CHARRED RED<br />
PEPPER & TOMATO<br />
SOUP<br />
SERVES 4<br />
1 large onion, peeled &<br />
sliced<br />
1 tbsp olive oil<br />
4 cloves garlic, peeled &<br />
finely chopped<br />
Our surprisingly affordable 3-night ‘Catch your Breath’<br />
package includes accommodation and all meals, use of<br />
all facilities (indoor heated pool and wet area overlooking<br />
the forest, sauna, steam room, jacuzzi, outdoor pool,<br />

3 <strong>red</strong> <strong>pepper</strong>s, blackened,<br />
peeled & sliced<br />
1 tbsp <strong>tomato</strong> paste<br />
2 cups chicken or vegetable<br />
stock<br />
4 whole peeled <strong>tomato</strong>es,<br />
chopped<br />
1 sprig thyme<br />
Salt & <strong>pepper</strong> to taste<br />
¼ cup cream cheese<br />
Chopped chives<br />
Sauté onions in olive oil until<br />
translucent.<br />
Add the garlic, <strong>pepper</strong>s, <strong>tomato</strong><br />
paste and cook for a few<br />
minutes.<br />
Stir in the <strong>tomato</strong>es, stock and<br />
thyme.<br />
Cook for a further 15 minutes,<br />
season and blend.<br />
Serve topped with a table-spoon<br />
of cream cheese and chives.<br />
NOTE ON HOW TO<br />
BLACKEN PEPPERS:<br />
Oil <strong>pepper</strong>s lightly. Either cook<br />
in a very hot oven under the grill<br />
until the skin blisters and<br />
blackens. Alternatively place<br />
<strong>pepper</strong>s over a gas flame. Using<br />
tongs, turn over and over in the<br />
flame until <strong>char<strong>red</strong></strong>. Peel and<br />
use as needed.<br />
