CASE STUDY
LYNDON INSTITUTE
Situation Overview
Low staff productivity and support levels, sparse meal options and the need to cater to a
growing international student population required a complete revamp to Lyndon Institute’s
student dining program.
In 2015, Aladdin developed a plan enhancing the client’s student dining experience and increasing
food service staff skills. Additional requests included improving food quality and presentation, as
well as expanding the current menu by emphasizing nutrition, wellness and food allergy awareness.
Business Challenge
Mediocre food quality, low staff productivity and little employee engagement required a
comprehensive facility overhaul. Aladdin’s revamped plan allowed the client to retain its hourly
staff and FSD and acquire a much-needed hands-on management style. In addition, increasing
service speeds, upgrading catering services and event planning, and implementing sustainability
initiatives were critical. Aladdin created a clear and understandable marketing program for
campuswide communications.
Our Solution
We proposed an aggressive retail setting and services revamp with enhanced menu offerings and
extensive employee training.
Key elements:
``
``
``
``
Food court-style service featuring Aladdin’s signature brands and international street-food
concepts
A la carte program expansion
Servery and dining room update, featuring modern decor and technology (programmable
LED digital menu boards)
Dinner and weekend meal service upgrades
Business Benefits
Our client is confident the dining room/servery renovation, combined
with the foodservice program improvements, will significantly enhance
new student recruitment and positively impact student retention.
Cost Benefits
Lyndon Institute is currently operating on target to meet budgeted
projections through an enhanced level of service and an improved
food service program.
Impact On Morale
``
``
``
Team: Employee morale and performance boost via
repositioning staff into well-aligned jobs.
End users: Dramatically improved presentation and quality of
daily food offerings, catering and other special functions.
Improved Guest Satisfaction
Lyndon’s enhanced dining area is an invaluable tool for student
recruitment and retention. A new sense of community among
students in the modern, welcoming dining hall creates a pleasant
dining experience.
In addition, Lyndon Institute is recognized as a local food movement
leader, providing fresh produce from the school’s own greenhouses
served in the fall, and local dairy, meat, fruit and other Vermont
foods served year-round.
‘‘
Our food offerings have improved
dramatically and revenue is on track
to surpass last year. We look forward
to our continued partnership.
