Potato Report<br />
Prices remain under downward pressure<br />
with yields considerably higher than 2008.<br />
Quality remains excellent with dry matters<br />
in the region <strong>of</strong> 19-21% among frying<br />
varieties. Adverse weather has affected<br />
harvesting in late August - early September<br />
but ample supplies are available to satisfy a<br />
depressed market.<br />
Main crop continues to develop well and<br />
again sample liftings indicate a much better<br />
yield than 2008. We all need to pray for a<br />
dry spell in order that the crop can be<br />
harvested in late September. It is hoped<br />
that we can revive the British Quality Chip<br />
Charter once main crop is stored. This is a<br />
guarantee that potatoes carrying the logo<br />
are the best for chipping and have passed<br />
a number <strong>of</strong> requirements before qualifying<br />
to carry the BQCC logo. However more on<br />
this in next months Review.<br />

<strong>Fish</strong> Report<br />
Supplies <strong>of</strong> Cod remain abundant and this is reflected in the price ie £99 for a 60lb<br />
case <strong>of</strong> 8-16oz Icelandic fillets. <strong>The</strong> quality <strong>of</strong> this fish is excellent and the taste is<br />
delicious. <strong>The</strong> market will remain oversupplied for some months to come which is good<br />
news for the fish frying trade.<br />
Haddock supplies are also good and the quality has improved after spawning. Prices<br />
for Frozen at Sea Haddock are similar to Cod.<br />
Just a word <strong>of</strong> forewarning, next year sees the introduction <strong>of</strong> the <strong>Fish</strong> Names &<br />
Labelling Act. <strong>The</strong> only implication to our trade is that we will need to inform customers<br />
<strong>of</strong> the type <strong>of</strong> fish we are serving. To just say ‘<strong>Fish</strong> and Chips’ on the menu will no<br />
longer be acceptable, so get your menu in order.<br />

<strong>The</strong> extraction ductwork<br />
from your frying range is a<br />

Most insurance companies have now included a<br />
clause in their policies as a condition <strong>of</strong> cover<br />
against fire similar to “<strong>The</strong> extraction ductwork<br />
from the frying range should be cleaned along<br />
its entire length to remove potentially flammable<br />
grease deposits, by an outside specialist<br />
contractor, at regular intervals not exceeding 12<br />
months”.<br />
When employing pr<strong>of</strong>essional cleaning<br />
contractors, be aware that some can literally ‘cut<br />
corners’. Bends and corners <strong>of</strong> ducts <strong>of</strong>ten trap<br />
grease and are hard to access so can be all too<br />
easy to ignore.<br />
Also, many businesses rely on range servicing<br />
companies to carry out this cleaning work,<br />
usually to save on costs. However they do not<br />
specialise in cleaning ductwork systems and the<br />
service they provide is limited to scraping out any<br />
grease they can reach from access holes in the<br />
ductwork, the fan housing and the grease sump.<br />
<strong>The</strong>y are unable to deal with long runs <strong>of</strong><br />
ductwork, tall vertical ducts and underground<br />
sections. On a typical range with 12 meters <strong>of</strong><br />
ductwork a range servicing company can be<br />
expected to partially clean 2 – 3 meters at best<br />
(Less than 25% <strong>of</strong> the system).<br />
If a fire occurs within the extraction system<br />
and can be shown to be associated with<br />
inadequate cleaning, it could jeopardise a<br />
claim for loss or damage.<br />

<strong>The</strong> Ready Steady Cook star –<br />

pans!” – has rattled fish and chip<br />
shop owners by launching a No<br />
Chip Week.<br />
Ainsley, 52, wants us to stop<br />
sc<strong>of</strong>fing our lifetime average 13<br />
kilos <strong>of</strong> fat.<br />
But takeaway bosses have branded<br />
him a hypocrite because he once<br />
promoted <strong>National</strong> Chip Week.<br />
And they say he is ignoring the<br />
nutritional value <strong>of</strong> the nation’s<br />
<strong>The</strong> <strong>National</strong> <strong>Federation</strong> <strong>of</strong> <strong>Fish</strong> <strong>Friers</strong> has a<br />
vested interest in this story as it affects the<br />
livelihoods <strong>of</strong> our members.<br />
<strong>The</strong> facts are that chips form a valuable part<br />
<strong>of</strong> a balanced diet being high in<br />
carbohydrates and if cooked correctly, low in fat.<br />
I also feel that Mr Harriott is being a little hypocritical<br />
having presented the awards to the <strong>Fish</strong> and Chip Shop<br />
<strong>of</strong> the year twice in recent years.<br />

<strong>The</strong>re’s a saying ‘Up North’ that ‘there’s good stuff in little<br />
bundles’. And nothing could be more true <strong>of</strong> Cr<strong>of</strong>t St<br />
<strong>Fish</strong>eries, in the village <strong>of</strong> Farsley, near Leeds.<br />
<strong>The</strong> main shop is about the size <strong>of</strong> an average family<br />
bathroom, while all the prep and storage area has been<br />
ingeniously crammed into the cellar, making the most <strong>of</strong><br />
every square inch.<br />
And shop boss Rafael Chandler, an occasional tutor at the<br />
NFFF training school, just loves it. Originally he, and his<br />
father Rob, had bought the shop as a stepping stone to<br />
bigger things … but former Young Fryer <strong>of</strong> the Year finalist<br />
Rafael, 26, now advocates that size isn’t everything.<br />
“Once we refurbished the building, installed a new Florigo<br />

<strong>The</strong> Carron fish and chip shop is very popular with<br />
holiday makers, being 15 miles south <strong>of</strong> Aberdeen in<br />
the seaside town <strong>of</strong> Stonehaven.<br />
<strong>The</strong> current owners, Tom and Eleanor Wilson<br />
originally purchased <strong>The</strong> Carron in 1982, sold it in<br />
1986, then bought it back in 2001.<br />
It is the birthplace <strong>of</strong> the world famous (or infamous!!)<br />
deep fried mars bars and receives phone calls from<br />
TV and radio stations from all round the world.<br />
Tourists come from all over to try them and have their<br />
photos taken under the banner, all publicity for <strong>The</strong><br />
Carron!
TRAINING COURSES FOR FISH FRIERS<br />
Designed to cover the needs <strong>of</strong> potential, new and established fish friers.<br />
3 Day – <strong>The</strong> course syllabus includes chip preparation,<br />
fish preparation and batter mixing on all three days.<br />
Cooking <strong>of</strong> prepared products, again on all three days.<br />
Good oil management using our two full size frying<br />
ranges, one traditional and one high efficiency. One range<br />
uses vegetable frying medium and the other beef dripping.<br />
Managing simple accounts and dealing with VAT. Portion<br />
Control and packaging. Lectures covering Frying Range<br />
management, Food Hygiene and Health and Safety<br />
requirements complete an absorbing three days learning<br />
best practice, not just how to carry out practical frying<br />

CIEH level 2 Award in Food Safety in Catering. Foundation in Health and Safety Certificate.<br />
Increasingly Environmental Health Officers are insisting that all food handlers hold the minimum<br />
qualification in Food Hygiene, and the creation <strong>of</strong> a Health and Safety Policy is <strong>of</strong>ten demanded.<br />
<strong>The</strong> <strong>Federation</strong> <strong>of</strong>fers all those attending courses an opportunity to obtain either or both <strong>of</strong> these<br />
Qualifications at an additional cost <strong>of</strong> £50.00 each.<br />
Each student electing to take either or both these examinations will receive Distance Learning<br />
modules by recorded delivery post. <strong>The</strong>se modules should be studied before attending the course<br />
and, in the case <strong>of</strong> the three day course an examination consisting <strong>of</strong> a multiple choice paper will<br />
take place on the Tuesday afternoon. Please ensure that you bring your module/s with you.<br />
Overnight accommodation is available at reasonable<br />
rates if required. <strong>The</strong> number <strong>of</strong> students per course<br />
