Active Dry Yeast 2.0<br />
<strong>ADM</strong> All Purpose Shortening 4.0<br />
Granulated Sugar 3.0<br />
Salt 2.0<br />
Ascorbic Acid 0.01<br />
Water 66.0<br />
PROCEDURE<br />
1. Mix all ingredients together until gluten development.<br />
2. Divide, scale and round dough into 12 ounce balls.<br />
3. Let rest for 20 minutes.<br />
4. Sheet to desired thickness and dock dough.<br />
5. Proof for 10 minutes.<br />
6. Add toppings.<br />
7. Bake at 425°F for 10 minutes.<br />
