Comic Relief day 2011<br />

Hot Cross Buns<br />

Prep Time 2 hours Cooking Time 10-30 minutes<br />

Ingredients:<br />

Topping:<br />

625g strong white flour<br />

1 tsp salt<br />

2 tsp ground mixed spice<br />

45g unsalted butter<br />

85g sugar<br />

1 lemon (zest only)<br />

1 ½ tsp fast acting dried yeast<br />

1 egg<br />

125g dried fruit<br />

275ml tepid milk<br />

2 tbsp plain flour<br />

butter for greasing<br />

1 tbsp golden syrup<br />

gently heated<br />

Method:<br />

1. Sieve flour, salt & mixed spice<br />

into a large mixing bowl, rub<br />

in butter. Make a well and add<br />

sugar, lemon zest & yeast.<br />

2. Beat egg and add to flour<br />

with the tepid milk and<br />

mix to a smooth dough.<br />

3. Turn dough out onto dusted<br />

work surface. Work mixed<br />

fruit into dough. Kneed<br />

lightly until smooth.<br />

4. Grease large warm mixing<br />

bowl with butter, shape<br />

dough into a ball, place in<br />

bowl. Cover with clean tea<br />

towel and put somewhere<br />

warm for 1hr to prove.<br />

5. Knock back the proved dough,<br />

return to bowl and leave to<br />

rise for a further ½ hour.<br />

6. Turn out dough, divide<br />

into 12 equal sized balls<br />

and flatten slightly with<br />

your palm. Return towel<br />

and rest for 5-10 mins.<br />

7. Grease baking tray with<br />

butter, transfer buns to<br />

tray. Wrap loosely with<br />

greaseproof paper then place<br />

in a large polythene bag. Tie<br />

bag tightly so no air can get in,<br />

set aside for 45 mins to rise.<br />

8. Pre heat oven to 240˚C<br />

or Gas mark 8.<br />

9. For topping, mix flour<br />

to a smooth paste with<br />

2 tbsp of cold water.<br />

10. When buns have<br />

risen, remove bag and<br />

greaseproof. Spoon mixture<br />

into piping bag and pipe<br />

a cross on each bun.<br />

11. Put the buns in the oven and<br />

bake for 8-12 mins or until<br />

pale golden brown. As soon<br />

as you remove buns from<br />

oven, brush with golden<br />

syrup and leave to cool.<br />

The <strong>Marham</strong> Thrift Shop<br />

Ladies pulled out all the<br />

stops for Comic Relief Day<br />

on Friday 18 th March 2011.<br />

They managed to raise<br />

a fantastic £140 by<br />

selling cakes, holding<br />

a tombola and having<br />

two living mannequins (Sarah<br />

and Keely) in the window for the<br />

day. A big thank you to everyone<br />

who supported and donated to<br />

this very worthy cause. A special<br />

thank you to Keely and her<br />

volunteers Rachel, Claire, Emma,<br />

Caroline, Sarah, Sadie and Linda<br />

for making these days possible<br />

and great fun.<br />
