When Trung Pham was 22, he<br />
moved with his family to Texas<br />
from Vietnam, shortly be<strong>for</strong>e<br />
enrolling at the University of<br />
Texas. While he studied computer<br />
science, he worked odd hours coding<br />
firmware <strong>for</strong> IBM and washed<br />
dishes, cooked noodles and waited<br />
tables at his brother, Minh’s, restaurant<br />
Dong Nai in South Austin.<br />
When he graduated, rather than<br />

decided to open their own restaurant<br />
in Hutto.<br />
“The restaurant business is very<br />
difficult, lots of hard work. You<br />
spend a lot of time there, but it’s<br />
also a lot of fun,” Pham said. “It’s<br />
very, very interesting because you<br />
see people every day and everyone<br />
has different ideas. If I stay home, I<br />
really miss it because I like to talk<br />
to customers. I like the kitchen.”<br />

2005, a couple of <strong>year</strong>s after helping<br />
a relative move to Hutto.<br />
Pham believed the area had<br />
great potential <strong>for</strong> business and no<br />
one offered Asian food.<br />
Popular appetizers include the<br />
egg roll ($1.25), which is served<br />
with a tangy sweet and sour sauce.<br />
Others prefer steamed or fried<br />
dumplings ($4.99), which are filled<br />
with minced vegetables and pork.<br />
Weekday lunch specials start<br />
at $6.25 and come with soup,<br />
an egg roll and rice. Entrées<br />
include a wide range of Vietnamese<br />
and Chinese dishes.<br />
Phở tái chín ($6.99) is a<br />
traditional Vietnamese soup of<br />
beef broth, vermicelli noodles<br />
and thinly sliced round steak<br />
cuts served with a side of fresh<br />
vegetables.<br />
Those who like bold, spicy flavors<br />
can try basil shrimp ($9.25),<br />
a Chinese stir-fry of steamed<br />
shrimp, snow peas, sprigs of fresh<br />
basil, mushrooms and sliced<br />
jalapeños in a brown garlic sauce.<br />

is served on the side.<br />
Pham picked a combination<br />
Vietnamese-Chinese restaurant<br />
because it’s what he knows<br />
best—his mother is Chinese, his<br />
father is from Vietnam.<br />
“We know both cultures, so<br />
that’s why we decided to offer both<br />
foods,” Pham said. “The restaurant<br />
is named <strong>for</strong> my dad’s hometown<br />
city where I grew up.”<br />
The Dong Nai River cradles<br />
Biên Hòa in the south of Vietnam.<br />
During the Vietnam War, the Biên<br />
Hòa Air Base and Long Binh military<br />
base were major centers <strong>for</strong><br />
U.S. <strong>for</strong>ces. Today, the city of about<br />
3 million people is also known <strong>for</strong><br />
its global manufacturing industry<br />
and waterfront.<br />
As a child, Pham heard the<br />
roar of military jet engines every<br />
day and spent a lot of time near<br />
the river. And even now, family<br />
is not far away.<br />
Pham meets with his brother<br />
at least once a week to talk shop.<br />
They discuss food quality, supply<br />
problems and share successes.<br />
“The cost of food, cost of retail<br />
space [are] my top concerns<br />
today, it’s a tough one to deal<br />
with inflation,” he said. “We discuss<br />
and help each other decide<br />
on things we don’t know. We<br />
depend on family, so we always<br />
stick together.”<br />

A guide to traditional foods and<br />
condiments<br />
Some diners avoid some Vietnamese<br />
dishes because they are unfamiliar with<br />
them or don’t know how to eat them.<br />
Bun is a Vietnamese dish of hot<br />
vermicelli noodles layered over a bed of<br />
lettuce and topped with a choice of stirfried<br />
meat or spring rolls.<br />
Cà phê sũa đá is a Vietnamese iced<br />
coffee drink. A shot of chicory coffee is<br />
poured into a drip filter over condensed<br />
milk in a short glass. Diners remove the<br />
filter, mix the coffee and milk, then pour<br />
it into a tall glass filled with ice.<br />
Phở, a traditional Vietnamese soup, is a<br />
beef broth served with vermicelli noodles,<br />
choice of meat and a side of fresh<br />
vegetables, usually bean sprouts, sliced<br />
jalapeños and sprigs of mint and cilantro.<br />
