Eating in
Thai coconut &
fish dumpling
summer bowl
Diana Warrings suggests a superquick
and easy lunch or dinner dish
to enjoy as the weather improves
Half tsp (5g) of ground turmeric
200ml vegetable stock
2 spring onions, finely sliced
150g of Chinese cabbage, roughly chopped
1-2 tsp (5-10g) tamari sauce
Half bunch of coriander, roughly chopped
1 small red chilli, seeds removed & finely sliced
Hot food actually helps to cool down the body,
so don’t be afraid of cooking up a hot pot in 30C
heat. Since June always brings a lot of freshness
from seasonal produce, a side salad with lots of
fragrant herbs and a lovely lime and coriander
dressing make the perfect addition.
There are a number of nutritional highlights
featuring in this summer bowl and salad.
We have good proteins and fats from the fresh
fish, antioxidants, minerals and vitamins from
the lettuce, herbs and spices, and the Chinese
cabbage and carrots bring a good amount of
vitamin A , K and C.
The cooling papaya in the salad not only adds a
touch of orange and balancing sweetness to this
dish, it also delivers some fabulous enzymes to
help support digestion.
Side salad
250g of romaine lettuce
30g of fresh coriander
25g of fresh Thai basil
