SPRING RECIPES
Get fresh
After months of food to bolster
the spirit, along comes spring with
a stirring for something fresher,
lighter. Think Welsh lamb, tender
and juicy from the roasting pan;
bright, sharp-flavoured fruit; and a
simple smoked salmon paté.
Smoked salmon paté
with melba toasts
Serves 4 to 6
Approx 20 minutes
200g smoked salmon
100g cream cheese
Half a lemon, zest and juice
1 pinch cayenne pepper
Slightly stale white bread
Chop a third of the salmon and
whizz in a blender with the cream
cheese, lemon juice and cayenne
pepper. When smooth, finely chop
the remaining salmon and stir
through the mixture, adding the
lemon zest. Serve in a dish with a
final sprinkle of cayenne pepper.
For the melba toast, preheat oven
to 180˚C/Gas 4. Cut six slices of
bread as thinly as possible and
discard the crusts. Bake for 10-12
minutes or until golden.
Roast leg of Welsh lamb
with pea and mint stuffing
Serves 6
Approx 3 hours (allow 30
minutes per 450g)
1 leg Welsh lamb
150g fresh peas
75g fresh white breadcrumbs
1 tbsp mint sauce
1 clove garlic, crushed
1 tbsp olive oil
1 egg yolk
1 small bunch rosemary
Salt and freshly ground
black pepper
Preheat oven to 190˚C/Gas 5.
For the stuffing: boil peas until just
tender, rinse under cold water,
drain thoroughly and place in a
blender. Add the breadcrumbs,
mint sauce, garlic, olive oil, egg
yolk, then season. Blend until
smooth. For the lamb: bone the
leg and spread stuffing over the
cut side of the meat. Roll tightly
and secure with string all the way
along. Place in a roasting tin. Stud
small springs of rosemary into
slits cut into the lamb. Season,
then roast. Once cooked, allow to
rest for 10-15 minutes in a warm
place before carving.

Makes 12
Approx 40 minutes plus cooling
150g raspberries
150g blueberries
125g butter (at room
temperature)
125g caster sugar
2 large eggs, beaten
2 tsp vanilla essence
125g self-raising flour, sifted
2 tbsp milk
200g mascarpone
2 heaped tsp icing sugar
Preheat oven to 180˚C/Gas
4. Line a muffin tray with 12
muffin cases. Divide the berries
between the cases, reserving
6 of each type for decoration.
Cream the butter and sugar until
light and smooth. Add the eggs a
little at a time, beating well, then
add 1 tsp vanilla essence. Fold
in the flour, then the milk. Stir
until smooth. Divide the mixture
between the cases and bake for
15-20 minutes until golden and
springy to touch. Remove from
the tin and cool on a wire rack.
Once cool, remove from the
cases and flip berry side up. Beat
the mascarpone with the icing
sugar and remaining vanilla. Top
each bun with the mascarpone
mixture and a berry. Voila!
