GENERAL MANGER AT PELICAN HILL<br />

NEWPORT BEACH, CA…July 6, 2010… Paolo Casciato has earned the appointment of<br />

General Manager at Andrea Ristorante, the signature Tuscan dining room at <strong>Pelican</strong> <strong>Hill</strong> ® in<br />

Newport Beach. He brings more than 12 years of experience in luxury hotel food & beverage<br />

operations to the property.<br />

Born to Italian immigrants from the Abruzzo region and raised in Toronto, Canada, Paolo has<br />

been inspired by his mother’s traditional dishes, as well as strong culinary influences from<br />

numerous cousins, aunts, uncles, nieces and nephews. Favorite childhood activities included<br />

curing their own meats, and preserving fruits and vegetables, which continue decades later for<br />

the family’s favorite regional artisanal foods. Late every August, tomato sauces are prepared in<br />

the family’s garden and preserved for the year.<br />

With a bachelor’s degree in Hospitality and Tourism Management from Ryerson University,<br />

Paolo has continued his career prestigious luxury properties including Four Seasons Toronto,<br />

Aviara and Beverly <strong>Hill</strong>s, as well as the Mandarin Oriental Las Vegas.<br />

Paolo has gained extensive wine knowledge that he continues to build after each vintage release.<br />

His favorite wine region is no surprise, Italy! The long histories, hand crafted regional<br />

tendencies of grape growing and wine producing is food perfect at prices that are affordable. His<br />

preferred Italian wines include any white Sardinian Vermentino varietals and great reds from the<br />

vesuvian soils of central Italy, including Aglianico.<br />

Sharing in <strong>Pelican</strong> <strong>Hill</strong>’s food philosophy of fresh ingredients and the taking advantage of the<br />

Newport Beach weather, in his personal time Paolo loves creating food al fresco, regularly<br />

grilling and growing his own herbs at home and entertaining on the patio with his wife Laura,<br />

friends and family.<br />
