Thai coconut &<br />

Dressing<br />

45ml toasted sesame oil<br />

Juice of a small lime<br />

Half tsp (5g) of honey<br />

Half cm fresh ginger, grated<br />

1 tsp (5g) of tamari sauce<br />

Stock<br />

400ml organic full fat coconut milk<br />

1 cm of fresh ginger, finely chopped or grated<br />

2 small gloves of garlic, finely chopped<br />

1-2 tsp (5-10g) of green Thai curry paste<br />

Half tsp (5g) of ground turmeric<br />

200ml vegetable stock<br />

2 spring onions, finely sliced<br />

150g of Chinese cabbage, roughly chopped<br />

2 small carrots, thinly sliced<br />

1 tbsp (15g) of tahini, plus extra for serving<br />

1-2 tsp (5-10g) tamari sauce<br />

Half bunch of coriander, roughly chopped<br />

1 small red chilli, seeds removed & finely sliced<br />

Hot food actually helps to cool down the body,<br />

so don’t be afraid of cooking up a hot pot in 30C<br />

heat. Since <strong>June</strong> always brings a lot of freshness<br />

from seasonal produce, a side salad with lots of<br />

fragrant herbs and a lovely lime and coriander<br />

dressing make the perfect addition.<br />

There are a number of nutritional highlights<br />

featuring in this summer bowl and salad.<br />

We have good proteins and fats from the fresh<br />

fish, antioxidants, minerals and vitamins from<br />

the lettuce, herbs and spices, and the Chinese<br />

cabbage and carrots bring a good amount of<br />

vitamin A , K and C.<br />

The cooling papaya in the salad not only adds a<br />

touch of orange and balancing sweetness to this<br />

dish, it also delivers some fabulous enzymes to<br />

help support digestion.<br />

Side salad<br />

250g of romaine lettuce<br />

30g of fresh coriander<br />

25g of fresh Thai basil<br />

25g of fresh mint<br />

150g of papaya, cut in small cubes or slices<br />
