“Kosher Chicken Market—Fresh Killed Hourly” reads<br />
the Yiddish sign of the <strong>East</strong> <strong>Side</strong> store. A complex dietary<br />
logic underlies the Jewish insistence that chickens must<br />
be newly killed before they are eaten and that before<br />
they are cooked they must be soaked in water for half<br />
an hour and drained and salted for an hour.<br />
