EXPERIENCES The distinctly african trees that crowd the terraced gardens attract a huge variety of bird life, as well as the Vumba’s rare samango monkeys. The deluxe MaKuwa-Kuwa Restaurant, housed in the well-known Victoria Falls Safari Lodge, is launching a new summer menu on September 1. It will feature a new twist on the perennial favourite, warthog. The flame grilled fillet will be served with cheese gratinated dauphinoise potatoes, vegetable julienne with homemade barbecue sauce and flamed black cherries. Newcomers on the menu which are set to ignite taste buds include a walnut and fig salad starter topped with camembert wedges, cucumber involtini and rosa tomato confit, dressed with red wine vinaigrette, and a main of seared kudu fillet served with a fruity polenta chip, mixed vegetables and a cranberry glaze. As well as the more adventurous Zimbabwean game dishes, the à la carte restaurant offers a wide variety of internationally styled cuisine. Split level, with a dramatic view of the Zambezi National Park, and focusing on a central waterhole which attracts wildlife year-round, the restaurant’s setting is unparalleled. Honouring a centuries-old legend of an inimitable royal drum, which, disenchanted with its owner, was lost forever when it “jumped” into the Zambezi River, the MaKuwa-Kuwa Restaurant celebrates the richness of Africa’s heritage with fine fare. The MaKuwa-Kuwa drumbeat is a call to partake of a royal feast.
