In the high art of bak<strong>in</strong>g, a dist<strong>in</strong>ction is made<br />
between a bak<strong>in</strong>g atmosphere at rest and an<br />
atmosphere <strong>in</strong> motion. The top professionals<br />
know very well how to use each type of heat<br />
to get the best out of the various types of baked<br />
goods.<br />
The MIWE <strong>backcombi</strong> gives bakers the scope<br />
they need to achieve their goals. It comb<strong>in</strong>es<br />
the heat <strong>in</strong> motion of a MIWE <strong>aero</strong> convection<br />
oven with the stationary bak<strong>in</strong>g atmosphere<br />
of the MIWE condo rack oven. In a very small<br />
space (which you can also use for a suitable<br />
proof<strong>in</strong>g oven), it merges two oven system<br />
to provide exception bak<strong>in</strong>g versatility and<br />

The MIWE condo is another of our multi-func-<br />
tional units. You can <strong>in</strong>tegrate versions with<br />
one or two bak<strong>in</strong>g chambers <strong>in</strong>to the back-<br />
combi. It has everyth<strong>in</strong>g that a genu<strong>in</strong>e bakery<br />
oven should have: welded, steam-tight bak<strong>in</strong>g<br />
ovens with an outer cover<strong>in</strong>g made of high-<br />
grade sta<strong>in</strong>less steel, sta<strong>in</strong>less steel electrical<br />
heat<strong>in</strong>g elements and a steam-tight, encap-<br />
sulated high-power steam device. This is the<br />
reason why it can be used for the entire bak-<br />
<strong>in</strong>g spectrum, from light pastries to hearty<br />
farm bread. Bread baked on its stone slabs<br />
can be classified as stone oven bread <strong>in</strong> ac-<br />
cordance with regulations laid down by the<br />
German Agricultural Cooperative.<br />
So it should not surprise you if you sometimes<br />
f<strong>in</strong>d the condo back <strong>in</strong> the bak<strong>in</strong>g room or,<br />
because it is a real professional oven, <strong>in</strong> school<br />

freedom you need. The FP control gives you 30<br />
programmable buttons and the convenience<br />
of be<strong>in</strong>g able to start entire bak<strong>in</strong>g programs<br />
at the s<strong>in</strong>gle press of a button. There is also<br />
an optional MIWE AS analogue control.<br />
With both controllers, you can enter parameters<br />
to control all the details of the bak<strong>in</strong>g cycle:<br />
bak<strong>in</strong>g time, volume of steam, steam control<br />
valve and hood.
