Foreword<br />
Home is a delicious place - and weaving that home-<strong>cook</strong>ed magic<br />
is our mother Chai Fong, also fondly called Ah Hong. Our mother is not<br />
only acclaimed as a great <strong>cook</strong> by her family but also by everyone who<br />
has had the good fortune of tasting her <strong>cook</strong>ing. To us, her children,<br />
she is also what we call a “superwoman”. Her endless supply of energy,<br />
great initiative and amazing creativity are all reflected in her <strong>cook</strong>ing.<br />
With very little or no help and with seeming ease, she can whip up<br />
an amazing array of dishes from scratch. No matter how tedious the<br />
preparation or how limited the budget, we have always had delicious,<br />
varied and well-prepared food.<br />

Prayers to the Jade Emperor (Th’i Kong)<br />
Playing chiki is a favourite pastime “chiki”<br />
We grew up celebrating many special occasions from birthdays of deities, death anniversaries of various<br />
ancestors to the many Chinese festivals. Each and every one was remembered and celebrated with a delicious<br />
abundance of food; some <strong>cook</strong>ed only for those occasions. Family members and relatives would gather, usually at<br />
our grandaunt’s house in Kota Sarang Semut. With the gathering of so many people, these celebrations were often<br />
noisy affairs requiring many turns at the round dining table. At meal times, the house would ring with the choruses<br />
from the younger ones asking the various ah kors, ah ees, ah koos, kor-pos and so forth permission to eat. The<br />
womenfolk would hang around the table ensuring each plate of food is replenished as fast as they are polished<br />
off. Celebrating these occasions was more than a religious duty or a mere carrying out of cultural beliefs; it gets<br />
families together while traditions are passed on and family ties warmed. Regretfully, our generation no longer<br />
takes the trouble to carry on a big part of these traditions that we grew up with. Many of us cannot follow the<br />
Chinese calendar and distances and changes in lifestyles and attitudes mean very few make it home to celebrate<br />
every festival. The new additions to our family are losing out on experiencing these traditional family occasions<br />
which were also very fun times for us when we were kids. Family gatherings have shrunk in numbers and relatives<br />
have become strangers. Specific ways of addressing a relative are now replaced with the generic terms of auntie<br />
and uncle. Sadly, the old ways are fast losing ground to the new.<br />
The food, however, is thankfully still here<br />
in our family to provide a link to those times.<br />
They never fail to comfort and add cheer to<br />
our family reunions and gatherings. Whether<br />
the food was originally prepared for the divine<br />
or mere mortals, they now end up happily in<br />
our tummies on demand. Nowadays, we need<br />
not wait for a prayer day to our ancestors<br />
to enjoy tripe soup, or the chang festival to<br />
enjoy bak chang. Upon request to our mother,<br />

The idea behind compiling these recipes is our hope that these foods will not be lost to the future generations<br />
of our family. While we acknowledge that we are guilty of not passing on many of the family’s traditions, we hope<br />
that by preserving these recipes, we have at least maintained one link to our family’s old way of life. We hope too<br />
that one day someone in the family can wield the same culinary magic that our mother does and that the food we<br />
enjoy today will still be eaten with relish many decades from now.<br />
Though the recipes are not originally our mother’s nor the food unique<br />
to our family, through the years, they have been tweaked to suit our<br />
family’s taste-buds and have thus become her recipes. This is not meant to<br />
be a professional <strong>cook</strong>book; it is more a record of the food we enjoy. Many<br />
of the recipes have approximate measurements. As our mum (and indeed<br />
many of the older folks) like to say whenever we ask for specific quantities,<br />
“Aiyoh, agak-agaklah!” And we salute them; these “agak-agak” masters<br />
who rely only on their tongues and the recipes in their heads to turn out<br />
one fabulous dish after another - all perfectly <strong>cook</strong>ed from scratch.<br />
Finally, to us, this is so much more than a <strong>cook</strong>book. It is our<br />
mother’s legacy and the culinary heritage of our family - and by<br />
putting it all together for our mother, this book is our gift of love for<br />
her.<br />

CHAI FONG’S STORY<br />
Chai Fong was born on 14 December 1939. Her birth name was<br />
Chew Moy Hiang. She was the second last child and the fourth daughter<br />
in a Teochew family of 7 children. At that time, her father was a rubber<br />
tapper in Serdang, Kedah. Of the 7 children in that family, the second eldest<br />
daughter and our mother were given away for adoption. From what she<br />
remembers, she was around 3 years old at that time. She was adopted by a<br />
man called Boon Wah Sang (our Ah Kong) a bus driver who lived in the vicinity.<br />
He was at that time married to a lady who used to perform in the Chinese<br />
opera. He had by then also adopted a son named Boon Kim Chai. Our mother<br />
was given the name Boon Chai Fong. When she was about 8 years old her adopted mother who was then in<br />
her early forties passed away. Our Ah Kong later married a widow (our Ah Ma) who already had 2 daughters.<br />
They later had another 4 children; 2 boys and 2 girls. Throughout her years of growing up in Serdang, she<br />
was allowed to visit her birth family. Some of her earliest memory was that of being comforted by her eldest<br />
sister who would sometimes <strong>cook</strong> her kueh teow soup with shrimps caught from a nearby stream.<br />
When she was around 13, our Ah Kong sent her to live with his<br />
sister Oon Swee Im (our Kor-po) in Kota Sarang Semut. It was during that<br />
period of her life that she lost contact with her birth family. Our Kor-po was<br />
then married to a widowed rice-mill owner who had 9 children – 4 sons<br />
and 5 daughters. It was there that our mother was trained in all aspects<br />
of household chores besides having all the Chinese customs and traditions<br />
drilled into her. It was also there that she picked up her <strong>cook</strong>ing skills.<br />

often times numbering up to 20 if not more. Daily chores were hard enough but on<br />
special occasions like religious feast days, weddings and the New Year, our mother<br />
recalls how back-breaking the work was. Coconut graters, “batu giling” and “cengku”<br />

waited to be plucked and dressed, spices to be ground and fires tended to. Our mother would often recollect<br />
with a grimace that at least 50 coconuts needed to be grated and the milk extracted by hand even in the<br />
days when machines could do the work. She recalled years of doing menial work before being allowed to<br />
actually hold the chien see (spatula) of a wok (i.e. being allowed to <strong>cook</strong>) or to be allowed to finally wrap a<br />
bak chang or hold a kueh kapit griddle. Under our Kor-po’s watchful eyes, every bak chang must have perfect<br />

sharp corners and every kuih kapit baked to a uniform golden colour. It was here in Kota Sarang Semut that we<br />
would spend the happiest days of our childhood in the company of our many aunties and uncles and cousins. It<br />
was not until we were adults that we would realize they were not our true blood relatives but in spite of that, our<br />
close relationship continues. For that and for the happy Kota Sarang Semut memories (many of which evolved<br />
around good food), we owe much to our Kor-po who sadly passed away in early 2000.<br />

In 1956 our Kor-po arranged for our mother to be married to our father, Lee Cheng Hock who at 30 years old<br />
was considered an old bachelor. They settled in Alor Setar and had us 5 children. He worked as a clerk in the Kuala<br />
Kedah Bus Transport Company till he retired. In the early 70’s, due to the efforts of our mother’s third birth sister<br />
(our Sa Ee), she was reunited with her birth family most of whom had by then moved to Kuala Perlis. That happy<br />
reunion soon included meeting up with her second sister who had been adopted by a family in Penang and with<br />
her eldest sister who had been a Vietnamese refugee relocated to the Netherlands. Our clan of relatives had grown<br />
larger – much to our delight.<br />

We can never recall a time when our mother has not been<br />
active. She has always been involved in one enterprise or another;<br />
from making and selling paper flowers to volunteering in charity<br />
organizations. Despite having almost no formal education, she has never<br />
let that stop her from learning. She very much taught herself to read<br />
Chinese and to our astonishment, she got her driver’s licence when<br />
she was in her forties. She also ventured into selling AMC pots, giving<br />
<strong>cook</strong>ing classes and has been called upon to judge a few local <strong>cook</strong>ing<br />
competitions. Among some of her voluntary work, she has served as<br />
the Chairman of the Tow Boo Keong Kiu Ong Tai Tay (Wanita) and is a<br />
member the Kedah Buddhist Association, Kedah Longevity Association<br />
and Persatuan Kah Yin Kedah/Perlis Bahagian Wanita.<br />

Our mother was the driving force behind our education, always making sure that we studied and did our<br />
homework. During exam time, we would get VIP treatment which meant no household chores and eating specially<br />
<strong>cook</strong>ed food that would supposedly boost not only our health but our intelligence as well for example food such as<br />
pig-brain omelets. Just before major exams, she would increase her prayer activities and come home from temples<br />
bearing our pens and pencils duly blessed, shirts stamped red with some protective prayer, an amulet to be worn<br />
to “steady our hearts “and yellow sheets of paper inked in red with some magical mantra which was burned and its<br />
ashes added with water which we dutifully drank. Till this day, she takes most of the credit for whatever success<br />
we had in our exams.<br />
Now going on eighty, she shows no signs of slowing down. She firmly believes<br />
that her active lifestyle and her many friends keep her young and in good shape. We<br />
all hope she will remain so for many, many more years to come; hopefully still able<br />
to wield the chien see and the ceng-ku!<br />
We love you and we are so proud to call you our mother (mother-in-law,<br />
grandmother, great grandmother)<br />

ACAR AWAK<br />
(Vegetable Acar)<br />
“Another popular nyonya dish usually prepared during weddings. The blanching then squeezing the vegetables dry is<br />
really a lot of work. We like to eat this with bread too. “<br />
• 10 shallots<br />
• 2 whole bulb garlic<br />
• 3 red chilli<br />
• 10 dried chilli<br />
• 1-2 thumb size turmeric<br />
• 4-5 buah keras (candlenut)<br />
• 1 thumbsize belacan<br />
• Roasted peanuts; remove skin the<br />
grind medium fine<br />
• Handful of roasted white sesame<br />
seeds; grind half coarsely, keep half<br />
whole<br />
• Tamarind; soak in water<br />
• Vinegar<br />
• Sugar and salt to taste<br />
• 3 cucumber; cut into fat rectangular<br />
pieces<br />
• 5 long beans; cut into short<br />
lengths<br />
• 1 carrot; cut into similar size as<br />
cucumber<br />
• ½ small cabbage, shred into big<br />
pieces<br />
1. Add some vinegar to water and bring to boil. Blanch all vegetables, cool<br />
and put in a piece of cloth to squeeze out water. Do not cut the vegetables<br />
too small as they will somewhat shrink after this process. Set aside.<br />
2. Ground the first 7 ingredients into a paste. In a generous amount of oil,<br />
stir fry all ground ingredients till aromatic. Put in tamarind liquid, a little<br />
vinegar, water, sugar and salt. Simmer and adjust taste. Make sure there is<br />
enough liquid for all vegetables and peanuts; bearing in mind the peanuts<br />
will thicken the sauce. Set aside to cool fully.<br />
3. When cool add in peanuts and ground sesame till the correct thickness<br />
is acquired. Then put in the vegetables and stir well.<br />
4. Finally sprinkle with the sesame seeds. This dish has a thick gravy.<br />
*Can be kept in refrigerator for quite awhile.<br />
*A very agak-agak recipe so adjust taste as you go along. Go slowly with<br />
the tamarind and vinegar when making the sauce. When <strong>cook</strong>ed perfectly, this<br />
dish has a harmonious blend of sour, sweet and salty with a little bite of<br />
chilli while the nuts impart a robust aroma and the vegetables give a crunchy<br />
texture.<br />

ACAR HU<br />
(Fish Acar)<br />
(This nyonya dish is usually prepared for weddings.)<br />
• 1 kg fish ( tenggiri, kembung or<br />
chia hoo); clean, rub with salt and<br />
deep fried<br />
• 2 whole bulbs of garlic; slice thinly<br />
• 2 whole ginger; cut into thin strips<br />
• (Dry both garlic and ginger in the<br />
sun for 4-5 hrs)<br />
• 10 thumb size old turmeric; remove<br />
skin and slice<br />
• 2 whole red chilli and 2 whole<br />
green chilli; slit each into 4 lengthwise,<br />
remove seeds<br />
• Rice vinegar, sugar, salt to taste<br />
• Handful of roasted white sesame<br />
seeds<br />
1. Put one cup oil in wok and fry turmeric till oil turns very dark yellow<br />
(use more turmeric if necessary). Remove the turmeric pieces. Put in water,<br />
vinegar, salt and sugar till there is enough liquid to cover all the fish. Adjust<br />
taste. Bring to a simmer, remove from heat and put in chills. Set aside to<br />
cool.<br />
2. In a deep dish put in the fish and sprinkle the dried garlic and ginger all<br />
over. Then pour in the turmeric/vinegar liquid making sure the fish is fully<br />
covered. Sprinkle sesame seeds on top. Keep for a few hours before eating.<br />
*Instead of drying the garlic and ginger, a short-cut way is to fry them in<br />
the turmeric oil over medium fire till brown. Then put in water and vinegar.<br />
*Turmeric nowadays does not impart much aroma or yellow colour – a<br />
teaspoon of turmeric powder (or more, as you like) can be added to the oil<br />
when you are frying the turmeric pieces.<br />

ASAM HEH<br />
(Tamarind Fried Prawns)<br />
“This is our mother’s version. Not many people make it this way.”<br />
• Big prawns, leave head and some<br />
shell on.<br />
• Thick tamarind water<br />
• Dark and light soyasauce<br />
• Sugar<br />
1. Fry prawns quickly in hot oil, sprinkling some salt in it. Remove prawns.<br />
2. Leave oil in wok and remove the rest. Reduce heat.<br />
3. Put in both thesoya sauces, tamarind water and sugar to make enough<br />
gravy to coat prawns. Adjust taste then increase fire. Put prawns back in<br />
and fry till aromatic, caramelised and well coated.<br />
4. It is a sweetish sourish dish.<br />
Nice eaten with sambalbelacan.<br />
*You can rub some tamarind softened in a bit of water on the prawns before<br />
frying.<br />
*if you are <strong>cook</strong>ing a lot of prawns, fry in batches; do not crowd the wok.<br />

ASAM PEDAS<br />
(FISH IN SPICY SOUR SOUP)<br />
“In our Hokkien dialect we call this soup ‘Asam Bedai’. The more we drink this soup, the more the chilli bites but<br />
yet the more delicious the taste. Everyone’s noses will start to run and we will sweat and go ‘sss, sss’ to cool our<br />
tongues. So yummy.”<br />
• 5 ikan kembung (more if using<br />
‘chia hu’ – ikan belanak) clean,<br />
leave heads intact<br />
• 10 dried chilli, deseed, soak in<br />
boiling hot water till soft<br />
• 10 shallots<br />
• 1 piece turmeric<br />
• Thumb size belacan<br />
• 4-5 stalks lemongrass, use white<br />
portion, slice coarsely<br />
• A small handful of un<strong>cook</strong>ed rice<br />
(optional)<br />
• A few stalks of daun kesum (laksa<br />
leaves)<br />
• Tamarind, soak in water<br />

Blend dried chili, shallots, turmeric, belacan, lemongrass and rice. Bring<br />
a pot of water (enough to make soup for 5 ikan kembung) to boil. Strain<br />
tamarind water into it, and put in asam keping and the blended spices. (Do<br />
not put in all the tamarind, reserve some to add in later if the soup is not<br />
sour enough). Bring to a boil. Season with salt and sugar and put in daun<br />
kesum. Taste and adjust seasoning. Bring to boil again and put in the fish.<br />
When the soup comes to a boil, lower fire to a gentle simmer and <strong>cook</strong> till<br />
the fish is just done. Serve piping hot. Garnish with mint leaves.<br />
*Amount of chili and tamarind is to taste.<br />
*Adding rice makes the soup thicker; a trick our mum learned from a Siamese<br />
monk.<br />
*Some people like to add sliced cucumber and/or pineapple to this soup.<br />
*The mint leaves actually adds a nice aroma to the soup.<br />
*Ikan belanak has very sweet flesh and the roe is really delicious if you can<br />
get it. If using ikan belanak, leave the scales on. Once it is <strong>cook</strong>ed, it can be<br />
easily removed before eating and my mum claims that the sweetness of the<br />
fish is retained if <strong>cook</strong>ed this way.<br />

BAK STEAK<br />
(PORK PATTIES AND POTATOES IN GRAVY)<br />
“We don’t really know the original name of this dish but we grew up eating this family favorite which we think originated<br />
from a recipe which Auntie Theresa, a Eurasian family friend, shared with our mum years ago.”<br />
• Minced pork about 300g<br />
• 2 potatoes, remove skin<br />
• 1 big onion, cut into thick rings<br />
• About 2 tbsp corn flour plus extra<br />
for thickening<br />
• 1 egg<br />
• Light soya sauce and pepper to<br />
taste<br />
1. In a bowl, mix minced pork with the corn flour, soya sauce, pepper and<br />
egg to get a sticky consistency.<br />
2. Slice potato into half then cut into thick slices.<br />
3. Heat enough oil in wok for frying. When oil is hot, put in potato slices<br />
and fry till light golden. Remove and drain on paper towel.<br />
4. Spoon scoops of pork mixture into oil, slightly flattening each one. Fry<br />
till both sides are brown. Remove from oil.<br />
5. Remove oil from wok leaving enough to stir fry onions. Put onions in and<br />
fry till soft and fragrant.<br />
6. Put in pork and potatoes and add enough water to make gravy. Allow to<br />
boil then lower to a simmer. Season with soya sauce (and salt if necessary)<br />
and white pepper then thicken with corn flour mixed in a little water.<br />
7. Simmer till the gravy is flavorful, turning mixture over gently a few<br />
times.<br />
Serve with rice.<br />
*It is possible to add Lea and Perrins sauce (or Maggi sauce) into the gravy<br />
for extra flavor; and peas, carrots and mushrooms if you like them but the<br />
above recipe is how our mum <strong>cook</strong>s it.<br />

BELANA<br />
(FRIED EGGS IN TAMARIND SAUCE)<br />
“Our mum has a good repertoire of quick-to-<strong>cook</strong> dishes that do not require expensive ingredients for our daily<br />
home food. This is another one that we often saw on our dining table.”<br />
• 4 fried eggs<br />
• 150 g pork belly (samchan bak),<br />
cut into pieces<br />
• A few wedges of big onions<br />
• 1 small tomato optional<br />
• 1-2 red or green chili, deseed and<br />
cut into lengths<br />
• Tamarind, sugar and soya sauce<br />
to taste<br />
• Corn flour mix in water for thickening<br />
1. Put some oil and stir fry the onions for awhile till soft.<br />
2. Put in pork and fry till color turns and then put in chills and tomatoes.<br />
3. Put in some water and then some tamarind liquid extracted from mixing<br />
tamarind pulp in water. Season with soya sauce and sugar. Simmer and<br />
taste.<br />
4. Thicken with cornstarch then put in eggs and simmer for another minute<br />
or two. If you like, you can garnish with spring onions.<br />

CENDUL<br />
“Always a hit with her guests. It looks like a lengthy preparation but mum always says it is easy to make. The<br />
“noodle” certainly has a better texture than any of the ready -made ones. To make this, you have to get a pot<br />
specially made with holes in it. Whenever it is available, she likes to add durian as an extra condiment.”<br />
• 100 g green pea flour (lek tau<br />
hoon)<br />
• 2tbsp corn flour<br />
• ½ tsp alkaline/lye water (air abu)<br />
• ½ tsp air kapur (lime paste) -<br />
optional<br />
• 1,100 ml pandan juice<br />
Syrup<br />
• 3 cylindrical blocks gula Melaka<br />
• 1 heaped tbsp soft brown sugar<br />
from Indian shop<br />
• 1 heaped tbsp Thai sugar (wet<br />
brown palm sugar)<br />
• Pandan leaves<br />
1. Keep a large bowl or small bucket filled with water ready. Fit the top<br />
with a pot with holes in it.<br />
2. Put the alkaline water and the air kapur into the pandan juice.<br />
3. Combine the flour in a pot. Pour the pandan juice gradually into the<br />
flour, mixing to combine.<br />
4. Put the pot on low heat stirring constantly till the mixture thickens and<br />
turns glossy, translucent and dark green.<br />
5. When the batter is ready, let it cool for a minute then put a small<br />
amount into the pot with holes and using the flat bottom of a metal mug,<br />
press the batter through the holes. Repeat till all the batter is used up.<br />
Using a strainer, scoop out the cendul “noodles”. Put into a large bowl.<br />
To prepare the syrup, put everything into a pot and heat till all dissolves.<br />
Strain into a bowl.<br />
To assemble the cendul, first put the required amount of syrup in a small<br />
bowl. Then put the cendul noodles and red beans. After that, gently ladle in<br />
the coconut milk. Add some crushed ice. Enjoy.<br />
Condiment<br />
• Coconut milk – heat 30 seconds in<br />
microwave<br />
• Cooked red beans (optional)<br />
*Buy kapur or lime paste from a Chinese grocery store. It comes in a wet<br />
form. The water that rises above it is the one that is used. It adds a gloss<br />
to the cendul ‘noodles’.<br />

CHANG – BAK CHANG<br />
(SAVOURY GLUTINOUS RICE DUMPLINGS WITH PORK)<br />
“Our mum practiced wrapping with sand when she was young before she tried her hand at this. In our family, the<br />
bak changs have knotted codes on the reed strings to indicate those with extra yolk, less filling more rice, more<br />
fatty meat, less meat etc. to meet the many preferences of each of us. This recipe, and the following ones, will be<br />
handy once you have mastered the art of wrapping a chang.”<br />
• 1 kg glutinous rice, wash and<br />
soak overnight then drain<br />
• 1 whole big bulb garlic, mince<br />
finely<br />
• Dissolve in about ½ mug water:<br />
• (amounts to taste)<br />
• 5 spice powder- just a little<br />
• White pepper<br />
• Dark soya sauce (depending on<br />
how dark you want the chang to be)<br />
• Light soya sauce<br />
• Salt to taste<br />
In oil, stir fry till garlic is aromatic<br />
but not brown. Put in the drained<br />
rice and mix well. Then pour in the<br />
liquid mixture and stir well till liquid<br />
is absorbed. Remove into a basin.<br />
Filling:<br />
1 kg pork belly, slice<br />
4-5 cloves garlic<br />
3 shallots<br />
Dark soya sauce<br />
Light soya sauce<br />
Sugar (optional)<br />
White pepper<br />
Salt to taste<br />
Pound garlic and shallots till fine. In oil, stir fry till aromatic. Put in pork and<br />
stir. Then add both the soya sauces and pepper. Sautee for awhile then add<br />
some water to <strong>cook</strong> till meat is soft and water has dried up. If necessary<br />
add salt.<br />
Black mushrooms: Boil till soft. Squeeze dry. Remove any hard stems<br />
and cut into chunks. Stir fry some minced garlic in oil till aromatic but not<br />
brown. Put in mushroom and stir fry for a bit; adding some salt, pepper and<br />
a bit of chicken stock (optional).<br />
Chestnuts (lat chee): Soak the chestnuts, then boil for awhile to remove<br />
the husk. Then boil again with a bit of sugar till soft. Remove.<br />
Dried Prawns: Wash and stir fry in some minced garlic and oil.<br />
Whole Salted Duck Egg Yolk: whole or halved<br />
*Before <strong>cook</strong>ing the chang in boiling water, remember to add some salt to the<br />
water.<br />

CHANG – KEE CHANG<br />
(ALKALINE/YELLOW GLUTINOUS RICE DUMPLINGS)<br />
“Chang is made to celebrate the Dragon Boat Festival on the 5th day of the 5th month in the Lunar calendar but we<br />
are lucky that mum will make kee chang for us to eat anytime we request it. Of the 3 kinds of chang, I would say<br />
this is our number one favourite mostly because of the delicious sauce that mum makes to go with it. However,<br />
making kee chang depends on the availability of fresh bamboo leaves as this chang uses those and not the dried ones<br />
sold in grocery shops.”<br />
• ½ kg glutinous rice; remove all<br />
the translucent rice<br />
• 1 tbsp alkaline water (air abu) for<br />
soaking rice<br />
• 3 tbsp +1/4 tsp alkaline water for<br />
mixing<br />
Gula Melaka Sauce:<br />
• 150 g good quality palm sugar<br />
(gula Melaka)<br />
• 20g dark brown sugar (our mum<br />
says buy from the Indian shop)<br />
• 2 leaves pandan, knotted<br />
• 100 ml thick coconut milk.<br />
Wash and soak rice with enough water to cover plus a bit more. Mix in the<br />
1 tbsp alkaline water. Soak overnight. Drain rice and put in a basin. Mix in<br />
the remaining alkaline water. The rice is ready to be wrapped. Fill the leaf<br />
only a third full.<br />
Our mum rewraps the chang with fresh leaves after they are <strong>cook</strong>ed and<br />
cooled so that they look nice.<br />
To make the sauce, dissolve both the sugars with pandan leaves over low<br />
heat. Strain and return to a clean pot with the pandan leaves. Add coconut<br />
milk and bring to a simmer. The syrup should be thick and viscous.<br />
Eat the chang with a generous helping of the sauce.<br />
*Remember that all the reed/straw strings have to be soaked in water before<br />
use or they will snap easily.<br />
*Half a kilo of rice can make about up to 50 small kee chang.<br />
*A well-made kee chang should be springy and soft.<br />
*Use measuring spoons.<br />
*Before <strong>cook</strong>ing the chang in boiling water, remember to add some alkaline<br />
water to it.<br />

CHANG – NYONYA CHANG/PUA KIAM TEE<br />
(SAVOURY SWEET GLUTINOUS RICE DUMPLINGS)<br />
‘As the legend goes, Qu Yuan, a beloved poet and advisor of the emperor committed suicide out of despair upon<br />
hearing that the capital city was conquered by enemies. On hearing the sad news. the villagers rowed out in boats<br />
and when failing to find his body, they beat drums to drive evil spirits away and threw lumps of rice into the river to<br />
protect his body from being eaten. So the rowing boats evolved into the dragon boat race and luckily for us, the rice<br />
evolved into the much loved changs. This nyonya chang has a delicious balance between the savoury and the sweet.”<br />
• 1 kg glutinous rice<br />
• 6-7 cloves garlic, pound till fine<br />
• Salt<br />
Filling:<br />
• 700g pork belly (samchan),<br />
remove skin or any streaky pork<br />
• 200g candied wintermelon (tang<br />
kua teow) – dice finely<br />
• 150g roasted peanuts, coarsely<br />
ground<br />
• 100g dried mushrooms, soften<br />
and dice finely<br />
• 5 big cloves garlic, mince finely<br />
• Cekur roots (about 4-6 pieces<br />
depending on size), pound finely<br />
• 2 tbsp coriander powder<br />
• About 2 tbsp dark soya sauce<br />
• About 3 tbsp or more light soya<br />
sauce<br />
• About 1 tbsp or more white<br />
pepper<br />
• Sugar and salt as necessary<br />
1. Wash rice and remove about 300g to soak in water mixed with blue<br />
coloring. Soak the rest in normal water - making sure rice is fully covered,<br />
then add a bit more water. Soak overnight. Then drain the rice.<br />
Stir fry the garlic in oil till aromatic but not brown. Put in the white rice and<br />
mix well, adding some salt and pepper. Add about half a cup of water and<br />
mix well till water is absorbed. Remove. Repeat for blue rice with about 2<br />
cloves garlic and some water.<br />
2. For the filling, boil the meat for a bit to make it easier to dice. Dice<br />
finely. In oil, sauté garlic. Add the cekur and fry till aromatic. Put in<br />
coriander and stir quickly then add the meat and mushrooms. Put in<br />
the soya sauces and pepper and mix till combined. Put in some water.<br />
Simmer till meat is done. Then add the winter melon and <strong>cook</strong> till taste is<br />
well blended. Taste and add salt and sugar as necessary. Finally add the<br />
peanuts and mix well. Mixture must be dryish – not wet and not too dry.<br />
*Before <strong>cook</strong>ing the chang in boiling water, add some salt to the water.<br />

(MIXED VGETABLES WITH GLASS NOODLES)<br />
“This was <strong>cook</strong>ed most often during the Festival of the nine emperor gods when we had to go on a vegetarian diet<br />
for one, three or nine days. The garlic would be omitted from this dish then.”<br />
• Cabbage, break into pieces<br />
• Carrots, slice thinly<br />
• Canned button mushrooms; cut<br />
into half<br />
• Dried mushrooms; soak in hot<br />
water till soft then slice<br />
• Black wood ear fungus; soak till<br />
soft, break into pieces then wash<br />
thoroughly<br />
• Bean curd stick; break, deep fry in<br />
oil then soak till soft<br />
• Tanghoon (glass noodles); soak<br />
till soft<br />
• Kim chiam (dried lily buds); trim<br />
hard end, knot, soak in water till<br />
soft then wash thoroughly<br />
• 4-5 cloves garlic, mince<br />
• a few slices ginger<br />
• 2 pieces white or red fermented<br />
bean curd (tau joo), mash<br />
• 2 tbsp taucheo to taste; mash<br />
• A dash of sesame oil<br />
• salt and pepper to taste<br />
• corn flour for thickening<br />
1. First stir fry the ginger then garlic. When aromatic, put in taucheo then<br />
fermented bean curd. Stir fry a bit then put in all mushrooms, bean curd<br />
stick, fungus and carrot.<br />
2. Stir well then add a generous amount of water, bring to a simmer then<br />
cover. Simmer till beancurd stick and dried mushrooms are well done then<br />
add a good dash of sesame oil and other seasoning as necessary.<br />
3. Add kim chiam. When almost done add cabbage and tanghoon. Cook<br />
till tanghoon turns transparent and is just done. Do not over<strong>cook</strong> the<br />
tanghoon. Thicken with corn flour diluted in water.<br />
*Quite a bit of water is needed as the tanghoon can really soak up the liquid.<br />
*The amount of tau joo and taucheo depends on how much stuff you are<br />
putting in.<br />
*Sesame oil loses its aroma in high heat so best added when <strong>cook</strong>ing almost<br />
done. Store sesame oil in fridge after opening to retain its aroma.<br />

CRABS AND COCKLES<br />
“Cockles and crabs bring back nostalgic memories of messy dinners at home; of masticated and spat-out crab shells<br />
and dripping, bloody empty cockle shells piled high on the dining table. Simply <strong>cook</strong>ed but relishing good, they were<br />
dipped into chili garlic paste with soya sauce and eaten with plain hot rice. This recipe is included because it reminds<br />
us that sometimes simple food is the most delicious food.”<br />
Cockles<br />
1. In a large basin, put in cockles and fill up with lots of water and using your hands, swirl them around vigorously.<br />
Remove cockles and pour out the water making sure all sediment is cleaned out. Put cockles back in and repeat till<br />
water is clear with no sediment left behind. You can brush off mud from the very dirty ones using a toothbrush.<br />
2. Then soak the cockles with some salt added to the water. After 30 minutes or so, take out the cockles.<br />
3. Bring a big pot of water to boil and put in the cockles. Turn off the fire. After about 2 minutes, pour out into a<br />
colander. The length of time depends on how well done you like your cockles. We like ours juicy almost still bloody,<br />
tender and succulent. Serve immediately.<br />
4. Prise open the shell, remove the flesh, dip into a concoction of chili garlic paste with light soya sauce and eat<br />
on its own or with rice.<br />
*The ones that cannot open cannot be eaten.<br />
Mud/Black Crabs<br />
1. First, make sure that the crabs you buy are still alive. The crabs will have their pincers tied up. To kill the crabs,<br />
turn the crab over and you will see a flap. At the tip of the flap, drive a chopstick with a pointed end into it. After<br />
killing the crabs, they must be <strong>cook</strong>ed immediately. Do not freeze un<strong>cook</strong>ed crabs.<br />
2. To clean the crabs, fill up a basin with water and put the crabs in it. Brush all over. Remove all the water and<br />
sediment and repeat; then rinse a few times till water is clear.<br />
3. In a wok, put in the well drained crabs and cover. Put fire on high and <strong>cook</strong> for 15-20 minutes. Remove and<br />
serve immediately.<br />
Place a crab shell down on a plate. Put your thumb between the rear legs and prise the shell open. All the creamy<br />
gooey stuff and the reddish roe, if any, can be eaten. On the exposed part, clean out all the gills and other dirty<br />
looking stuff. Turn the crab over and remove the flap. Remove the claws. Break the crab off in the middle then<br />
again into halves. Using a cheng ku or a hammer, break the shell on the claws. You can now enjoy eating the crab.<br />
Dip the flesh into the chili garlic sauce mix with light soya sauce.<br />
Chili Garlic Paste<br />
• 5 fresh chilies, deseed<br />
• 6-8 cloves garlic (or more if you like)<br />
• a few slices ginger (optional)<br />
• lime juice<br />
• sugar, salt<br />
• Pound or blend chili and garlic till fine. Add lime juice, a bit of salt and sugar according to<br />
your taste. If you like, a dash of sesame oil adds extra flavor.<br />
*Female crabs are prized for their roe while male crabs are supposedly to have a more dense flesh.<br />

EE<br />
(GLUTINOUS RICE BALLS IN SYRUP)<br />
“Ee is usually made to celebrate “Tang Chek” the winter solstice<br />
festival sometime in December. According to our mother by eating ee<br />
on tang chek you become officially a year older. When making ee, our<br />
mother has this belief that you must make it as round and perfect<br />
as possible to ensure a perfect year ahead and not to think bad<br />
thoughts or utter any bad words. Ee symbolizes union and family<br />
togetherness or harmony and thus, ee is also served to the bride and<br />
groom on their wedding day. Traditionally ee is white or red in colour<br />
but now it has taken on a rainbow of colours.”<br />
Add some fine sugar to glutinous rice flour. Mix a bit. Add warm<br />
water and then normal water. Mix and adjust amount of water till<br />
you get a slightly sticky paste. Knead. When kneading, the dough<br />
should feel wet but not stick to fingers. Add more water or flour as<br />
needed. Knead for a minute or two till well mixed. Pinch out bits of<br />
dough and roll into a smooth round ball between your palms. Put<br />
balls onto a tray lined with parchment paper or cloth.<br />
Colours: The liquid that you use can have colours added before<br />
mixing into batches of flour. Instead of using artificial food<br />
colouring, green colouring can be extracted from blending pandan<br />
leaves with water, blue from boiling butterfly pea flowers (bunga<br />
talang) in water, red from boiling beetroot, orange from adding<br />
boiled mashed orange sweet potato. Ensure all liquid are well<br />
cooled and strained before use. Extract as dark a colour as possible<br />
so that you do not need to put in a lot of liquid to get the right<br />
colour. Once the right colour is achieved, if necessary, you can add<br />
normal water to flour to get right consistency of dough.<br />
Once the balls are made, bring water in a deep pot to a boil. Put<br />
a few ee inside and <strong>cook</strong> till it floats. Wait a bit then remove with<br />
slotted spoon and put inside a container filled with water before<br />
scooping out and putting inside sugar syrup.<br />

To prepare sugar syrup, boil sugar in water with knotted pandan<br />
leaves. Cool. Make the syrup really sweet to soak the ee. Set<br />
some aside for serving as the syrup soaking the ee can turn cloudy.<br />
When serving, scoop ee out and add fresh syrup if necessary.<br />
Water can be added to dilute the sweetness.<br />
To make brown sugar syrup, boil brown sugar in water with a few<br />
slices of ginger, some white sugar and pandan leaves.<br />
Butterfly Pea Flower<br />
*Cooked ee in syrup can be stored in refrigerator but they will<br />
become hard. To serve them again, scoop ee out and pour boiling<br />
water over them. Steep for awhile till softened through to the<br />
centre then drain and add fresh syrup.<br />
*As you roll out the balls, keep the ones done covered with a damp<br />
cloth to prevent drying.<br />
*Amount of flour depends on how much ee you want to make. A<br />
fistful of dough can make quite a few small size ee.<br />

FRIED BEANCURD SHEET WITH FISH PASTE<br />
“This has become a must have steam boat ‘liao’(accompanying dish) in our family reunion dinners – it is also good as<br />
• 2 medium size ikan tenggiri<br />
• 1 full tbsp lek tau hoon (green pea<br />
flour) or tapioca flour<br />
• 1-2 pieces bean curd sheets<br />
• 1 tbsp salt<br />
• White pepper powder<br />
• Ice cold water<br />
an addition to soups, stir-fried noodles or vegetable dishes.”<br />
1. Clean fish and fillet it. Turn fillets skin side down and using a spoon,<br />
scrape out the flesh. Put the flesh in a food processor or food chopper. Run<br />
the blades a few times till the flesh is very fine and pasty. Remove into a<br />
mixing bowl.<br />
2. Dissolve the flour in some cold water. Put into the bowl together with<br />
salt and pepper. Mix vigorously with your hand. Add more cold water till the<br />
mixture comes together. Since these are not fish balls, there is no need to<br />
beat or mix for too long to achieve the springy-ness of fish balls.<br />
Spread open the bean curd skin.<br />
3. Spread the fish paste (not too thick) on half the sheet leaving half an<br />
inch of border on three sides. Fold down the other half, sealing the edges.<br />
Cut with scissors into half or smaller if necessary for easy frying...<br />
4. Heat oil in pan for shallow frying. When oil is hot, lower the fire slightly<br />
then fry the squares till golden brown. Drain on paper towel. When cool, cut<br />
into desired sizes.<br />
5. When putting in soups or noodles or vegetables, simmer/<strong>cook</strong> for<br />
awhile.<br />
*These freeze very well.<br />
*Finely sliced spring onions can be mixed into the fish paste.<br />
*Wet your hands or spoon when handling mixture to prevent sticking.<br />

FRIED FISH(WITH SAMBAL BELACAN AND ULAM)<br />
“Nothing is more appetizing than eating rice with fried fish together with sambal belacan and ulam. Ulam are raw<br />
herbs and vegetables. This is definitely something that is picked up from the Malay food culture. Eating with your<br />
fingers is a must to work the fish and sambal into your rice and then eating together with the ulam. In this recipe<br />
are listed the ulam that we like. The photos of the ulam are taken from the internet.”<br />
Fried Fish<br />
• 6 ikan kembung or any fish you<br />
like, cleaned with heads intact<br />
Turmeric powder (optional) and salt<br />
to taste.<br />
• Rub turmeric and salt all over the<br />
fish including the stomach cavity.<br />
Fry in hot oil till <strong>cook</strong>ed. Drain on<br />
paper towel.<br />
Sambal Belacan<br />
• 5 fresh chili, deseeded and cut into pieces<br />
• A thick slice of belacan, roasted<br />
Lime juice<br />
The best sambal belacan is made using the cheng ku (mortar and pestle).<br />
First pound the chilli a few at a time till flattened. Then put in the belacan<br />
and pound till the consistency of a wettish, gooey pulp, using a spoon to<br />
push the mixture together once in awhile. Remove and mix with lime juice.<br />
Sambal belacan can be kept frozen.<br />
Or alternatively, just blend everything together in a blender. The mixture is<br />
watery and less thick than that made with cheng ku.<br />
*Growing up, pounding sambal belacan was a dreaded chore as there was always a risk of the juice getting into your<br />
eyes which can really sting for quite awhile. A method that worked well to prevent this was to cover the whole<br />
cheng ku with a clear plastic bag then press down over the pestle till it pops out and push down till the plastic<br />
covers the mortar (the bowl part). This helps to contain the splatter when pounding though it does impede the dexterity<br />
of handling the pestle a bit.<br />

GENG GENG PEK KUIH<br />
(GINGKO NUTS WITH DRIED LONGANS IN SYRUP)<br />
“In our family, this dessert is traditionally served on the morning of the first day of Chinese New Year. My mum<br />
believes that we should have a sweet start to the new year. Traditionally, gingko nuts symbolize wealth, longans mean<br />
many good sons and the red dates she sometimes adds, symbolize a headstart in all matters. With all these in our<br />
tummies, we are always full of optimism that it will be a great year ahead!”<br />
• Gingko nuts (it is more convenient<br />
to buy the frozen prepared ones)<br />
• Dried prepared longans (without<br />
shell and seed)<br />
• Sugar and pandan leaves<br />
Gingko nuts soaking in syrup<br />
1. Prepare the gingko nuts the night before. Make a thick sugar syrup by<br />
boiling enough sugar in water with pandan. Cool. Use a sharp knife with<br />
a tip and gently split the nut till you see the inner stem which is bitter.<br />
Remove it with the tip of the knife while keeping the nut whole if possible.<br />
Bring water to boil in a pot and put in gingko nuts. Lower fire and simmer<br />
for a minute or two, drain and put into syrup, preferably overnight.<br />
2. Rinse longans in water to remove grit. Bring to boil water with pandan<br />
and some sugar. When sugar has dissolved, put in longans and simmer<br />
till the longans are just plump. Do not overly boil them as it will make the<br />
longans tasteless.<br />
3. Put in the gingko nuts with all the syrup. Adjust sweetness to taste.<br />
*When <strong>cook</strong>ing the longans, estimate the amount of water for enough soup<br />
as the fragrant sweet soup is one of the best parts of this dessert. However,<br />
too much water in proportion to the ingredients will render the soup<br />
tasteless and lacking in aroma.<br />
*If you wish to add red dates and white fungus, rinse both and soak fungus<br />
in water till it expands. Remove hard parts and cut into desired size. Add first<br />
the red dates to the boiling water and <strong>cook</strong> for a bit then put in the white<br />
fungus and simmer till dates are soft. Then put in the longans.<br />
*Rock sugar can be used.<br />

GULAI TUMIS<br />

“A piquant curry, this is a family favorite. We will have to categorically say that no one makes it as good as our<br />

remove skin, slice<br />
• 3-4 stalks lemongrass – remove<br />
outer layer, slice<br />
• 10 dried chills – remove seeds,<br />

• 1 big thumb size belacan<br />
• 500g fish – any kind you like<br />
• 1 big bunga kantan – remove<br />
stem, cut into half or big slices<br />
• a small fistful of asam jawa (tamarind)<br />
– use fingers to mix the pulp<br />
with water<br />
• salt and sugar to taste<br />

1. Blend shallots, turmeric, lemongrass, chills and belacan.<br />
2. Heat enough oil in wok to stir fry the blended ingredients. Stir till<br />
aromatic but not too well done then put in bunga kantan and stir a bit<br />
more.<br />
3. Strain in half the asam jawa water. Add a little bit of water. Season with<br />
salt and sugar and simmer.<br />
4. Taste and adjust seasoning and water as necessary. Bring to boil and<br />
add fish. Simmer till fish is <strong>cook</strong>ed.<br />
*Choose old turmeric to get a darker colour.<br />
*Gulai tumis has lots of gravy and is not too thick and should be a dark<br />
orange-reddish colour.<br />
*Add asam jawa gradually as the sour taste gets stronger once the curry is<br />
simmered for some time.<br />
*Black pomfret is good for this curry. Boil some ladies fingers and add to<br />
the curry.<br />

HEH UAN<br />
(PRAWN BALLS)<br />
“Growing up, we were rationed 2 each.”<br />
1. Mince prawns (shelled and deveined). In a mixing bowl add a generous<br />
amount of salt to the prawns and mix vigorously. Then add white pepper<br />
powder and tapioca flour (about ½ kilo prawns add 2 tbsp) Mix well. Form<br />
into balls.<br />
2. Make soup with chicken or pork. Add big onion and a few peppercorns,<br />
salt to taste. Add cabbage and carrots and <strong>cook</strong> till soft. Add prawn balls and<br />
simmer till <strong>cook</strong>ed.<br />
*These prawn balls can be made for steam boat too. Pre-<strong>cook</strong>ed, they can be<br />
frozen.<br />

HOT AND SOUR PIG TROTTERS<br />
• ½ front leg; cut into pieces (the<br />
meat of the front leg is not as tough<br />

2. Mixture must be dry.<br />
3. Stuff sambal into fish pockets.<br />
4. Deep fry fish in hot oil till well done.<br />

JIU HU CHAR<br />
(STIR-FRIED YAM BEAN)<br />
“This is the must have dish on weddings and religious days. Now we have it at most family gatherings.”<br />
• 2 medium size sengkuang – remove<br />
skin, wash and grate into<br />
strips which are not too fine<br />
• 1 medium size carrot – wash,<br />
remove skin and grate into similar<br />
strips<br />
• 1 big onion – halve and slice finely<br />
• 6 plump cloves garlic – mince<br />
• 6 shallots (or as many as you<br />
like) – slice and fry in oil till crispy;<br />
remove from oil and reserve the oil<br />
• 300 g streaky pork – cut into thin<br />
strips<br />
• 2 pieces dried cuttlefish – cut<br />
into thin strips (it is possible to buy<br />
ready cut ones),soak in water and<br />
wash a few times<br />
• 7 tbsp light soya sauce<br />
• white pepper powder<br />
• salt<br />
1. Wash the sengkuang strips in water and drain well. This is to remove the<br />
starch.<br />
2. Heat up the reserved oil and top it up with more oil (you need a<br />
generous amount). When the oil is hot, put in the cuttlefish and fry till it<br />
crackles and is aromatic.<br />
3. Put in the garlic and stir fry till light brown.<br />
4. Add the sliced onions and fry till soft.<br />
5. Add in the pork. Stir till <strong>cook</strong>ed. Pour in the soya sauce and about a flat<br />
teaspoon of white pepper powder. Stir well.<br />
6. Put in the sengkuang and carrot. Stir till well mixed.<br />
7. Then add enough water to almost cover the sengkuang. Add more soya<br />
sauce if you prefer a darker colour. Season with salt and pepper to taste.<br />
8. Simmer on gentle heat till soft, stirring every now and then. When<br />
ready, the jiuhoo char must still be a bit wet.<br />
9. Sprinkle on the fried shallots before serving. Jiuhoo char is delicious<br />
eaten wrapped in lettuce.<br />
*Be generous with the oil used because insufficient oil can affect the texture<br />
of this dish – for that reason, never use lean pork.<br />
*If cuttlefish is smelly, after cutting, rub with salt then rinse in water;<br />
repeating as many times as necessary.<br />
*To make it easier to cut the pork, you can boil the whole piece in some<br />
water for a few minutes before slicing. Reserve the water for <strong>cook</strong>ing the<br />
sengkuang.<br />

(COCONUT EGG CUSTARD)<br />
“Our ‘kor-po’ once said that to get the perfect aroma for the kaya, you need to <strong>cook</strong> it over fire using firewood.<br />
• 1 ½ bowl thick coconut milk (no<br />
water added during extraction)<br />
• 1 bowl egg<br />
• 1 ¼ bowl sugar<br />
• 2 pandan leaves, knotted<br />
Her kaya is legendary.”<br />
1. Use the same bowl to do all measurements. First, measure the coconut<br />
milk and pour into a mixing bowl.<br />
2. Next, measure the eggs. Remove the egg white of the last egg before<br />
adding into the bowl.<br />
3. Pour into the mixing bowl with santan. Using your hand, break up the<br />
egg yolks.<br />
4. Measure the sugar and add into the same mixing bowl. Mix together till<br />
the sugar is dissolved. Use your hand the old-fashion way. Do not beat or<br />
whisk.<br />
5. Using a strainer, strain the mixture into the pot that you will be using to<br />
<strong>cook</strong> the kaya. Put in the knotted pandan leaves.<br />
6. Insert this pot into a bigger pot filled with gently simmering water over<br />
a low fire. Make sure the base of the pot is covered with water.<br />
7. Stir continuously with a wooden spoon till the mixture thickens (coats<br />
the spoon) then lower fire and continue stirring till desired thickness is<br />
achieved. The whole <strong>cook</strong>ing process may take over an hour.<br />

* The size of the bowl you use depends on the amount of kaya you want to<br />
make.<br />
*The key to making kaya is PATIENCE. Do not try to hurry up the <strong>cook</strong>ing<br />
by making the fire bigger. Stir, stir, stir….and then stir some more!<br />
* If your coconut milk does not fill up the bowl, use that level as the<br />
mark for all the other measurements. About 250g coconut milk fills up a<br />
small rice bowl.<br />

KERABU BIHUN<br />
(RICE VERMICELLI SALAD)<br />
“I remember for one of our brother’s wedding, this was on the menu and I remember the aunties who came to<br />
help. What a lot of work this must have been!”<br />

• 1 packet bihun<br />
• Prawns (shell and devein) – halve<br />
the prawns if they are big.<br />
• Prepare kerisik from a whole big<br />
coconut<br />
• Prepare sambal belacan<br />
• Squeeze some lime juice from 3-4<br />
limes<br />
• Finely slice a handful of shallots<br />
• Finely slice one bunga kantan<br />
• Sugar and salt to taste.<br />
1. Soak bihun in water till soft then put in boiling water till just <strong>cook</strong>ed.<br />
Drain and cool thoroughly, making sure the bottom part does not retain<br />
water.<br />
2. Boil or steam the prawns .<br />
3. In a large mixing bowl, put in all the prawns and most (not all) of the<br />
other ingredients except bihun and kerisik.<br />
4. Mix well to make sure the salt and sugar are combined. Add the<br />
bihun then some of the kerisik. Mix well, and adjust taste; adding more<br />
ingredients as you like.<br />
5. It should be a dryish mixture and not too soggy. Garnish with coriander<br />
leaves or mint leaves.<br />
*See nasi ulam recipe on how to make kerisik – making more is always advisable.<br />
The extra can be kept in an airtight container in fridge to make other<br />
kinds of kerabu.<br />
*Make the kerisik and sambal belacan a day or two ahead to save time.<br />
*Sambal belacan is a handy condiment to have around. Freeze in batches and<br />
thaw in refrigerator when needed.<br />
*Kaffir lime leaves can be finely sliced and added for more aroma. Blanched<br />
bean sprouts can also be added.<br />
*If you prefer the mixture slightly wet, add the water from steaming the<br />
prawns and/or add a few tbsp of thick santan.<br />

• ¼ cabbage – blanch whole leaves<br />
then cut into bite sizes (must remain<br />
crunchy)<br />
• A few wood ear fungus, soaked,<br />
washed then blanched and cut into<br />
bite sizes or thick strips<br />
• 4 – 5 shallots, finely sliced<br />
• ½ bunga kantan, finely sliced<br />
• Sambal belacan<br />
• Lime juice<br />
• Thick coconut milk extracted<br />
with no water added, about a small<br />
bowlful – bring to a slight simmer,<br />
stirring all the while, then cool<br />

1. In a mixing bowl, mix up some of the sambal, lime juice, sugar and salt<br />

2. Add in chicken and fungus and some coconut milk.<br />

accordingly until you achieve the blend that suits your taste.<br />
4. It should be a wettish dish redolent with thick coconut milk. Garnish<br />

“When we were young, this was a regular dish. Served piping hot, we flood our rice with the soup and mash up the<br />
fish in it. A vivid memory is of our mum at the table deboning the fish and passing us the flesh.”<br />
All the ingredients listed here should<br />
be adjusted according to your taste.<br />
• Tamarind; a handful<br />
• 3-4 stalks lemon grass<br />
• 4-5 shallots<br />
• 2 pieces asam gelugor<br />
• 1 fresh red chills<br />
• A few chili padi<br />
• 4-5 ikan kembung or chia hoo<br />
(ikan belanak)<br />
• 1 tsp belacan<br />
• Salt, sugar<br />
1. Prepare some tamarind with water and strain into a pot. Add enough<br />
water to make soup. Put over fire.<br />
2. Bruise lemon grass and shallots. Throw into the pot together with asam<br />
gelugor and the red chili (slit and remove seeds).<br />
3. Dissolve some belacan in water and add to the soup. Season to taste<br />
and bring to a boil.<br />
4. Then add as many chili padi as you like (bruised). Add in fish.<br />
5. Simmer till the fish is just <strong>cook</strong>ed.<br />

KETUPAT<br />
(CABBAGE AND CHICKEN SALAD)<br />
“This is a Malay kueh believed to have originated from the northern states of Perlis, Kedah and Penang as well as<br />
Kelantan and Terengganu. Its origins is thought to have been from seafarers who would wrap up <strong>cook</strong>ed rice in<br />
leaves and hang them up in bundles to preserve the rice as well as to keep insects and flies away. What is true today<br />
is that all races enjoy this and the ketupat in this recipe is what is known as ketupat palas or ketupat pulut by the<br />
Malays. Our mum uses the same recipe as that of pulut tai tai with only a few changes.”<br />
• ½ kilo glutinous rice<br />
• 200 g santan<br />
• ½ tbsp sugar (or a bit more)<br />
• ¼ tbsp salt (about 1 tsp or more if<br />
you like)<br />
• A few stalks of sweet corn<br />
• Daun palas for wrapping<br />
1. Wash and soak rice overnight. Remove the kernels of the corn by slicing<br />
vertically down with a knife. Drain rice. In a pot, put in the santan and salt<br />
and sugar. Bring to a simmer and put in the rice and corn. Stir continuously<br />
till thickened. Set aside to cool.<br />
2. Meanwhile open the leaves and wipe down with a wet cloth. If the leaves<br />
are too broad, cut in half if you do not want a big size ketupat.<br />
3. Wrap up the ketupat. Boil for a few hours in a big pot of water. Remove<br />
and put in a colander to drain and cool for an hour or more before<br />
unwrapping.<br />
4. Delicious eaten with kaya or on its own. Sugar and sweet corn can be<br />
left out if you prefer to eat with serunding and rendang though we eat this<br />
sweet version with serunding too and it is good.<br />
*There is another ketupat that the Malays make called ketupat nasi and that<br />
is packed in a squarish box made from young coconut leaves.<br />

KIAM CHAI ARK<br />
(DUCK WITH SALTED MUSTARD LEAVES SOUP)<br />
“At a wedding feast during the days in Kota Sarang Semut, two kinds of soups were served - the pig tripe soup and<br />
this duck soup – all ladled out into blue and white batik bowls served together with other celebratory dishes on the<br />
• 1 duck, chop into large pieces, do<br />
not remove skin<br />
• 1-2 whole head of salted mustard<br />
leaves (kiam chai)<br />
• 2 whole big onions, halved or<br />
quartered<br />
• 1 whole ginger, cut into two or<br />
three and bruise<br />
• 2-3 tomatoes, halved<br />
• Whole white peppercorns, crush<br />
lightly<br />
• 2-3 pieces asam keping (optional)<br />
• 1-2 nutmeg, crush lightly<br />
• 3-4 preserved salted plums (reserve<br />
some of the liquid)<br />
• Salt (to be added last), sugar to<br />
taste<br />
long table (t’ng tok’/tok panjang)) covered with pink paper.”<br />
1. Separate the leaves of the kiam chai and discard the not so good looking<br />
parts. Wash and cut into desired sizes (not too small). Soak in water for an<br />
hour or so, squeezing now and then and changing the water at least once.<br />
This is to remove as much saltiness as possible but not so much as to make<br />
the leaves tasteless. Squeeze out excess water and set aside.<br />
2. Put the duck pieces in enough boiling water for a few minutes and throw<br />
out the water.<br />
3. In another clean pot bring to boil enough water to make soup. Put in the<br />
duck, onion, ginger, pepper, nutmeg and 2 asam keping, and 3 of the salted<br />
plums. Lower to a simmer. After about half an hour put in the kiam chai.<br />
Cook till the duck and kiam chai are soft. Keep tasting and adjust seasoning<br />
– adding more salted plum (or the juice), peppercorns or more ginger as<br />
necessary. Remove the asam keeping when the sour taste is right.<br />
4. The oil from the duck is necessary to coat the the kiam chai to improve<br />
the texture. When the soup is ready, do the final tasting for salt and add if<br />
necessary.<br />
*It is very important to add salt only if necessary at the last stage as the<br />
kiam chai and salted plums can be quite salty.<br />
*Pig trotters can be used instead of duck.<br />
*After a wedding feast, this soup makes a good base for chai boey (roughly<br />
translated ‘the remnants of the dishes’) – a very delicious sourly spicy soup<br />
flavored with bitter mustard greens, roast pork, dried chills, tamarind and with<br />
a few suitable leftover dishes like jiu hu char or braised pork trotters all<br />
boiled together into a relishing, tasty and much loved dish.<br />

“When guests eat this curry, they always request to ‘tapau’ some home.”<br />
• 10 pieces kiam hoo kut (salted fish<br />
bones)<br />
• 8 shallots<br />
• 4-6 dried chili – remove seeds,<br />
soften in hot water<br />
• 2 stalks lemongrass<br />
• 250 ml thick coconut milk – use as<br />
much or as little to your taste<br />
• 1 small ripe pineapple – remove<br />
skin and the hard core, cut into<br />
pieces<br />
• 2 medium length brinjal – cut into<br />
big pieces<br />
• 6 strands long beans – cut into 2<br />
inches’ lengths<br />
• 2 small tomatoes – quartered<br />
• 300 g medium size prawns – trim,<br />
leave shell and head intact; wash<br />
well and drain<br />
• 1 ½ packet fish curry powder<br />
• salt and sugar to taste<br />
1. Wash the kiam hoo kut in water, soak for a while and drain. If smelly,<br />
rub salt thoroughly into the pieces and rinse. Repeat till there is no fishy<br />
smell. Drain and set aside.<br />
2. Blend shallots, chili and lemongrass till fine. Mix with the curry powder.<br />
3. Heat some oil in a large pot or wok. Put in the curry powder mixture and<br />
stir fry for around 5 minutes on medium heat. Add the kiam hoo kut and<br />
stir fry till aromatic.<br />
4. Add 3 small bowls of water and some of the coconut milk. Simmer for 5<br />
minutes or so then add in the pineapple pieces.<br />
5. When the pineapple pieces begin to soften, put in the brinjal, long beans<br />
and tomatoes. Add in more water if necessary. Simmer till soft.<br />
6. Put in prawns and as much coconut milk as desired. Put in salt and<br />
sugar to taste. Simmer till the prawns are <strong>cook</strong>ed and the vegetables are<br />
soft.<br />
*When buying salted fish bones, freshness is important. Choose light coloured<br />
pieces and the pieces around the head area are the best.<br />
*Estimate how much gravy you want in your curry when adding water. Bear in<br />
mind that vegetables and prawns can impart liquid while <strong>cook</strong>ing and that coconut<br />
milk will thicken the curry. When cool, curry can thicken some more.<br />

“This used to be our father’s favorite soup. For some reason it has not been made for a long time.”<br />
• 3-4 cloves garlic, mince<br />
• A few slices ginger<br />
• 4 large pieces salted fish bones<br />
• Pork belly (samchanbak), slice<br />
• Soft tofu cut into big pieces<br />
• White peppercorns (optional)<br />
• Spring onion for garnishing<br />
1. Wash salted fish bones then rub with salt and rinse.<br />
2. Stir fry minced garlic and ginger for a minute or two (not till brown)<br />
then add in salted fish bones. Fry till aromatic then put in slices of pork.<br />
3. Add enough water and bring to a boil. Lower fire and simmer. You can<br />
add a few white peppercorns (crushed) and salt to taste.<br />
4. When almost done, add tofu. Simmer for another couple of minutes.<br />
Garnish with sliced spring onions.<br />
*For a more flavorful broth, you can pre-boil pork bones and use the stock.<br />

“Whenever we are coming back for a family gathering, this is what we will say to anyone who answers the phone:<br />
• ½ kilogram streaky pork (ngor<br />
hua bak) – cut into thin strips<br />
• 3 tbsp light soya sauce<br />
• 2 heaped tbsp sugar<br />
• 1 ½ heaped tbsp 5 spice powder<br />
• salt and white pepper to taste<br />
• 1 ½ tbsp sesame oil<br />
• 3 tbsp garlic oil – use the oil from<br />
frying mince garlic till golden brown<br />
• 2 eggs<br />
• 5-6 shallots – halve and slice<br />
finely<br />
• 1 spring onion – use white part<br />
only, slice finely<br />
• 2 heaped tbsp tapioca flour<br />
• 3 heaped tbsp cornflour<br />
• 3 pieces beancurd sheets – cut<br />
into nine pieces each sheet<br />
• (this recipe makes around 26 thin<br />
short rolls)<br />
Tell mum to make lor bak.”<br />
1. In a large mixing bowl, put in the pork. Then add the soya sauce, sugar,<br />
5 spice powder and salt and pepper to taste. Mix well.<br />
2. Next, add the sesame oil and the garlic oil. Mix.<br />
3. Break in the eggs and mix well into the meat.<br />
4. Mix in the shallots and spring onion.<br />
5. Add in both the flour. Mix well. The whole mixture should be of a thick,<br />
sticky and wet-ish consistency. If too dry, add in another egg.<br />
6. Spread out a piece of bean curd skin. Put a spoonful of meat onto the<br />
centre and spread it out horizontally. Roll up tightly, pressing on the two<br />
ends at the sides. Repeat till all done (see notes below).<br />
7. Heat up enough oil for deep frying on medium heat and lower fire. Deep<br />
fry the rolls over low fire, turning over constantly. When almost done, raise<br />
fire and fry till golden brown. Quickly remove the rolls. Lower the flame.<br />
When oil is cooled sufficiently, repeat the process.<br />
8. Drain rolls on paper towels. Before serving, cut the rolls into pieces.<br />
*Roll one lor bak and deep fry it. Taste it then adjust the seasoning of the<br />
meat before rolling up all the lor bak. Tasting is essential. Alternatively, if<br />
you dare to, lick your fingers when you are done mixing the meat.<br />
*The size and thickness of the rolls is as you desire but thick rolls will<br />
require a longer frying time.<br />
*The trick to perfect lor bak is the frying technique. Care must be taken<br />
to ensure the meat is <strong>cook</strong>ed without burning the skin but yet ensure the<br />
roll is not soaked in oil when done. How to do it? To quote my mum, only<br />
practice can make perfect.<br />

MEE JAWA<br />
(NOODLES IN SWEET POTATO BASED GRAVY)<br />
“Our mother observes a vegetarian diet on the first day of Chinese New Year and she makes this vegetarian noodles<br />
which everybody enjoys whether they are a vegetarian or not.”<br />
• 1 ½ kilo sweet potatoes (orange<br />
colour) - remove skin, boil till soft<br />
then mash<br />
• 400g peanuts – roast, remove skin<br />
and ground<br />
• Dried chili paste or chili powder<br />
mix with some water – fry in a lot<br />
of oil<br />
• Tomato sauce one small bottle<br />
• Corn flour mix with water for<br />
thickening<br />
• Vinegar, salt, sugar<br />
• Egg noodles<br />
• Garnishing:<br />
• beansprouts, taukua, hardboiled<br />
eggs, green chillis, chives or/and<br />
spring onions, lettuce, lime<br />
1. Put mash potatoes in a colander and put over a big stock pot filled with<br />
enough water to make the gravy. Run the water through the potatoes,<br />
stirring till only fiber remains. Remove colander with fibers.<br />
2. Put pot on fire and bring to boil. Add tomato sauce, some of the fried<br />
chili paste and oil, vinegar, sugar and salt to taste. Lastly, stir in the<br />
peanuts. Add corn flour mixture till the desired consistency is achieved;<br />
bearing in mind that the gravy will become thick upon cooling.<br />
3. Blanch noodles in boiling water and drain. Briefly blanch beansprouts.<br />
Fry beancurds (taukua/firm tofu) then cut into slices. Slice hardboiled eggs,<br />
green or red chills, chives, spring onions, lettuce and lime.<br />
4. To serve, put some noodles in a dish and garnish as you like. Then ladle<br />
gravy on it. If you prefer a more sour taste, squeeze some lime juice in it.<br />
*You may add prawn fritters, squids or cuttlefish <strong>cook</strong>ed in sambal as<br />
garnishing for non-vegetarians<br />

NASI KUNYIT<br />
(YELLOW GLUTINOUS RICE)<br />
“Traditionally, nasi kunyit with chicken curry, hard boiled red eggs and ang koo kuih are given to family and friends<br />
when a new baby is one month old. By looking at the shape of the ang koo kuih, one can tell the sex of the baby:<br />
round ball shape means a boy and a flat longish oval shape means a girl. Always present will be the ubiquitous shape<br />
of the ang koo ie that of the tortoise; ang=red, the color symbolizing prosperity; koo=tortoise symbolizing longevity<br />
therefore wishing the newborn a prosperous and long life.”<br />
1 kg glutinous rice (pulut) is<br />
washed and then soaked overnight<br />
in water added with 2 tbsp<br />
turmeric powder and 1 piece<br />
asam gelugor.<br />
To Make Red Eggs:<br />
Boil till eggs are completely <strong>cook</strong>ed and hard (there is a superstitious belief<br />
that if the eggs are not thoroughly hard, the baby will not be so smart). Mix<br />
red colouring with hot water and the trick is to add 1-2 tbsp of vinegar to<br />
fix the colour. Dye the eggs one by one.<br />
• Drain the rice and mix in a few<br />
white peppercorns and steam<br />
till <strong>cook</strong>ed. If rice looks too dry,<br />
sprinkle some water and continue<br />
steaming.<br />
• Meanwhile, mix 400g thick<br />
coconut milk with salt to taste,<br />
1½ tbsp sugar and 200g drinking<br />
water. When the rice is <strong>cook</strong>ed,<br />
remove into a pot and mix in<br />
coconut milk mixture; keeping some<br />
aside and use if more is needed.<br />
Keep covered for about ½ hour.<br />

usually with a chicken curry as well- ang ku kuih, red eggs and nasi kunyit<br />

(RICE SALAD WITH HERBS)<br />
“Here is the fun thing about this recipe – you can use as much or as little of these ingredients as you like while<br />
mixing them up and tasting. The only rule here is to slice everything as finely as possible (I can hear my mum<br />
scolding us: not fine enough!) Cekor leaves are not easily available these days. If you love this dish, it is worthwhile<br />
• Cooked rice<br />

1. Cook rice and cool; texture must be dryish (add a bit less water than<br />
usual when <strong>cook</strong>ing).<br />
2. Wash and dry all leaves, then finely slice them. It helps to roll up the<br />
leaves tightly then slice.<br />
3. Mix all the ingredients together (except the rice) by adding each one<br />
gradually till you get a mixture that suits your taste. You may not need to<br />
use all the kerisik (better to have extra than not enough).<br />
4. When ready to eat, just mix this with your rice.<br />
*Some people like to add long beans and four angled beans/wing beans (kacang<br />
botol).<br />
*Eat with your fingers, it will taste better!<br />

PEK CHAI THAU TH’NG<br />
(WHITE RADISH SOUP)<br />
“One of the soups everyone in the family enjoys. This still makes a regular appearance on our table”<br />
• 1 big daikon (white radish)<br />
• Some pork bones, wash and drain<br />
• 2 heaped tbsp taucheo (preserved<br />
soya bean paste)<br />
• 3 cloves garlic, mince<br />
• A big tbsp of whole white peppercorns,<br />
lightly crushed<br />
• Salt to taste<br />
1. In a pot, put in a bit of oil to stir fry the minced garlic. Fry till aromatic<br />
then put in taucheo (paste not whole beans). Stir a bit and put in pork<br />
bones. Keep stirring for a few seconds then put in enough water to make<br />
your soup.<br />
2. When the water comes to a boil, put in the pepper and the radish. Bring<br />
to boil again and lower fire. Scoop out the scum. Season.<br />
3. Simmer till the meat on the bones and the white radish are soft. Serve<br />
piping hot as all soups should be.<br />
*Use as much taucheo and pepper as you like. We like this soup quite<br />
peppery. You can add carrots.<br />

PULUT INTI<br />
(GLUTINOUS RICE WITH COCONUT IN PALM SUGAR)<br />
“One of the very few sweet desserts that our father used to enjoy.”<br />
Pulut:<br />
• ½ kilo glutinous rice<br />
• 200 ml thick santan<br />
• ¼ mug drinking water plus another<br />
½ mug<br />
• sugar and salt to taste<br />
• Inti:<br />
• 1 whole coconut, grated (white,<br />
without the bits of shell)<br />
• 1 cup or more palm sugar (gula<br />
melaka)<br />
• water<br />
• 2 pandan leaves, tie into knot<br />
• 1 tbsp tapioca flour or corn flour<br />
• A pinch of salt (optional)<br />
1. Wash and then soak rice for at least 5 hours. Drain then put on steamer<br />
and steam for 15 minutes. Turn rice over and sprinkle about ¼ mug water<br />
on the rice. Cover and continue steaming till <strong>cook</strong>ed - about another 20<br />
minutes.<br />
2. Meanwhile, in a pot, gently heat the santan mixed with half mug water<br />
and salt and sugar to taste. Do not let it come to a simmer. Pour into a<br />
basin.<br />
3. When the rice is <strong>cook</strong>ed, move the rice into the basin, stir till well<br />
combined with the coconut mixture then cover and leave for at least 20<br />
minutes. Open cover and mix again. Cool before eating with the inti.<br />
4. For the inti, melt the palm sugar in a pot with the pandan leaves and<br />
a little water. Strain. Put into a wok with the pandan and on medium heat<br />
bring to simmer again then put in coconut and stir till well mixed. When<br />
ready, sprinkle with tapioca flour and mix till combined. Remove and cool.<br />
The addition of tapioca flour makes the mixture stickier.<br />
5. To serve, put glutinous rice in a plate and top with some inti. Mix into<br />
the rice and eat.<br />
*Before using banana leaves to wrap or to line containers, the leaves must be<br />
cleaned then blanch with very hot water till the leaves soften. Dry the leaves<br />
before using. They will be malleable and not easily torn.<br />
*See pulut tai tai recipe on how to make the rice blue if you wish to have a<br />
mix of colours.<br />
*Pandan leaves can be added to the rice when steaming.<br />

PULUT TAI TAI<br />
(COMPRESSED GLUTINOUS RICE)<br />
“My fondest memory of pulut tai tai is that of our Kor-po making it in Kota Sarang Semut. She has a special huge<br />
tray with a wooden lid. When the pulut is poured into the tray and covered with the lid, she will ask one of the boy<br />
cousins (girls not allowed) to step on it to compress the pulut. Then she would put a few “batu giling” on top. I<br />
remember her painstakingly slicing the pulut into perfect diamond shapes in exact sizes and arranging them carefully<br />
on a small plate for guests. If you hang around and if you are lucky, you get to eat the remnants dipped into her<br />
• ½ kg glutinous rice, wash and<br />
separate into 2 equal portions<br />
• 200g thick coconut milk<br />
• ¼ tbsp salt<br />
• ½ tbsp sugar<br />
• ½ mug water<br />
• Blue colouring extracted from<br />
boiling butterfly pea flower (bunga<br />
talang)<br />
delicious kaya.”<br />
1. Soak one portion of the rice in enough water to completely cover it and<br />
then add a bit more. In another container, soak the other half in water<br />
added with the blue colouring. Leave for at least 5 hrs or overnight. Drain<br />
well in separate colanders. Meanwhile prepare your steamer. Cover the tray<br />
with holes used for steaming with a thin cloth and place in wok filled with<br />
water (not touching the tray).<br />
2. Mix the sugar and salt into the coconut milk. Separate into 2 portions.<br />
In a pot, bring one portion of the coconut milk to almost boiling then put in<br />
the white rice. Stir till thickened. Remove and put on one side of the tray.<br />
Repeat the process with the blue rice and place the rice next to the white<br />
one. Cover and steam for about 40 minutes or till <strong>cook</strong>ed. Turn over the rice<br />
about halfway through and sprinkle with the half mug of water.<br />
3. Oil a metal tray and line the bottom with banana leaf. Put in the rice<br />
alternating blue and white.<br />
4. Hold a folded kitchen towel inside a clean plastic bag and press the rice<br />
firmly till well compressed. Smooth out the top so that it is level.<br />
5. When cool, slice with a plastic cutter into diamond shape pieces. Serve<br />
with kaya.<br />
Compressing the rice<br />
*It is important not to use a large tray or your pulut tai tai will be too<br />
thin after pressing. Aim for about an inch or a bit more in height after the<br />
pulut is compressed.<br />
*To get the blue colouring, put around 1-2 tbsp of dried bunga talang and<br />
one and a half mug water and simmer till the flowers turn whitish and the<br />
colour very dark. Add more flowers if you want darker. Remember that it will<br />
be diluted in the water used to soak the rice.<br />

ROAST CHICKEN WINGS<br />
“This recipe shows what goes in the marinade. The quantities are to your taste.”<br />
• 5 spice powder<br />
• Garlic paste (not too much)<br />
• Sesame oil<br />
• Oyster sauce<br />
• Fish sauce<br />
• Sugar<br />
• White pepper powder<br />
• Light soya sauce<br />
• A dash of dark soya sauce for<br />
colour<br />
• Honey for basting<br />
1. Mix all except honey and taste.<br />
2. Clean and pat dry chicken wings and rub marinade all over. Keep in<br />
fridge a few hours.<br />
3. Preheat oven till hot about 200C-250C. Put wings on an oiled stand over<br />
a pan and roast. Halfway through turn and roast other side.<br />
4. When almost done, brush honey over the wings and roast till brown and<br />
caramelized.<br />
*When I asked my mum how long to roast she said look at the colour to<br />
judge if the wings are done (??) so by my estimate around 6-10 mins per side.<br />
*She is particular about the brand of the 5 spice powder; not all has the<br />
right aroma. Go easy on this when preparing the marinade – for abt 10 wings<br />
maybe 1 tspn flat or less (also just 1 clove garlic).<br />

SAMBAL UDANG<br />
(PRAWNS IN SAVOURY SPICY SAUCE)<br />
“If everyone starts sneezing, it is an indication that the sambal is stir-fried well enough to continue to the next<br />
stage of <strong>cook</strong>ing.”<br />
• 10 shallots<br />
• 2 stalks lemongrass<br />
• 14 dried chilli<br />
• 2 fresh chilli – optional<br />
• 1 big thumb size belacan<br />
• 400g prawns – shell removed and<br />
deveined<br />
• a few limau purut leaves (kaffir<br />
lime leaves), sliced<br />
• a small fistful of asam jawa – mix<br />
the pulp in a bowl of water<br />
• Salt and sugar to taste<br />
1. Prepare shallots, lemongrass, chills and blend with the belacan.<br />
2. Heat enough oil in wok and stir-fry blended ingredients till aromatic.<br />
3. Strain in half the asam jawa and add a bit of water to get a thick gravy.<br />
Season to taste.<br />
4. Simmer, adjust taste and then add in the prawns and the limau purut<br />
leaves. If you like petai, you can add in petai when the prawns are just<br />
about to be <strong>cook</strong>ed.<br />
*Remember that the prawns will impart some liquid when <strong>cook</strong>ing. The<br />
consistency of this dish is to your liking. We like ours to have a thick gravy.<br />
If you like yours dry, add fried onion rings for more aroma.<br />
*When the sambal udang is almost ready. you can put in petai if you wish.<br />
Petai requires just a short <strong>cook</strong>ing time – about a minute.<br />

TAU IU BAK<br />
(PORK BRAISED IN SOYA SAUCE)<br />
“This is a favourite everyday dish <strong>cook</strong>ed often and delicious eaten with sambal belacan. We always fight over the<br />
• 200 g samchan (pork belly with a<br />
strip of fat and skin; usually sold in<br />
strips)<br />
• 200 g ngor hua bak (or any soft<br />
meat with marbling of fat)<br />
• 4-5 big cloves garlic, wash with<br />
skin on and lightly crush<br />
• Thick soya sauce<br />
• Thin soya sauce<br />
• Sugar, white pepper powder to<br />
taste<br />
• 2 hardboiled eggs, shell removed<br />
• 2 pieces taukua (firm beancurd),<br />
fried and cut into 6 pieces each<br />
tau kua.”<br />
1. In a pot over fire, put in garlic with the pork and stir for awhile till<br />
the meat turns colour. Put in both soya sauces and stir. If necessary, add<br />
more dark soya sauce to get the colour that you like. Put in sugar about a<br />
teaspoon and the pepper. Stir now and then.<br />
2. When the liquid is almost dry and the meat slightly glazed, add enough<br />
water to cover (estimate how much sauce you want to have in the end and<br />
then add a bit more water). Simmer then taste and adjust as necessary.<br />
3. When the meat is almost soft, put in egg and taukua. There should still<br />
be enough sauce to partially cover them. If necessary, a bit more water can<br />
be added.<br />
4. Lower fire and cover, stirring and turning egg over. When the meat is<br />
soft and the gravy is thick, it is ready.<br />
*After <strong>cook</strong>ing a few times, you will be better able to judge how much<br />
garlic or water to put in. Tau iu bak actually uses only samchan bak but<br />
for health purpose some lean meat is used these days. The kind of lean meat<br />
you choose is important. It must not be dry and hard after <strong>cook</strong>ing but soft<br />
and succulent.<br />
*Some people like their tau iu bak very dark, some don’t; so really the<br />
amount of both soya sauces is up to you.<br />

TAUCHEO HU<br />
(FISH WITH PRESERVED SOYA BEANS)<br />
“This is another everyday dish that we enjoy eating. Our mum’s way of making this has changed from the earlier<br />
years and this new method is more delicious.”<br />
• 3-4 pieces ikan tenggiri or a<br />
medium size black pomfret, cleaned<br />
• 2 large tbsp taucheo<br />
• dark soya sauce<br />
• light soya sauce<br />
• sugar to taste<br />
• spring onion<br />
• coriander leaves<br />
• Mince together:<br />
• 3 shallots<br />
• 6 cloves garlic<br />
• 5 slices ginger<br />
• 1 fresh red chili, deseeded<br />
1. In hot oil, fry the fish that has been rubbed with salt till golden brown.<br />
Set aside.<br />
2. Remove some oil. In the remaining oil, put in the minced ingredients<br />
and stir fry till aromatic. Put in taucheo and stir fry for a minute. Put in<br />
desired amount of dark soya sauce and some light soya sauce (bearing in<br />
mind the taucheo is salty). Put in sugar and some water - enough for a<br />
thick gravy.<br />
3. Bring to a simmer and adjust taste. Put in the fish and stir till well<br />
coated.<br />
4. Remove and garnish with strips of spring onion and coriander leaves.<br />
*If you add the white part of the spring onion and coriander stalks (both<br />
bruised) when stir frying, it will add to the aroma.<br />
*If using pomfret, you can slice the fish into two.<br />
*Use good quality taucheo paste (not the whole grain kind).<br />
*Using the same ingredients you can make char lala (stir fried soft shell<br />
clams) – clean lala using the same method for cockles (see recipe Cockles<br />
and Crabs).<br />

TAU HU HUA<br />
(Soft Bean Curd in Syrup)<br />
“There was a period when our mum made this very often. She even got the tin man to make the special scooper for<br />
ladling out the tau hu hua and the dipper for the syrup. There’s nothing like freshly made tauhu hua; the aroma is<br />
simply wonderful.”<br />
• 3 litres water<br />
• 600 g soya beans – wash and soak<br />
for 4-5 hours<br />
• 8 heaped tbsp corn flour<br />
• 1 heaped tsp chiok ko (lime<br />
powder)<br />
• 2 pandan leaves<br />
• 2 pots – one for boiling and the<br />
other for setting<br />
1. Blend soya beans with the water. Strain mixture through a muslin cloth<br />
into a pot. Remove and put aside 1 cup of the mixture.<br />
2. Stir the corn flour into the soya bean in the pot. Simmer with pandan<br />
leaves over medium fire. Keep stirring to prevent the liquid from boiling<br />
over.<br />
3. When the liquid is about to come to a boil, dissolve the chiok ko into the<br />
1 cup soya bean and pour into the pot used for setting the tau hu hua.<br />
4. Bring the soya bean on the fire to a boil and immediately pour the<br />
contents into the other pot with the chok ko mixture. Cover with the lid and<br />
allow to mixture to set. It will take at least 45 minutes.<br />
5. Serve up tau hu hua in thin scoops with sugar syrup.<br />
*Chiok ko is sold in most Chinese medicine shops.<br />

TEE KUIH CHIEN NUI<br />
(Fried Tee Kuih in Egg Batter)<br />
“One week before the eve of Chinese New Year, according to Chinese traditional beliefs, the Kitchen God makes his<br />
report to the Jade Emperor and based on that report, the Jade Emperor will decide whether to reward the family or<br />
not. During the prayers to the Kitchen God to send him off, tee kuih is offered as a sweet offering (bribe). As our<br />
mum tells it, after eating this sticky offering, the Kitchen God’s lips will be sealed together so he will not be able<br />
to make his report; in case it is a bad one. Fortunately because of this belief we all get to enjoy eating this kuih.”<br />
• 1 whole big tee kuih, cut into 2cm<br />
thick slices<br />
• 2 eggs<br />
• 2-3 tbsp flour<br />
• Salt to taste<br />
1. Beat eggs and gradually stir in enough flour till a slightly thick batter is<br />
formed. Stir in salt.<br />
2. In a pan put in enough oil for shallow frying. When oil is hot, dip tee<br />
kuih in batter till well coated and put into the pan. If the batter does not<br />
stick well (too runny), add a bit more flour to the batter.<br />
3. Fry till light brown on both sides. Serve immediately. The slightly<br />
crunchy saltish batter goes well with the gooey soft and sweet tee kuih.<br />
*When all the prayers are over, there is usually a surplus of tee kuih in<br />
our house and this is one of our favourite preparations. The other way is<br />
to steam the tee kuih slices then using a fork and spoon, scoop up the tee<br />
kuih and roll in freshly grated coconut flavoured with some salt.<br />
*Tee kuih can keep forever. If it gets mouldy, just slice off the mouldy<br />
parts.<br />
*When buying tee kuih, choose the ones that are <strong>cook</strong>ed wrapped in banana<br />
leaves and the colour is a glossy deep brown.<br />

TONG CHAI BAK<br />
(STEAMED MINCED PORK WITH PRESERVED CABBAGE)<br />
“Another everyday dish that we used to find often in our ‘ua tu’ (meat safe; an old style kitchen cupboard to keep<br />
food and crockery) when we are home from school and wondering what was for lunch.”<br />
• 200g pork<br />
• 2 tbsp tong chai, rinse and drain a<br />
few times to remove grit<br />
• Light soya sauce and white pepper<br />
to taste<br />
• A bit of tapioca flour (optional)<br />
1. Mince pork together with tong chai till fine.<br />
2. Mix in all the other ingredients and spread into a suitable size plate safe<br />
for steaming. Put in a little water.<br />
3. Steam the pork on high heat until <strong>cook</strong>ed. There will be liqud imparted<br />
while <strong>cook</strong>ing so make sure the plate is not too shallow.<br />

(PIG TRIPE SOUP)<br />
“A special soup prepared for special occasions. Tripe is also a must have ingredient whenever we have steam boat on<br />
Chinese New Year eve. The long process involved in cleaning tripe is to get rid of the smell. I don’t know if anyone<br />

How to Clean Tripe:<br />
Remove excess outer fat of the tripe. Turn the tripe inside out and scrape<br />
the whole lining of the stomach with a knife. Rub thoroughly with salt.<br />
Wash and scrape with knife again. Rub all over with salt and tamarind for<br />
a good minute or two. Wash. Using salt and tapioca flour, repeat process<br />
of rubbing. Wash. Scrape all sticky stuff off. Crush together some papaya<br />
leaves and rub thoroughly onto the tripe. Keep rubbing. Wash. Boil some<br />
water and put in the tripe. Boil till a whitish film forms. Remove and scrape<br />
that off.<br />
Turn the tripe inside in. Put some white peppercorns and 2 slices of ginger<br />
inside the cavity. Put into clean boiling water and boil till a chopstick can<br />
poke through. Discard the water.<br />
Slice tripe only when using otherwise can be kept frozen whole.<br />

Boil chicken parts with crushed white peppercorns, big onions and add<br />
carrots, cabbage and some gingko nuts. Add sliced tripe. Season to taste.<br />

我 们 的 母 亲 — 温 彩 凤 , 出 生 于 1939 年 12 月 14 日 , 原 名 周 美 香 。<br />
她 的 亲 生 爸 爸 是 个 潮 州 人 , 当 年 在 吉 打 西 岭 从 事 割 胶 工 作 。 在<br />
七 个 孩 子 中 母 亲 排 行 第 六 , 也 是 家 里 的 第 四 个 女 儿 。 母 亲 的 二 姐<br />
给 送 人 领 养 , 母 亲 也 不 例 外 , 大 约 在 她 三 岁 的 时 候 , 被 送 给 住 在<br />
附 近 的 一 个 巴 士 司 机 温 华 生 领 养 ( 也 就 是 我 们 的 公 公 ), 并 被 改 名<br />
为 温 彩 凤 。 那 时 候 公 公 的 妻 子 是 个 戏 班 演 员 , 他 们 夫 妇 俩 还 有 一 个<br />
养 子 叫 温 金 财 。 在 母 亲 大 约 八 岁 的 时 候 , 她 那 才 四 十 来 岁 的 养 母 去 世<br />
了 。 公 公 后 来 续 弦 , 娶 了 一 个 带 着 两 个 女 儿 的 寡 妇 ( 这 就 是 我 们 的 婆<br />
婆 )。 婚 后 , 他 们 又 有 了 四 个 孩 子 , 两 男 两 女 。 住 在 西 岭 的 那 段 日 子 , 母 亲 被 允 许 回 去<br />

这 是 另 一 道 婚 宴 常 备 有 的 娘 惹 佳 肴 , 川 烫 和 挤 干 蔬 菜 水 分 是 蛮 费 时 的 。 我 们 也 喜 欢 用 这 道 美 食 拌 面 包 吃<br />

2. 将 材 料 ( 1)-(7) 搅 拌 成 泥 , 置 入 热 油 锅 里 慢 火 炒 至 香 味 溢 出 。 加 入 亚 叁 膏 汁 、 白<br />
醋 、 水 、 盐 和 糖 调 味 。 要 确 保 分 量 足 够 腌 渍 所 有 的 蔬 菜 , 而 花 生 碎 也 会 令 腌 汁 变 稠 。<br />
3. 当 腌 汁 完 全 冷 却 后 , 加 入 碾 碎 的 花 生 和 芝 麻 搅 拌 成 满 意 的 浓 度 , 倒 入 所 有 的 蔬 菜 搅 拌<br />

这 道 菜 通 常 为 娘 惹 婚 宴 而 准 备<br />

1. 鱼 1 公 斤 , 洗 净 抹 上 少 许 盐 以 热 油 炸<br />
熟 。 可 以 选 用 马 鲛 鱼 、 甘 望 鱼 或 鲻 鱼 / 乌 鱼<br />

3. 糖 1¼ 碗<br />
4. 香 兰 叶 2 片 , 打 结 。<br />
做 法 :<br />
1. 将 量 好 的 浓 椰 浆 倒 入 容 器 里 。( 要 用 一 样 的 碗 , 碗 的 大 小 决 定 制 成 品 的 分 量 )<br />
2. 将 蛋 打 入 碗 里 , 至 最 后 一 粒 蛋 时 去 掉 蛋 白 不 要 。<br />

8. 红 葱 头 3 粒 、 蒜 头 6 瓣 、 姜 5 片 、 红 辣 椒 1<br />
条 去 籽 , 全 部 加 在 一 起 捣 烂 。<br />
做 法 :<br />
1. 抹 一 点 盐 在 鱼 身 上 , 用 油 煎 至 金 黄 色 。<br />
2. 热 油 锅 爆 香 材 料 (8), 放 入 豆 瓣 酱 略 炒 , 然 后 加 酱 青 和 黑 酱 油 ( 要 记 住 豆 瓣 酱 是 咸<br />
的 , 要 控 制 好 用 量 ), 加 一 点 糖 调 味 , 注 入 一 些 水 煮 成 浓 汁 。<br />
3. 调 好 味 后 , 把 鱼 放 下 去 煮 一 会 儿 即 可 装 盘 , 以 葱 和 芫 荽 装 饰 。<br />
温 馨 小 提 示 :<br />
• 在 煮 鱼 的 时 候 可 以 加 入 葱 白 和 芫 荽 的 梗 一 起 煮 , 味 道 会 更 香 浓 。<br />
• 如 果 是 用 黑 鲳 鱼 的 话 , 可 以 切 成 两 块 。<br />
• 选 用 优 质 的 豆 瓣 酱 , 不 要 用 颗 粒 的 。<br />
• 这 些 配 料 也 可 以 用 来 炒 啦 啦 ( 蛤 ), 清 洗 啦 啦 的 方 法 和 处 理 血 蚶 一 样 。<br />

豆 腐 花<br />
妈 妈 做 的 豆 花 总 是 软 绵 如 棉 花 糖 , 入 口 即 化 。 还 记 得 她 还 订 做 了 刮 板 和 糖 杓 , 可 见 她 对 每 个 细 节 的 坚 持 , 以 做 出 这 可 口<br />
的 甜 品<br />
材 料 :<br />
1. 水 3 公 升<br />
2. 黄 豆 ( 大 豆 )600 克 -, 洗 净 , 浸 泡 4-5<br />
小 时<br />
3. 玉 米 粉 8 大 汤 匙<br />
4. 食 用 石 灰 粉 ( 俗 称 石 膏 )1 大 茶 匙<br />
5. 班 兰 叶 ( 香 叶 )2 片<br />
6. 容 器 2 个 , 一 个 用 来 煮 , 一 个 用 来 装 置<br />
豆 腐 花 使 凝 固<br />
做 法 :<br />
1. 黄 豆 与 水 放 入 搅 拌 机 里 打 成 豆 浆 , 用 纱 布 过 滤 , 隔 去 渣 , 放 入 要 用 来 煮 的 容 器 里 , 同<br />
时 留 起 一 杯 待 溶 解 石 灰 粉 用 。<br />
2. 用 一 点 豆 浆 将 玉 米 粉 调 匀 后 倒 入 待 煮 的 豆 浆 水 里 。 加 入 香 兰 叶 , 用 中 火 煮 , 期 间 不 断<br />
搅 拌 以 防 止 液 体 沸 腾 溢 出 来 。<br />
3. 当 液 体 即 将 烧 开 时 , 将 石 灰 粉 置 入 杯 里 的 豆 浆 里 调 匀 , 然 后 倒 入 准 备 用 来 装 豆 腐 花 的<br />
容 器 里 。<br />
4. 当 液 体 煮 滚 时 , 迅 速 将 之 倒 入 装 有 石 灰 粉 的 容 器 里 , 不 要 搅 动 , 盖 好 , 大 约 45 分 钟 后<br />
就 可 凝 固 。<br />
5. 用 勺 子 舀 出 薄 块 与 糖 浆 一 起 食 用 。。<br />

蛋 煎 年 糕<br />
( 相 传 除 夕 夜 的 一 个 星 期 前 , 灶 神 会 返 回 天 庭 向 玉 皇 大 帝 报 告 人 间 的 功 过 善 恶 , 玉 皇 大 帝 就 会 根 据 灶 神 的 报 告 论 功 行<br />
赏 , 因 此 人 们 在 灶 神 升 天 当 日 , 都 会 准 备 甜 滋 滋 的 年 糕 来 贿 赂 灶 神 。 妈 妈 说 吃 了 年 糕 灶 神 的 嘴 巴 就 会 给 粘 住 , 有 坏 话 也<br />
说 不 了 啦 ! 当 然 最 得 益 的 就 是 我 们 啦 , 因 为 有 这 个 传 统 而 有 年 糕 吃 !)<br />
材 料 :<br />
1. 年 糕 1 个 , 切 成 2 公 分 的 厚 片 。<br />
2. 鸡 蛋 2 粒<br />
3. 面 粉 2-3 大 匙<br />
4. 盐 少 许<br />
做 法 :<br />
1. 把 蛋 打 散 , 慢 慢 加 入 面 粉 搅 拌 均 匀 , 以 少 许 盐 调 味 。<br />
2. 平 锅 里 加 少 许 油 烧 热 。 把 年 糕 放 入 面 粉 蛋 液 里 使 其 沾 满 蛋 液 , 然 后 放 入 平 锅 里 煎 至 两<br />
面 都 变 成 金 黄 色 。 如 果 蛋 液 太 稀 沾 不 上 , 可 以 加 多 一 些 面 粉 。<br />
3. 最 好 趁 热 吃 , 带 点 咸 味 的 外 皮 酥 脆 , 裹 着 甜 甜 又 软 软 粘 粘 的 年 糕 , 绝 配 !<br />
温 馨 小 提 示 :<br />
• 每 次 拜 神 过 后 我 家 里 都 会 有 很 多 年 糕 , 这 是 我 们 最 常 处 理 年 糕 的 方 法 。 还 有 一 个 做 法<br />
是 蒸 年 糕 : 把 切 片 的 年 糕 蒸 软 后 , 利 用 汤 匙 和 叉 舀 出 一 点 , 放 在 椰 丝 里 滚 动 , 使 其 粘 满<br />
椰 丝 。 要 用 新 鲜 的 椰 丝 , 里 面 加 一 点 盐 拌 均 。<br />
• 年 糕 可 以 收 藏 很 久 , 如 果 发 霉 的 话 , 只 要 把 发 霉 的 部 分 削 去 就 可 以 。<br />
• 买 年 糕 的 时 候 , 要 选 择 用 香 蕉 叶 蒸 的 , 褐 色 和 有 光 泽 的 。<br />

冬 菜 蒸 猪 肉<br />
( 这 也 是 常 出 现 在 我 们 家 碗 橱 里 的 家 常 菜 。 小 时 候 一 放 学 回 家 我 们 就 会 打 开 碗 橱 看 看 午 餐 有 什 么 菜 肴 !)<br />
材 料 :<br />
1. 猪 肉 200 克<br />
2. 冬 菜 2 大 匙 , 用 水 清 洗 几 次 以 去 掉 沙<br />
粒 , 滤 干 备 用 。<br />
3. 酱 青 和 胡 椒 粉 供 调 味<br />
4. 木 薯 粉 少 许 ( 随 意 )<br />
做 法 :<br />
1. 猪 肉 和 冬 菜 一 起 剁 碎 , 然 后 加 入 调 味 料 拌 均 , 放 入 适 合 的 盘 子 里 铺 平 , 加 一 点 点 水 在<br />
上 面 。<br />
2. 隔 水 大 火 蒸 至 猪 肉 熟 透 , 蒸 好 会 出 水 , 所 以 要 用 深 一 点 的 盘 子 。<br />

猪 肚 汤<br />
( 这 是 为 特 别 庆 典 所 准 备 的 汤 水 。 猪 肚 也 是 除 夕 夜 吃 团 圆 饭 时 火 锅 上 不 可 缺 少 的 配 料 。 洗 猪 肚 最 费 工 夫 是 要 去 掉 腥 臊<br />
味 。 我 不 知 道 有 多 少 人 为 了 吃 愿 意 刮 猪 肚 , 我 想 在 这 里 让 大 家 知 道 准 备 这 道 汤 水 是 多 么 的 费 工 夫 , 真 要 给 愿 意 刮 猪 肚 的<br />
妈 妈 们 敬 礼 !)<br />
材 料 :<br />
1. 马 鲛 鱼 3-4 块 或 中 型 的 黑 鲳 鱼 一 条 , 洗<br />
净 。<br />
2. 豆 瓣 酱 2 大 匙<br />
3. 黑 酱 油<br />
4. 酱 青<br />
5. 糖 供 调 味<br />
6. 葱<br />
7. 芫 荽<br />
8. 红 葱 头 3 粒 、 蒜 头 6 瓣 、 姜 5 片 、 红 辣 椒 1<br />
条 去 籽 , 全 部 加 在 一 起 捣 烂 。<br />
如 何 洗 猪 肚 :<br />
1. 首 先 将 猪 肚 外 层 的 脂 肪 剔 掉 , 然 后 将 猪 肚 从 内 到 外 翻 转 过 来 , 用 刀 子 刮 掉 内 层 的 粘<br />
液 , 再 用 盐 擦 一 遍 。<br />
2. 用 水 洗 掉 肮 脏 的 东 西 后 , 再 用 刀 子 刮 , 然 后 再 用 盐 和 亚 叁 膏 擦 洗 一 两 分 钟 , 冲 水 。<br />
3. 再 用 盐 和 木 薯 粉 揉 擦 , 冲 水 , 用 刀 子 挂 掉 粘 液 。<br />
4. 搞 烂 一 些 木 瓜 叶 , 用 来 揉 擦 猪 肚 , 然 后 用 水 冲 洗 干 净 。<br />
5. 煮 滚 一 锅 水 , 把 猪 肚 放 进 去 煮 到 表 层 出 现 一 层 白 色 的 膜 , 然 后 拿 出 来 刮 掉 那 层 膜 。<br />
6. 把 猪 肚 翻 转 过 来 , 里 面 放 入 一 些 白 胡 椒 粒 和 两 片 姜 , 然 后 放 进 滚 水 里 煮 至 筷 子 可 以<br />
插 进 去 肚 皮 里 就 成 了 。<br />
7. 倒 掉 水 , 猪 肚 需 要 时 才 切 片 , 不 用 的 话 可 以 放 在 雪 柜 里 冷 藏 。<br />
8. 汤 水 的 做 法 :<br />
准 备 一 锅 水 , 里 面 加 入 搞 碎 的 白 胡 椒 粒 , 煮 滚 后 加 入 鸡 肉 块 、 大 洋 葱 、 红 萝 卜 、 包 菜 和<br />
银 杏 。 鸡 肉 煮 熟 后 加 入 切 片 的 猪 肚 , 用 盐 调 味 。<br />
3. 最 好 趁 热 吃 , 带 点 咸 味 的 外 皮 酥 脆 , 裹 着 甜 甜 又 软 软 粘 粘 的 年 糕 , 绝 配 !<br />
温 馨 小 提 示 :<br />
• 要 用 温 火 慢 慢 煮 , 同 时 不 要 加 盖 才 能 保 持 汤 水 的 清 澈 。<br />
