Molten Chocolate<br />

Cake Ingredients:<br />

2 3 /4 sticks Unsalted<br />

<strong>Butter</strong>, melted<br />

11 oz. Chocolate, 70%<br />

7/8 cup Granulated Sugar<br />

7/8 cup All Purpose Flour<br />

7 each Large Eggs, whole<br />

8 each Egg Yolks<br />

Molten Chocolate Cake Method:<br />

Combine melted butter and chocolate in stainless steel pan.<br />

Warm over low heat, stirring constantly, until chocolate is<br />

fully blended. Add eggs, egg yolks, sugar and flour; mix until<br />

combined but do not over mix. Use (10) 4 oz. aluminum cups<br />

or ramekins that have been greased and floured and fill with<br />

the mix. Bake at 330°F for approximately 12 minutes. Let<br />

cool a few minutes and unmold; serve immediately.<br />

Vanilla Ice Cream, Vanilla Sauce &<br />

Raspberry Sauce:<br />

Assembly:<br />

Serve warm with vanilla ice cream and vanilla sauce<br />

or raspberry sauce.<br />
