I believe that education<br />

encompasses more than stepping into<br />

a classroom,” says Pam Fairchild of<br />

Amherst, Wisconsin.<br />

“Every person is an educator<br />

whether it is teaching someone how<br />

to read, how to function in a diverse<br />

society or how to cook a delicious<br />

meal. Parents, friends, co-workers,<br />

teachers, bus drivers and secretaries<br />

are all educators.<br />

“I became best friends with a girl<br />

who lived down the street from me.<br />

Carol and I would sit in the breezeway<br />

to sip a lemonade and read or color.<br />

Her family taught me how to roller<br />

skate and swim.<br />

“They also taught me about<br />

unconditional love, tolerance and<br />

understanding. Their older son was a<br />

special needs child. I was 10 years old<br />

and had never met anyone like him.<br />

This family taught me to experience<br />

aspects of their family life, heritage<br />

and traditions. To this day I think<br />

of them with fondness and love for<br />

all of the valuable life lessons they<br />

taught me.<br />

“Today it is necessary to have a high<br />

school education and in most cases a<br />

college education. In my opinion the<br />

first 12 years of school give you the<br />

tools necessary to function in society<br />

and let you explore areas that may<br />

interest you for the future.<br />

“I went to a community college<br />

right out of high school and earned<br />

an Associate’s Degree. I transferred to<br />

another college and then started my<br />

family, so I delayed the continuation<br />

of college. In 2003 when my youngest<br />

son Tim was graduating from high<br />

school he encouraged me to go back<br />

to school. I did, one class at a time.<br />

“The challenges of going back to<br />

school were many, but I knew that<br />

continuing my education would<br />

open new opportunities for me. The<br />

support from my family, friends and<br />

fellow students was amazing. I kept<br />

a card in my backpack that I would<br />

take out from time to time to read.<br />

The encouraging words on it kept me<br />

going.<br />

“It was a great accomplishment for<br />

me to earn my degree. Education is<br />

the path to success and although the<br />

path may get rough you can always<br />

learn and take something from it.<br />

“I have worked with the school<br />

district for 19 years. My current<br />

position is like a Sudoku puzzle. I<br />

put together schedules for 1,600<br />

students. At times it’s challenging, but<br />

eventually it all works out.<br />

“I enjoy contributing to schoolrelated<br />

committees whether it’s<br />

teaching students about nutrition or<br />

Grilled Teriyaki Chicken<br />

This is a simple recipe from Pam that is sure to please<br />

even the pickiest eater. Serve with rice and a veggie<br />

for a complete meal.<br />

4-6 boneless, skinless chicken breasts<br />

1<br />

⁄2 Cup sugar<br />

1 Cup water<br />

3 TB. cornstarch<br />

1 1 ⁄4- ⁄3 Cup lemon juice (juice of 2 lemons)<br />

1<br />

⁄2 tsp. POWDERED GINGER<br />

1<br />

⁄4 Cup soy sauce (we use low sodium)<br />

1 ⁄2-1 tsp. LEMON PEPPER<br />

Spray a grill pan or foil pan with non-stick cooking<br />

spray. Add the chicken. In a bowl, combine the<br />

sugar, water, cornstarch, lemon juice, GINGER, soy<br />

sauce and LEMON PEPPER. Mix well. Pour over the<br />

chicken. Heat your grill to medium-high heat. Place<br />

the pan on the grill and cook the chicken for 30-45<br />

minutes. The drippings are great drizzled over rice<br />

and veggies! If you simply can’t wait that long,<br />

place the chicken directly on the grill and cook for<br />

about 3-5 minutes per side.<br />

“There are so many directions we<br />

can take in this world. I’m looking for<br />

a career that will combine my love of<br />

learning, travel, gardening, helping<br />

people and cooking. Does such a job<br />

exist? Maybe not, but in the meantime<br />

I’m where I believe I am supposed to<br />

be and volunteer anyplace I may be<br />

needed.”<br />
