Great Britain is a great nation, especially<br />

when it comes to food. Our taste buds<br />

have developed over the years and we’re<br />

now enjoying a wide range of cuisines right<br />

on our doorstep. Indian, Italian, Mexican,<br />

Spanish, French, Turkish, Greek and Chinese<br />

dishes are no longer delicacies; they’re an<br />

essential part of modern-day British diets.<br />

Before these mouth-watering foods hit<br />

our shores, we still had a fantastic taste for<br />

In recent years, we’ve taken an increasing<br />

interest in our food: where it comes<br />

from, how it’s produced and what’s in it.<br />

Lubcloud Dairy was established five years<br />

ago to cater for milk, and cream, lovers<br />

who crave locally produced, organic dairy<br />

products that don’t just taste delicious<br />

but also take in account the welfare and<br />

well-being of the cows.<br />

Surrounded by beautiful Leicestershire<br />

countryside, Lubcloud Dairy and Lubcloud<br />

Organic Farm are owned and run by Phil<br />

Newcombe. He told <strong>Reflect</strong>: “We started<br />

off in 2005 producing 300 litres of milk, and<br />

we’re now producing 12,000 litres per week.<br />

Our cows graze on pastures that don’t use<br />

any artificial fertiliser, pesticides or herbicides,<br />

meaning or grasses have high levels of<br />

trace elements, vitamins and no harmful<br />

chemical residues. After milking our cows, we<br />

pasteurise their milk and almost immediately<br />

range of foods due to the diversity of the<br />

land. Fertile fields, rural grasslands and<br />

fantastic road links all contribute towards<br />

the excellence of the produce from the<br />

heart of Britain. Also there are a variety of<br />

cheeses produced in the Midlands including<br />

Derby Cheese, Shropshire Blue, Red<br />

Leicester and Stilton.<br />

The best way to experience food is to get<br />

cooking. Cooking from scratch is not only<br />

fun, it’s cheaper than buying ready-made<br />

meals. It’s also healthier, as you can use<br />

fresh, seasonal ingredients, steamed or<br />

grilled to perfection. If you’re not sure what<br />

to cook, pick up a cook book from any<br />

good book store and get cooking!<br />

Phil added: “Our semi-skimmed milk is<br />

our best selling milk, but our cream range<br />

We’re hoping to launch a range of yoghurts<br />

before Christmas, and have just launched<br />

a range of sausages. The sausages came<br />

about because we were wasting a lot of milk<br />

in order to meet our cream demands, so<br />

Finally Phil added: “Our milk and cream is<br />

healthier than standardised milk because<br />

we don’t homogenise our milk and cream.<br />

Homogenisation started in the 1930s, and<br />

involves an aggressive, mechanical process<br />

that involves passing milk through pipes and<br />

fine filters at high pressures, which breaks<br />

down the fat portion of the milk in to very<br />

small globules. These tiny fat globules remain<br />

in suspension and do not rise to the top of<br />

the milk. There’s a link between a rise in<br />

cholesterol levels and the homogenisation<br />

process, so as an organic and natural dairy<br />

farm, we ensure our milk and cream is as<br />

close as it can be to how nature intended.”<br />
