<strong>Christmas</strong> 2012 Menu<br />

November 26th - January 6th<br />

This year we have designed a menu th<strong>at</strong> blends<br />

traditional and modern British dishes to cre<strong>at</strong>e gre<strong>at</strong><br />

meal choices for you and your party. Our menu is<br />

based on seasonally available, locally sourced me<strong>at</strong>,<br />

game, fish and vegetables, and our exclusive homemade<br />

desserts.<br />

To Start<br />

Seasonal Soup (v)<br />

Roast Jerusalem Artichoke and Parsnip soup<br />

with home-made rosemary and garlic bread.<br />

Game Terrine<br />

Terrine of local Wild Boar, Venison and Rabbit<br />

with lamb lettuce and pea-shoot salad with<br />

toasted brioche.<br />

Marin<strong>at</strong>ed Mullet<br />

Marin<strong>at</strong>ed grilled fillet of Mullet served on<br />

risotto & Butternut squash cake and roast<br />

pepper in spinach and lemon grass cream.<br />

Mushroom P<strong>at</strong>e (v)<br />

Caramelised Onion and Mushroom p<strong>at</strong>e with<br />

chestnut loaf, herb butter and spicy tom<strong>at</strong>o<br />

Roast Turkey<br />

Traditional Roast Turkey crown served with<br />

chipol<strong>at</strong>a sausage, pork & sage stuffing with<br />

fluffy roast pot<strong>at</strong>o, honey glazed roast winter<br />

vegetables and Brussels sprouts with cranberry<br />

sauce.<br />

Lamb<br />

Four hour slow braised lamb shank in<br />

cinnamon arom<strong>at</strong>ic stock served with crushed<br />

Jersey pot<strong>at</strong>oes, roasted artichoke, Celeriac<br />

and carrot with rosemary Madeira sauce.<br />

Vegetable Wellington (v)<br />

Vegetable Wellington with three bean<br />

r<strong>at</strong><strong>at</strong>ouille, served with Marsala and<br />

horseradish cream sauce, wilted spinach and<br />

roast chestnut.<br />

Salmon<br />

Pan fried fillet of Scottish Salmon with crispy<br />

Calamari, braised Chinese cabbage Scallop<br />

pot stickers and hoi-sin sauce.<br />

Duck<br />

Confit leg of Duck served on Cyder braised<br />

Red cabbage, with cherry fondant pot<strong>at</strong>o<br />

and Thyme sherry jus.<br />
