It’s Latke Time!
4 medium Russet or Yukon Gold potatoes
1 small onion 3 tablespoons flour
1 teaspoon salt ½ teaspoon baking powder
1 large egg Vegetable or Canola oil
Peel potatoes and grate them with grating disc (not steel blade) in food
processor. Place potatoes in very large bowl. Peel onion and chop finely in food
processor. Add onion, salt and egg to potatoes and mix well. Add flour and baking
soda and mix well.
In very large frying pan, pour oil to about ½ inch depth and heat until very hot
but not smoking. CAREFULLY, drop rounded tablespoons of potato mixture into hot
oil and fry on both sides (about 7 minutes per side) until golden brown.
Drain latkes on paper towels or paper bags and then place on cookie sheet or
glass baking dish. Keep warm in oven at 250 degrees until ready to serve.
Makes 14-18 latkes. ENJOY WITH APPLESAUCE OR SOUR CREAM … OR JUST PLAIN!!
