Business page 6 Liz Ellis Reporter The world of wine is a complicated place, especially for the casual wine drinker. There are probably a few hundred different types of wines and so many things that go into making a certain wine taste the way it does; the type of grape, type of soil, the way the wine is made and even where it is grown or when it’s harvested. The age-old rule of matching the color of the wine with the color of the meat—white wine with fish and red wine with beef—is probably familiar to most people. However, Leesa Tilotta, owner of The Wine Rack, said that rule is a bit outdated. “If it’s easy for people to remember, and choose a wine that is probably going to fit their meal, then I won’t dispute it,” Tilotta said. “But there are some serious examples that challenge that…You want something that compliments [your food]. Different wines for different foods… there really isn’t a hard, fast rule.” The best way, she said, was to con- Wining and Dining sider the weight and fat content of your food with your wine. With really fatty foods, like caviar or cheese, an acidic wine like champagne will go best, as it will cut through the fatty taste and they will compliment each other. “ I think that if you’re looking to compliment y o u r dish, t h e n you’re probably going to have to choose a dry wine, because if you drink something sweet and then you eat something salty and savory like olives, your next bite is going to taste bitter,” Tilotta said. When trying a wine with a meal, it is important to keep in mind that some foods and wines will just clash due to acids and tannins in the wine and/or foods. “The old saying that chocolate goes well with champagne, I always thought was a fallacy,because it doesn’t,” Tilotta s a i d . “Chocolate has a lot of tannin in Photo by Liz Ellis Leesa Tilotta, owner of The Wine Rack, shared some of her wine expertise with SEMO Times. it.” Some wines will change the flavor of certain foods, Tilotta said, because they coat the inside of your mouth. So it’s usually a good idea to start with a wine you enjoy drinking by itself and then work from there. SOUTHEAST MISSOURI’S NEWS-MAGAZINE OF POLITICS AND CULTURE “For most of our customers who come in and they don’t know what they want, I like to say ‘What was the last bottle of wine that you had and you really liked?’” Tilotta said. “I would probably choose a sweet red or a sweet white for someone who didn’t drink much wine.” The Wine Rack has about 1,000 bottles of wine, all organized by color and taste palate—sweeter on the left to drier on the right. Tilotta said that the idea was to make buying wine simpler for people who aren’t as familiar with wines, but like to try new things. In addition to their impressive wine selection, The Wine Rack also offers about 120 different types of beers, specialty spirits, and specialty cocktails featuring botanical flavors and additions. The restaurant also serves food all day and offers a wide variety of coffeehouse-inspired drinks including iced mochas, smoothies and Italian sodas. All they have to do is extend their hands and it comes back full of special interest money. And all the while it is their policies that have sent our national debt soaring to devastating levels, increased unemployment and caused the price of gas and groceries to increase. We simply cannot allow them any more chances to ruin this country with their schemes. To do so would be beyond insanity. We must do things differently! And we are doing things differently! Together we are standing against Washington and the special interests and standing up for the principles that will save this country. We will win this fight! We have generations of Americans counting on us and we will not let them down.
