Ontario’s Artisan Cheeses From Lemon Fetish to Comfort Cream, the taste’s the thing by Margaret Swaine Culinarium, which calls itself Toronto’s locavore store, has as its motto ‘All Ontario All the Time’. Among the natural, organic and artisanal products it offers, customers can find up to 25 Ontario cheeses from eight different producers. If you didn’t know that Ontario produces world-class artisanal cheeses, a visit to this store will certainly be a revelation. The founder of Culinarium is Kathleen Mackintosh, a home economist who also organizes events for the Ontario Cheese Society. Asked to name her favourite cheeses, she exclaims “I love them all.” However, with a little persuading she admits she goes through stages and rhymes off the names Cape Vessey, Brebette and Jenson three-year-old. If these aren’t household names yet, they may well be soon. Cape Vessey comes from Fifth Town in Picton, a producer that just opened its doors in 2008. Fifth Town buys from four goat and three sheep farms within a 160 km (100-mile) radius of its production facilities. It gets its name from its location, once known as ‘Fifth Town’ or the fifth town to be settled in newly formed Upper Canada. Cape Vessey cheese is named after the rocky, reddish cliffscape close to their property. Their 15 or so cheeses currently on the market include ‘I Wish’, an Idiazabalstyle sheep’s milk cheese, cave-aged for three to nine months; Lemon Fetish, a soft sheep’s milk cheese that’s lightly aged and made with lemon zest; and Counting Sheep, a soft bloomy rind, lightly pressed cheese made with sheep’s or goat’s milk that comes in herbed variations. Many of Ontario’s new artisan cheese producers focus on sheep’s- and goat’s-milk cheese for practical reasons. While there were likely over a thousand cheesemakers in the early days of Ontario, the numbers slowly dwindled as the smaller producers sold out.
