…(J) The nursing home shall s<strong>to</strong>re, prepare, distribute and serve food under sanitary conditions and<br />
in a manner that protects it against contamination and spoilage in accordance with food service<br />
requirements of Chapter 3717-1 of the Administrative Code.<br />

Shall be provided in such size as required <strong>to</strong> implement the type of food service system selected:<br />
…7) Warewashing in a room or an alcove separate from food preparation and serving areas. This<br />
shall be provided for receiving, scraping, sorting, and stacking soiled tableware and for transferring<br />
clean tableware <strong>to</strong> the using areas. A lava<strong>to</strong>ry shall be conveniently available.<br />
8) Pot washing facilities.<br />
9) Sanitizing facilities and s<strong>to</strong>rage areas for cans, carts, and mobile tray conveyors.<br />
10) Waste s<strong>to</strong>rage facilities in a separate room which is easily accessible <strong>to</strong> the outside for direct<br />
pickup or disposal.<br />
…12) Toilets for dietary staff with handwashing facility immediately available.<br />
13) Jani<strong>to</strong>r's closet located within the dietary department. It shall contain a floor recep<strong>to</strong>r or service<br />
sink and s<strong>to</strong>rage space for housekeeping equipment and supplies.<br />
e) Dishwashing and handwashing.<br />
1) The dishwashing system and procedures shall be approved by the Department.<br />
