Situation Overview<br />

Low staff productivity and support levels, sparse meal options and the need to cater to a<br />

growing international student population required a complete revamp to Lyndon Institute’s<br />

student dining program.<br />

In 2015, <strong>Aladdin</strong> developed a plan enhancing the client’s student dining experience and increasing<br />

food service staff skills. Additional requests included improving food quality and presentation, as<br />

well as expanding the current menu by emphasizing nutrition, wellness and food allergy awareness.<br />

Business Challenge<br />

Mediocre food quality, low staff productivity and little employee engagement required a<br />

comprehensive facility overhaul. <strong>Aladdin</strong>’s revamped plan allowed the client to retain its hourly<br />

staff and FSD and acquire a much-needed hands-on management style. In addition, increasing<br />

service speeds, upgrading catering services and event planning, and implementing sustainability<br />

initiatives were critical. <strong>Aladdin</strong> created a clear and understandable marketing program for<br />

campuswide communications.<br />

leader, providing fresh produce from the school’s own greenhouses<br />

served in the fall, and local dairy, meat, fruit and other Vermont<br />
