INGREDIENTS:<br />

2 cups sugar<br />

1 teaspoon cinnamon<br />

4 eggs<br />

2 spoons vanilla extract<br />

¾ cup oil<br />

2 cups flour<br />

1 packet baking pow<strong>de</strong>r<br />

1kg carrots (grated)<br />

¾ cup walnuts (chopped)<br />

ICING:<br />

1 (250 g) package PHILADELPHIA<br />

Cream Cheese,<br />

1/4 cup butter, melted<br />

2 cups icing sugar<br />

1 teaspoon lemon juice<br />

1/2 teaspoon grated lemon peel<br />

DIRECTIONS:<br />

Carrot Cake<br />

1. Cake: Heat the oven to 250 <strong>de</strong>grees C. Sift together<br />

the flour, the baking pow<strong>de</strong>r, the cinnamon and the<br />

salt in a medium-sized bowl; set asi<strong>de</strong>. Beat the eggs<br />

and the oil in a large bowl with a wire whisk until they<br />

are all well blen<strong>de</strong>d. Gradually add the granulated<br />

sugar and the vanilla, mixing it until it is completely<br />

blen<strong>de</strong>d. Add the flour mixture and mix it until it is<br />

completely blen<strong>de</strong>d. Then add the grated carrots and<br />

the chopped walnuts; mix well. Pour into a greased<br />

baking pan. Instead of greasing the pan you can also<br />

use parchment paper.<br />

2. Bake for 50 min. to 1 hour or until you can<br />

insert a woo<strong>de</strong>n toothpick in the centre and it<br />

comes out clean. Cool for 10 min. Loosen the<br />

cake from the si<strong>de</strong>s of the pan with a spatula or<br />

knife and gently remove the cake. Cool<br />

completely on a wire rack.<br />

3. Icing: Beat the cream cheese and the butter in a<br />

large bowl until it is well blen<strong>de</strong>d. Gradually add<br />

the icing sugar, the juice and the peel, beating it<br />

until it is well blen<strong>de</strong>d after each addition. Spread it on<br />

top of the cake with a spatula. Store any leftover cake in<br />

the refrigerator.<br />

Apfelkuchen<br />

Maria Luisa Casares Ripol. Alemán Nivel Avanzado 2<br />

Zutaten:<br />

• 1 Zitronenjoghurt<br />

• 125 Gramm Zucker<br />

• 125 Gramm Mehl<br />

• 2 Eier<br />

• 1 Kilo Äpfel<br />

• 1 Glas Aprikosenmarmela<strong>de</strong><br />

• 1 Kaffeelöffel Backpulver<br />

Zubereitung:<br />

Man gibt das Joghurt, <strong>de</strong>n Zucker,<br />

das Mehl, die Eier und das Backpulver<br />

in eine Schale und mischt alles gut mit<br />

<strong>de</strong>m Mixer.<br />

Danach schält man die Äpfel und schnei<strong>de</strong>t<br />

sie in feine Scheiben.<br />

Backform mit Butter einfetten und mit Mehl<br />

bestäuben, damit <strong>de</strong>r Teig nicht an <strong>de</strong>r Form<br />

haftet.<br />

Nun gibt man eine Schicht<br />

Teig und eine Schicht<br />

Apfelscheiben in die Form<br />

und noch einmal eine<br />

Schicht Teig, eine Schicht<br />

Apfelscheiben.<br />

Man gibt <strong>de</strong>n Kuchen in<br />

<strong>de</strong>n auf 200 Grad<br />

vorgeheizten Backofen. Der<br />

Kuchen soll eine halbe Stun<strong>de</strong><br />

backen und oben leicht braun<br />

sein, bevor man ihn herausnimmt.<br />

Zum Schluss kommt noch eine Schicht<br />

Aprikosenmarmela<strong>de</strong> auf <strong>de</strong>n Kuchen, bevor<br />

er kalt wird.<br />
