PREPARATION<br />
1. Preheat grill to 400 F. Meanwhile, in large dish or re-sealable food-storage plastic<br />
bag, mix steak, onion, peppers and fajita seasoning; stir in a dish or turn bag to<br />
coat.<br />
2. Place fajita pan on pre-heated grill. When fajita pan is heated, coat lightly with<br />
cooking oil and place steak and vegetables on bottom surface, spreading evenly.<br />
Cook 4 to 6 minutes or until steak has reached desired doneness and vegetables<br />
are crisp-tender. Remove fajita pan from the grill using the handle cover and<br />
place on the wooden base for serving. Squeeze fresh lime over the meat and<br />
vegetables.<br />
3. Spoon steak and vegetables down center of each tortilla. Top each fajita with<br />
sour cream and salsa and any other toppings you would like. Bring sides of each<br />
tortilla up over filling; press to seal.<br />

PREPARATION<br />
1. Prepare the vinaigrette. In a bowl whisk together the olive oil, Shiraz, balsamic<br />
vinegar, Dijon mustard and rosemary. Season with salt and coarsely ground black<br />
pepper to taste.<br />
2. In a large bowl or sealable container, combine all vegetables together. Add ½ of the<br />
vinaigrette to container, seal and refrigerate for one hour, turning occasionally to<br />
marinate evenly. Reserve remaining ½ of vinaigrette to toss with vegetables after grilling.<br />
3. Preheat grill to medium-high heat.<br />
4. Remove vegetables from marinade and arrange in a Napoleon® Multi Grill Basket.<br />
Place basket onto grill and cook vegetables, turning basket and basting occasionally<br />
with marinade, until lightly charred and tender, about 6-8 minutes per side.<br />
5. Remove basket from grill and allow to cool slightly. Remove vegetables and cut into<br />
large chunks. Place vegetables into a large bowl, toss with reserved Red Wine<br />
Balsamic Vinaigrette, season with salt and coarsely ground black pepper to taste.<br />
Arrange onto serving platter and top with crumbled goat’s cheese and chopped fresh<br />
rosemary.<br />

PREPARATION<br />
1. Preheat barbecue on high.<br />
2. Combine lemon juice and paprika in a shallow glass<br />
dish. Add fish and toss to coat. Cut each strip of<br />
bacon in half, and wrap around the chunks of fish.<br />
Secure well on a skewer (the double pronged version<br />
work well).<br />
3. Reduce the heat to medium-low. Place skewers on<br />
the barbecue and cook, turning as necessary, until<br />
the fish is cooked through (about 8 minutes).<br />

1. Cut chicken in 1 inch strips<br />
2. Mix oregano, lemon juice and olive oil together<br />
3. Marinade chicken for at least one hour in the fridge<br />
4. Put chicken on pre-soaked skewers<br />
5. Grill chicken on medium heat for 3-4 minutes a side<br />
6. Place onto pita, and add tomatoes, onion, parsley and Tzatziki<br />
sauce<br />
Tzatziki (Cucumber Garlic Dip)<br />
7. Line a sieve with cheesecloth and place the plain yoghurt into<br />
it. Allow to drain over bowl for about 4 hrs.<br />
8. Transfer the drained yogurt into a bowl.<br />
9. Stir in the cucumber, garlic, dill and oil. Season to taste.<br />
