Turkey Risot<strong>to</strong><br />
This dish is a perfect way of using up any<br />
lef<strong>to</strong>ver turkey. If you have ham as well you<br />
can happily mix the two <strong>to</strong>gether.<br />
Serves 6<br />
Takes 30 minutes<br />
900ml approximately, chicken s<strong>to</strong>ck or<br />
fresh turkey s<strong>to</strong>ck made from the carcass.<br />
1 tbsp olive oil<br />
1 red onion, finely chopped<br />
25g unsalted butter<br />
400g Carnaroli risot<strong>to</strong> rice<br />
150ml dry white wine<br />
Approximately 200g cold turkey,<br />
chopped or shredded<br />
2 tbsp fresh chives, chopped<br />
50g parmesan, grated<br />
Salt and pepper <strong>to</strong> taste<br />
