About the Symposium<br />

<strong>Food</strong> consumption patterns are rapidly changing all over the world,<br />

particularly in Asia. Urbanization, rising incomes, and changing lifestyles<br />

have diminished the consumption of traditional meals based on cereals,<br />

vegetables, and root crops. ‘Eating out’ and the use of processed<br />

and convenience foods have become major parts of people’s lives.<br />

These changes in food choices and eating patterns have been<br />

attributed, in part, to the rise in health problems,<br />

such as obesity, diabetes, cancer, and heart<br />

disease.<br />

As scientists, educators and communicators<br />

of food and health messages, we have to<br />

understand the what, when, why, where and how often of eating behavior in<br />

order to know how to influence these behaviors <strong>for</strong> good health.<br />

This two-and-a-half day symposium is designed to enhance our understanding<br />

of the determinants of consumer food choice and examine how individual behavior<br />

can be modified to promote health and prevent disease. The symposium will<br />

present the latest findings and methods in consumer research, focusing on<br />

food and health behavior.<br />
