� Is soluble in cold water and forms transparent solutions.<br />

� Forms reversible gels during heating processes – due to these<br />

visco-elastic properties this material is suitable for keeping the<br />

� Achieves a very good miscibility with salts and sugars.<br />

� Has excellent water binding properties.<br />

� Has a buffer capacity in a wide range of pH-values (pH 3-11).<br />
