About the Symposium
Food consumption patterns are rapidly changing all over the world,
particularly in Asia. Urbanization, rising incomes, and changing lifestyles
have diminished the consumption of traditional meals based on cereals,
vegetables, and root crops. ‘Eating out’ and the use of processed
and convenience foods have become major parts of people’s lives.
These changes in food choices and eating patterns have been
attributed, in part, to the rise in health problems,
such as obesity, diabetes, cancer, and heart
disease.
As scientists, educators and communicators
of food and health messages, we have to
understand the what, when, why, where and how often of eating behavior in
order to know how to influence these behaviors for good health.
This two-and-a-half day symposium is designed to enhance our understanding
of the determinants of consumer food choice and examine how individual behavior
can be modified to promote health and prevent disease. The symposium will
present the latest findings and methods in consumer research, focusing on
food and health behavior.
