Catering and Housekeeping Manager - Kids Cancer Care

Health & Safety
• The facilities will be used for specialized oncology camps, camps for children with chronic illness
and children’s charity groups; therefore a superior level of cleanliness and hygiene will be
required in all facilities;
• Acquire a clear understanding of childhood cancer issues and the hygienic standards required
for immune compromised individuals;
• Report any problems with equipment, risks, issues in the kitchen;
• Ensure that all health and safety codes are followed;
• Follow specific dietary requirements for campers and staff;
• Understand and implement allergy-control procedures when necessary;
• Appropriate record keeping regarding allergies and special meal requirements;
• Scheduling and assigning duties for all kitchen and cleaning staff;
• Follow procedures for opening and closing the kitchen.
Food Preparation
• Oversee and organize the preparation, serving and cleaning;
• Design and plan menus for camp sessions, camp activities and day-use catering for user groups;
• Be flexible to special dietary requests that may occur last minute;
• Work with staff or user-groups for special theme meals;
• Help staff with food-related programs;
• Cater to all diets including vegetarian or religious-based restrictions.
Administration
• Hire, train and supervise kitchen and cleaning staff (cooks, dishwashers, cook’s helpers,
cleaners);
• Implement appropriate evaluation systems of kitchen operations, and facility cleaning;
• Supervise and implement camp recycling program;
• Be responsible for proper care, cleaning and storage of all kitchen equipment;
• Liaise with the camp management team to coordinate schedules and catering needs for usergroups;
• Represent KCC and foster excellent relationships with user groups.
Client Relations/Hosting
• Development and implementation of hosting practices to support non-programming groups;
• Establishing and training employees in the role of hosting, customer service and client care;
• Coordinate catering and non-programming bookings including room bookings and A.V. needs.
Marketing and Sales
• Play a key role in generating revenue through camp rentals and catering;
• Work collaboratively with the marketing team to develop marketing plans and generate sales;
• Work closely with the camp program manager in scheduling bookings, completing rental
agreements and collecting fees.
• Oversee hosting and hospitality for non-camp programmed events and services at Camp Kindle.
