“A fairy city of the heart”<br />
This is how Lord Byron called Venice.<br />
La Serenissima is an improbable cityscape of stone palaces that<br />
seem to float on water, a place where cats nap on Oriental marble<br />
windowsills set in colorful plaster walls. Candy-striped pylons<br />
stand sentry outside the tiny stone docks of palaces whose<br />
front steps <strong>des</strong>cend into the gently lapping waters of the canals<br />
that lace the city.<br />
Venice actually consists of 117 bodies of land connected by<br />
more than 400 bridges over its 150 canals. The Grand Canal is<br />
like main street, cutting through the center of the city.<br />
In Venice, cars are banned; every form of transportation floats,<br />
from water taxis and vaporetti (the public “bus” ferries) to ambulance<br />
speedboats and garbage scows. Venice is a place where<br />
locals stop at the bacaro (wine bar) to take un ombra (literally “a<br />
little bit of shade,” in practice, a glass of wine) and munch on<br />
cicchetti (tapaslike snacks) or linger over exquisite restaurant seafood<br />
dinners.<br />
Venice is extraordinary, it is magical, and it is worth every cent; it<br />
seems almost too exquisite to be genuine, too fragile to survive<br />
the never-ending stream of visitors who have been making the<br />
pilgrimage here for 1,500 years.<br />
Venice is a city of great art and grand old masters. Venetian<br />
painting featured early masters such as the Bellini clan. By the<br />
early 1500s, Venice had taken the Renaissance torch from Florence<br />
and made it its own, lending the movement the new color<br />
and lighting schemes of such giants as Giorgione, Tiziano (Titian),<br />
Paolo Veronese, and Tintoretto.<br />
As barbarian hor<strong>des</strong> washed back and forth across the Alps during<br />
the decline of the Roman Empire (starting in the 4th c.),<br />
inhabitants of the Veneto flatlands grew tired of being routinely<br />
sacked and pillaged along the way. By the 6th century, many had<br />
begun moving out onto the mud-flat islands of the marshy lagoon,<br />
created by what was in ancient times the Po River delta,<br />
to take up fishermen’s lines or trading ships. When they saw<br />
that one barbarian horde, the Lombards, had stayed to settle the<br />
upper Po valley (still called Lombardy), these Veneti decided to<br />
remain on their new island homes and ally themselves instead<br />
with the eastern remnant of the old Roman Empire, Byzantium.<br />
Oddly, what we now consider central Venice was the last area<br />
settled. After Attila the Hun rampaged through, citizens of the<br />
Roman town of Altino moved out onto Torcello and founded<br />
a tidy commercial empire under the control of the Byzantine.<br />
Townsfolk from Oderzo moved to Malamocco and made it the<br />
lagoon’s political capital (the original site is now underwater, and<br />
the Malamocco that survives nearby is a fishing village on the<br />
southern stretch of the Lido, near the golf course). After barely<br />
defeating Charlemagne’s son Pepin there in 810, the capital was<br />
moved to the more protected Rialto islands, now central Venice.<br />
Greater Venice’s ol<strong>des</strong>t surviving structure is the cathedral on<br />
Torcello, founded in 639, but today’s site is largely from the 9th<br />
and 10th centuries. In fact, sparsely populated Torcello is one<br />
of the best glimpses into what early Venice must have looked<br />
like -- scattered buildings and canals banked by waving rushes<br />
and reeds, everything outlined by the dotted lines of wooden<br />
piles hammered down into the mud. This construction is what<br />
underlies all those stone palazzi of central Venice: a framework<br />
foundation of sunken tree trunks, hammered down into the caranto<br />
(a solid clay layer under the surface of mud and sand) and<br />
preserved in the anaerobic atmosphere of their muddy tomb,<br />
overlain with Istrian stone.<br />
As its power began to peak in the early 13th century, Venice led<br />
the fourth and most successful Crusade, capturing Constantinople<br />
itself. It went on to conquer territories across what are today<br />
Turkey, the Greek Isles, and Crete -- and eventually became the<br />
capital of Italy’s inland provinces, now the Veneto, Trentino, and<br />
Friuli. By 1300, it was one of the largest cities and the leading<br />
maritime republic of Europe and the Mediterranean. Although<br />
the Black Death carried off over half the population from 1347<br />
to 1350, Venice bounced back and remained a maritime power<br />
until the 18th century, when trade through the new American<br />
colonies would increasingly steal much of the city’s thunder.<br />
By the end of the 18th century, Venice had run out of steam<br />
commercially, not to mention militarily, after centuries spent<br />
fighting the Turks (who slowly regained most of Venice’s Aegean<br />
and Greek territories). By the time Napoleon came along in<br />
1797, the Venetian Republic offered little resistance. Napoleon<br />
gave control of Venice to Austria, under whose rule it remained<br />
for almost 70 years. Daniele Manin did stage an unsuccessful<br />
minirevolution in 1848 and 1849, during which Venice was privileged<br />
to become the first city attacked from the air, by a fleet of<br />
hot-air balloons armed with long-fused time bombs. The Risorgimento<br />
(unification) movement and its king, Vittorio Emanuele<br />
II, defeated the Austrians, gained control of the Veneto, and<br />
made it a part of the newly minted state of Italy in 1866.<br />
In its position at the crossroads of the Byzantine and Roman<br />
-- later Eastern and Western -- worlds, Venice, over many centuries,<br />
acquired a unique amalgamated heritage of art, architecture,<br />
and culture. And although hor<strong>des</strong> of traders and merchants<br />
no longer pass through as they once did, Venice nonetheless<br />
continues to find itself at a crossroads: an intersection in time<br />
between the uncontested period of maritime power that built it<br />
and the modern world that keeps it ever-so-gingerly afloat.

di Arte e Cultura presso i Popoli di<br />
Lingua e Religione anche diverse. Con<br />
essi è sempre riuscita a dialogare sia<br />
con il linguaggio della Diplomazia ma<br />
anche dell’Arte: dell’Architettura, della<br />
Pittura e della Scultura ed anche della<br />
EnoGastronomia. Ha dato in questo<br />
ultimo campo molto ma anche ha preso<br />
dalle Genti con cui è venuta in contatto.<br />
Il Veneto è una delle principali regioni<br />
d’Italia, a livello turistico e industriale;<br />
dopo Londra è Venezia la più visitata<br />
città del Mondo. Grandi architetti come<br />
il Palladio, grandi pittori - ne cito alcuni come Tiepolo,Tiziano, il Canaletto ed il<br />
Mantegna -sono di nascita Veneta ed hanno lasciato le loro opere a Venezia ed in<br />
ogni dove; non dimentichiamo, in tempi più recenti, il Canova, sommo sculture di<br />
nascita Trevigiana. Ma dobbiamo ricordare e magnificare anche la grande Cucina<br />
e la grande Enologia Veneta che si diversificano in ogni luogo, pur mantenendo<br />
denominatori comuni. Due grandi vini sono conosciuti in tutto il mondo: il Prosecco<br />
e l’Amarone e non ne cito altri per brevità. La Gastronomia varia fra una cucina di<br />
pesce di acqua dolce del Lago di Garda e di pesci dei grandi fiumi e torrenti che<br />
attraversano la Regione, ma non dimentichiamo il pesce di mare dell’Adriatico e<br />
delle valli da pesca; la selvaggina proviene dai colli e dai monti oltre ad un’offerta<br />
di pregiata carne dei pascoli e quindi grandi formaggi, ed una tradizione di<br />
lavorazione di suini, quindi salumi pregiati e gustosi e, per finire, una serie completa<br />
di pennuti (galline, faraone, anatre, oche, etc) difficilmente trovabile in altre Regioni.<br />
Un’offerta completa enogastronomica che, assieme alla Cultura e all’Arte, vi potrà<br />
fare gustare le sue eccellenze in questo Chapitre. La Gente Veneta laboriosa e<br />
gentile vi accoglierà con grande piacere.<br />

cheeses, and a tradition of charcuterie producing fine cold meats. In conclusion<br />
it offers all forms of poultry (such as chicken, guinea-fowl, duck and goose)<br />
which cannot be found easily in other regions. From ol<strong>des</strong>t times, Venice, first<br />
as the Capital and then as the dominant force in the Veneto region, has been an<br />
Ambassadress, offering beauty, art, culture to peoples of different religions and<br />
languages. Venice succeeded in creating a dialogue with all of them, by using<br />
not only the language of diplomacy, but also the language of art, architecture,<br />
painting, sculpture and even wine and food. In this context Venice made a generous<br />
contribution of its own, but at the same time it accepted a lot of gifts from all the<br />
people with whom it came in contact. Veneto is one of the main regions of Italy, from<br />
a touristic and industrial point of view, but Venice is also the most visited city in the<br />
world after London. Great architects such as Palladio and great painters (Tiepolo,<br />
Tiziano – Titian -, Canaletto and Mantegna, to mention only a few) were born in<br />
Veneto; they left their works in Venice and everywhere in the Region; not forgetting,<br />
more recently, Canova, the leading sculptor, born in Treviso. But we also have to<br />
remember and to celebrate the great tradition of cooking and wine of Veneto, which<br />
varies from place to place, whilst maintaining certain common denominators. Of<br />

nella vita. Quale luogo migliore,<br />
dunque, per accogliere le Consoeurs, i Confrères e i numerosi ospiti<br />
che di certo giungeranno da ogni parte del mondo per vivere questa<br />
grande festa della Chaîne <strong>des</strong> Rôtisseurs<br />
Saranno quattro giorni intensi. I graditi ospiti potranno assaporare<br />

costruita sull’acqua e collegata da ponti, affascinante labirinto di<br />

Naturalmente, lo Chapitre sarà anche occasione per approfondire<br />
le conoscenze con la gastronomia e l’enologia del Veneto, una delle<br />
regioni più importanti d’Italia per quanto riguarda l’accoglienza e<br />

It is with great pride and pleasure that I announce the organization of<br />
the 44th “Grand Chapitre International d’Italie”, to be held in Venice<br />
from 4 th to 7 th October 2012.<br />
Venice is a city of great charm and fascination.<br />
It boasts a thousand years of history and all over the world it is<br />
known as La Serenissima.<br />
It is a veritable treasure chest of art, history, culture and civilization,<br />
and an enchanting city to visit at least once in a lifetime.<br />
What better place, then, to welcome the Consoeurs, the Confrères and<br />
certainly the many other guests who will come from every corner of the<br />
world to experience this great celebration of the Chaîne <strong>des</strong> Rôtisseurs<br />
The four days will be full of activity. Our welcome guests will<br />
literally taste the magic art and romance of the floating city, built on<br />
the water and connected by bridges - a fascinating maze of “calli”<br />
(alleys), “campielli” (squares) and canals ... Of course the Chapiter<br />
will also offer the opportunity, and the pleasure, of deepening our<br />
knowledge of the gastronomy and enology of Veneto, one of most<br />
important regions in Italy, known for its sense of welcome and<br />
hospitality.

The Registration and Hotel Reservation payment must be made not later than 10 th July 2012 exclusively by bank<br />
transfer.<br />

GENERAL TERMS AND CONDITIONS<br />
All the rates reported here will be updated without notice from the organization, for any changes to VAT rates or<br />
taxes or finally for the introduction of any new taxes required by law.<br />
EXCURSIONS TERMS AND CONDITIONS<br />
The reservation will be confirmed upon receipt of full payment for the services booked by each participant.<br />
For several excursions there is a minimum number of persons required, and sometimes a maximum number, of<br />
participants. Failure to meet minimum numbers of participants, or in case of adverse weather conditions, force<br />
majeure and unforeseen events, can cause the cancellation of one or more excursions; in this case the organization<br />
will provide alternative proposals or a full reimbursement of the excursions booked through us.<br />
The cancellation fee for all tours is 100% after the 5 th September 2012.<br />
CATERING TERMS AND CONDITIONS<br />
For lunch / dinner / cocktails a minimum and sometimes a maximum number of participants is required.<br />
In case of failure to achieve the minimum number by 5 th September 2012, the organization could decide to cancel<br />
a lunch, dinner or refreshment, in which case the relevant amount would be reimbursed.<br />
If maximum numbers are not attained, CHAINE may decide, at its sole discretion, whether or not to accept any<br />
further bookings after the deadlines.<br />
Any reservation will be confirmed once payment is received.<br />
Penalties will be not applied for any cancellation made not later than the 5 th September 2012, while those made<br />
after this date will be subjected to a penalty of 100%.<br />
HOTEL TERMS AND CONDITIONS<br />
Hotel reservations will be confirmed only upon receipt of payment corresponding to the entire cost of<br />
the stay.<br />
There are no penalties for cancellations or reductions of stay notified within 60 (sixty) days before the date of<br />
arrival;<br />
The penalty is due for one night’s stay for any cancellation or reduction of stay reported between 59 (fifty-nine)<br />
and 30 (thirty) days before the date of arrival. There will be a penalty of 100% for any cancellation or reduction<br />
of stay between 29 (twenty-nine) days before the arrival date and the arrival.<br />
Hotel rates will be valid for bookings received up to 10 th July 2012; after this date for any further request our<br />
office will apply individual tariffs for each case based on hotel availability.<br />
The rates mentioned above are valid for stays of minimum 2 and maximum 3 consecutive nights from October<br />
4 th 2012.<br />
Any request for different dates and stays will be quoted separately from our office upon receipt of such requests.<br />
All prices include VAT and breakfast.<br />
Any extras (telephone, mini bar, restaurant, laundry, taxes, etc..) will be charged to the participant on the<br />
spot and must be paid directly to the hotel at the check-out.<br />
Prices do NOT include the City tax, applicable for a maximum of 5 nights, and payable by all guests at<br />
check-out.<br />
Venice City tax levies may be subject to change without notice.<br />
Check - in is guaranteed from 03.00 pm and check - out is by 10:00 am.
