What is the Cairns Skin Centre (CSC)?<br />
For the first time in Australia there will be a service that offers<br />
a Skin Cancer Clinic, a Plastic Surgeon, a Dermatologist and a<br />
Cosmetic, Laser and Leg Vein clinic at the one location. It will<br />
be a ‘Centre of Excellence’ for all your skin needs. Experienced<br />
clinicians will work together to ensure that you get the best<br />
possible treatment. The centre will open in February 2015 just<br />
behind <strong>Omega</strong> <strong>Health</strong> Medical Centre at Piccone’s Shopping<br />

IGA Roast Vegetable<br />
Salad<br />
Serves: 4 – 6<br />
Preparation time: 45 mins<br />
Ingredients:<br />
• 600g peeled pumpkin<br />
• 250g zucchini<br />
• 1 red capsicum, seeded and deveined<br />
• 1 red onion, cut into wedges<br />
• 1 tbsp olive oil<br />
• 50g rocket<br />
• ⅓ cup balsamic and roasted garlic<br />
dressing<br />
• ¼ cup pine nuts, toasted<br />
Instructions:<br />
1. Preheat oven to 200ºC.<br />
2. Cut pumpkin, zucchini and capsicum<br />
into 3cm chunks.<br />
3. Place in a large baking dish with<br />
onion and oil.<br />
4. Stir to coat.<br />
5. Roast 35 minutes or until vegetables<br />
are tender. Cool.<br />
6. Toss rocket with vegetables.<br />
7. Place in a shallow serving bowl or<br />
on a platter.<br />
8. Drizzle with dressing, then sprinkle<br />
with pine nutswith pine nuts.
