) Office. The office space required in subsection (3)(d) of this rule may be outside the dietary<br />

services area if the facility has been continuously licensed since January 1, 1992 unless otherwise<br />

provided by OAR 411-087-0010.<br />

c) Closet. The jani<strong>to</strong>r's closet required in subsection (3)(e) of this rule may be outside the dietary<br />

services area if the facility has been continuously licensed since January 1, 1992 unless otherwise<br />

provided by OAR 411-087-0010. In such circumstances, the facility shall have a documented<br />

system <strong>to</strong> ensure mops and other cleaning supplies used in nursing or laundry areas are not used in<br />

the dietary services area.<br />

d) Cart S<strong>to</strong>rage/Sanitizing. If located outside, the cart sanitizing and s<strong>to</strong>rage area is not required <strong>to</strong><br />

be paved and covered if the facility has been continuously licensed since January 1, 1992 unless<br />

otherwise provided by OAR 411-087-0010.<br />

§ 211.6. <strong>Dietary</strong> services.<br />

… f) <strong>Dietary</strong> personnel shall practice hygienic food handling techniques. An employee shall wear<br />

clean outer garments, maintain a high degree of personal cleanliness and conform <strong>to</strong> hygienic<br />

practices while on duty. Employees shall wash their hands thoroughly with soap and water before<br />

starting work, after visiting the <strong>to</strong>ilet room and as often as necessary <strong>to</strong> remove soil and<br />

contamination.<br />

§ 207.4. Ice containers and s<strong>to</strong>rage. Ice s<strong>to</strong>rage containers shall be kept clean, and ice shall be<br />

handled in a sanitary manner <strong>to</strong> prevent contamination.<br />

27.4 Adequate space, equipment and supplies shall be provided for the efficient, safe and sanitary<br />

receiving, s<strong>to</strong>rage, refrigeration, preparation and service of food and other related aspects of the<br />
