guests of high<br />

standing while hidden away in<br />

invisible kitchens.<br />

“This truly is a chefs’<br />

restaurant,” Dreibants<br />

emphasises. “The kitchen is not<br />

concealed. It is our altar and<br />

takes up even more space than<br />

the tables for our guests!”<br />

This is not to say that customers<br />

are not important – they are!<br />

What’s more, they get the<br />

chance to meet their chefs and<br />

see their meals being made. The<br />

restaurant even offers Cooking<br />

Together events on the bright<br />

and spacious second floor,<br />

where from 5 to 80 people can<br />

come together and cook with<br />

the celebrated chefs and have<br />

lots of fun.<br />

The atmosphere in the<br />

restaurant is quite informal.<br />

“This is definitely not a white<br />

tablecloth establishment,” says<br />

Dreibants. “Guests from both<br />

the creative professions and<br />

from business backgrounds<br />

embrace this vibe, because<br />

everyone needs to let<br />

go sometimes!”<br />

And how could you not, when<br />

your starter or tapa is served<br />

on your table in a creative and<br />

artsy manner. It comes on a silky<br />

sheet of paper and is made in<br />

the likeness of a painting from<br />

various sauces and pastes that<br />

complement the fresh bread.<br />

“We love to play with<br />

various elements, such as<br />

liquid nitrogen for cold dishes.<br />

We use a bit of fire in our hot<br />

dishes, which is really fun<br />

for the guests,” Dreibants<br />

continues. “There are all kinds<br />

of smells and sensations in the<br />

establishment. We, the chefs,<br />

represent the element of air, as<br />

there is wind is our movements.<br />

We are quick and accessible for<br />

our guests at all times!”<br />

While it might seem that<br />

nothing can surprise one in<br />

the dining world anymore,<br />

Dreibants and his colleagues<br />

will show their hooligan side<br />

when least expected. Although<br />

the restaurant primarily serves<br />

classical European cuisine,<br />

the dishes will always have an<br />

unexpected creative element<br />

in them.<br />

For the past two years, the<br />

young and renowned Artūrs<br />

Trinkuns has been working at<br />

the 3 Chefs Restaurant, fulfilling<br />

the duties of the main hooligan<br />

on site. He will be preparing<br />

the majority of this month’s<br />

seasonal and largely organic<br />

dishes, be it for business<br />

lunches on workdays (between<br />

12 noon and 4 PM) or delicious<br />

brunches on Sundays (between<br />

12 noon 4 PM). Come and<br />

dine with these true culinary<br />

enthusiasts – their creativity and<br />
